背景技术
生姜(Rhizoma Zingiberis Recens)是一种药食兼用的植物性食材,具有特殊的芳香味和辣味。我国有悠久的生姜栽培和利用历史,除主要用作调料外,还因其具有发汗解表、温里散寒、止呕止泄、解毒等功能而在中医药中广泛使用。现代科学研究发现,生姜中含有姜酚、姜烯等生物活性物质,具有促进血液循环、延缓组织衰老、抗炎症、提高机体耐缺氧能力等功效。但由于生姜口感辛辣、深加工产品少、食用不便而使其营养保健功能未能使更多人群受益。
泡腾片是一种起始于制药领域,因其含有碱(碳酸盐)和有机酸而遇水反应释放出大量二氧化碳,使液体呈泡腾状而得名的片剂。近年来,泡腾片技术逐渐开始向食品加工领域拓展。
发明内容
本发明的目的在于提供一种生姜水提物冻干粉泡腾片及其制备方法,本发明将生姜的营养成分通过包埋保护起来,与泡腾片的固体饮料形式有机结合来,开发新型生姜深加工产品,不仅可以增加生姜的附加值,还可以满足消费者对营养、新奇、便携特点的新型饮料的需求。
本发明的目的是通过以下技术方案实现的:
一种生姜水提物冻干粉泡腾片,所述泡腾片由以下质量百分比的组分制备而成:姜汁冻干粉2-25%,泡腾崩解剂40-90%,包埋填充剂4-30%,甜味剂0.1-6%,着色剂0-2%,矫味剂0-2%,润滑剂2-5%,粘合剂0.5-1%,植物生物活性成分提取物0-10%;其中,生姜水提物冻干粉占质量百分比的2-25%;泡腾崩解剂占质量百分比的40-90%,酸碱的摩尔比为1:0.5-3;其酸为有机酸,由酒石酸、苹果酸、柠檬酸、富马酸和己二酸中的一种或一种以上复配构成;其碱为碳酸钠、碳酸氢钠、碳酸钾、碳酸氢钾的一种或一种以上复配构成;包埋填充剂为贝塔-环状糊精、麦芽糊精、水溶性壳聚糖、海藻酸钠、阿拉伯胶、明胶羧甲基纤维素钠的一种或一种以上构成;甜味剂由阿斯巴甜、甜菊苷、蔗糖、葡萄糖、甘油、木糖醇、甘露醇、山梨糖醇、赤藓糖醇的一种或一种以上复配而成;矫味剂为薄荷醇和苹果香精、桔子香精、香蕉香精果味香精的一种或一种以上复配而成;润滑剂为聚乙二醇6000、微粉硅胶、十二烷基硫酸镁的一种或一种以上复配而成;粘合剂为聚乙烯吡咯烷酮或预糊化淀粉的一种或一种以上复配而成;着色剂为胡萝卜素、叶黄素、栀子黄、玉米黄素、辣椒红素、番茄红素、叶绿素铜钠盐等天然色素,和柠檬黄、胭脂红、赤藓红、亮蓝等人工合成色素的一种或一种以上复配而成。

一种生姜水提物冻干粉泡腾片,所述泡腾片由以下质量百分比的组分制备而成:姜汁冻干粉2-15%,泡腾崩解剂62-90%,包埋填充剂5-25%,甜味剂0.1-6%,着色剂0-1.5%,矫味剂0-1%,润滑剂2-4.5%,粘合剂0.5-1%,植物生物活性成分提取物0-5%。
所述的一种生姜水提物冻干粉泡腾片,所述泡腾崩解剂中的酸源为酒石酸与富马酸的混合物,碱源为碳酸氢钠;酸源与碱源的摩尔比为1:0.5-3;包埋填充剂为贝塔-环状糊精、麦芽糊精、水溶性壳聚糖、海藻酸钠、阿拉伯胶、明胶羧甲基纤维素钠的一种或一种以上构成;润滑剂聚乙二醇6000、微粉硅胶、十二烷基硫酸镁的一种或一种以上复配而成;甜味剂由阿斯巴甜、甜菊苷、蔗糖、葡萄糖、甘油、木糖醇、甘露醇、山梨糖醇、赤藓糖醇等的一种或一种以上复配而成;矫味剂为薄荷醇和苹果香精、桔子香精、香蕉香精等果味香精的一种或一种以上复配而成;生物活性成分提取物为卫生部颁布的《既是食品又是药品的物品名单》中一种或一种以上材料的超微粉;生物活性成分提取物为卫生部颁布的《既是食品又是药品的物品名单》中一种或一种以上材料的水提物或醇类等有机溶剂提取物;维生素为各类水溶性维生素的一种或一种以上复配而成;着色剂为胡萝卜素、叶黄素、栀子黄、玉米黄素、辣椒红素、番茄红素、叶绿素铜钠盐等天然色素,和柠檬黄、胭脂红、赤藓红、亮蓝等人工合成色素的一种或一种以上复配而成。
一种生姜水提物冻干粉泡腾片制备方法,所述制备方法包括以下几种:
方法一:将生姜水提物冻干粉泡腾片的各组分粉碎,过80-100目筛,混合均匀后压片,即得生姜水提物冻干粉泡腾片。
方法二:将生姜水提物冻干粉泡腾片的各组分粉碎,过80-100目筛;将生姜水提物冻干粉、酸源和部分填充剂混合后,加入部分粘合剂制成软材,40-50℃干燥6小时,整粒,得酸粒;将碱源、润滑剂和剩余填充剂混合后,加入剩余粘合剂制成软材,40-50℃干燥6小时,整粒,得碱粒;将酸碱粒混匀、压片,即得生姜水提物冻干粉泡腾片。
方法三:除润滑剂以外的原料混匀,加入原料总质量20%的无水乙醇后再次混匀,45℃干燥12小时,研碎过14目筛后加入润滑剂混合均匀,压片,即得生姜水提物冻干粉泡腾片。
本发明的优点与效果是:
1.本发明将生姜的营养成分通过包埋保护起来,与泡腾片的固体饮料形式有机结合来,开发新型生姜深加工产品,不仅可以增加生姜的附加值,还可以满足消费者对营养、新奇、便携特点的新型饮料的需求。
2.本发明将具有抗氧化、抗疲劳、促进血液循环等功能的生姜水提物冻干粉制备成泡腾片形式,也可将生姜水提物冻干粉与其他植物生物活性成分提取物或水溶性维生素复配制成泡腾片。生姜水提物冻干粉保留了生姜生物活性成分的活性,添加的包埋填充剂即对产品中的生姜活性成分有保护作用,防止其分解或氧化,也在一定程度上起掩蔽其辛辣口感的作用。该生姜冻干粉泡腾片便于携带、饮用方便、口感清新、颜色柔和,还具有保健功效。

本发明涉及的生姜水提物冻干粉泡腾片由以下质量百分比的组分制备而成:姜汁冻干粉2-25%,泡腾崩解剂40-90%,包埋填充剂4-30%,甜味剂0.1-6%,着色剂0-2%,矫味剂0-2%,润滑剂2-5%,粘合剂0.5-1%,植物生物活性成分提取物0-10%。生姜水提物冻干粉占质量百分比的2-25%;
泡腾崩解剂占质量百分比的20-90%,酸碱的摩尔比为1:0.5-3。其中酸为有机酸,可以由酒石酸、苹果酸、柠檬酸、富马酸和己二酸中的一种或一种以上复配构成;其中的碱为碳酸钠、碳酸氢钠、碳酸钾、碳酸氢钾的一种或一种以上复配构成。
包埋填充剂为贝塔-环状糊精、麦芽糊精、水溶性壳聚糖、海藻酸钠、阿拉伯胶、明胶、羧甲基纤维素钠的一种或一种以上构成;
甜味剂由阿斯巴甜、甜菊苷、蔗糖、葡萄糖、甘油、木糖醇、甘露醇、山梨糖醇、赤藓糖醇等的一种或一种以上复配而成。
矫味剂为薄荷醇和苹果香精、桔子香精、香蕉香精等果味香精的一种或一种以上复配而成。
润滑剂为聚乙二醇6000、微粉硅胶、十二烷基硫酸镁的一种或一种以上复配而成。
粘合剂为聚乙烯吡咯烷酮或预糊化淀粉的一种或一种以上复配而成。
在其中一些实施例中,生姜水提物冻干粉泡腾片,由以下质量百分比的组分制备而成:姜汁冻干粉2-20%,泡腾崩解剂50-90%,包埋填充剂4-20%,甜味剂0.1-5%,着色剂0-1%,矫味剂0-1.5%,润滑剂3-5%,粘合剂0.5-1%,植物生物活性成分提取物0-7.5%。
在其中一些实施例中,生姜水提物冻干粉泡腾片,由以下质量百分比的组分制备而成:姜汁冻干粉2-15%,泡腾崩解剂62-90%,包埋填充剂5-8%,甜味剂0.1-6%,着色剂0-1.5%,矫味剂0-1%,润滑剂2-45%,粘合剂0.5-1%,植物生物活性成分提取物0-5%。
在其中一些实施例中,所述泡腾崩解剂中的酸源为酒石酸与富马酸的混合物,碱源为碳酸氢钠;所述酸源与碱源的摩尔比为1:0.5-3。
在其中一些实施例中,所述包埋填充剂为贝塔-环状糊精、麦芽糊精、水溶性壳聚糖、海藻酸钠、阿拉伯胶、明胶、羧甲基纤维素钠的一种或一种以上构成。
在其中一些实施例中,所述润滑剂聚乙二醇6000、微粉硅胶、十二烷基硫酸镁的一种或一种以上复配而成。
在其中一些实施例中,所述粘合剂为聚乙烯吡咯烷酮或预糊化淀粉的一种或一种以上复配而成
在其中一些实施例中,所述甜味剂由阿斯巴甜、甜菊苷、蔗糖、葡萄糖、甘油、木糖醇、甘露醇、山梨糖醇、赤藓糖醇等的一种或一种以上复配而成。
在其中一些实施例中,所述矫味剂为薄荷醇和苹果香精、桔子香精、香蕉香精等果味香精的一种或一种以上复配而成。
在其中一些实施例中,其特征在于所述生物活性成分提取物为卫生部颁布的《既是食品又是药品的物品名单》中一种或一种以上材料的超微粉。
在其中一些实施例中,所述生物活性成分提取物为卫生部颁布的《既是食品又是药品的物品名单》中一种或一种以上材料的水提物或醇类等有机溶剂提取物。
在其中一些实施例中,所述生物活性成分提取物为卫生部颁布的《可用于保健食品的物品名单》中一种或一种以上材料的超微粉。
在其中一些实施例中,所述生物活性成分提取物为卫生部颁布的《可用于保健食品的物品名单》中一种或一种以上材料的水提物或醇类等有机溶剂提取物。
在其中一些实施例中,所述生物活性成分提取物为卫生部颁布的《可用于保健食品的物品名单》中一种或一种以上材料的水提物或醇类等有机溶剂提取物。
实施例1
本实施例的生姜水提物冻干粉泡腾片,按质量百分比计,其配方组成为:
姜汁冻干粉10%,酒石酸30%,碳酸氢钠25%,贝塔-环状糊精10%,海藻酸钠15.8%,阿斯巴甜4%,柠檬黄0.1%,薄荷醇0.1%,聚乙二醇6000 2.5%,聚乙烯吡咯烷酮0.5%,茶多酚2%。
制备方法:将上述所有原料用研磨机研碎,过80-100目筛,混合均匀,压片,即得成品。
实施例2
本实施例的生姜水提物冻干粉泡腾片,按质量百分比计,其配方组成为:
姜汁冻干粉14%,柠檬酸20%,酒石酸10%,碳酸氢钠25%,微晶纤维素15%,麦芽糊精10%,甜菊苷2%,聚乙二醇6000 2.5%,预糊化淀粉0.5%,罗汉果提取物1%。
制备方法同实施例1。
实施例3
本实施例的生姜水提物冻干粉泡腾片,按质量百分比计,其配方组成为:
姜汁冻干粉15%,酒石酸15%,富马酸15%,碳酸氢钠25%,水溶性壳聚糖10%,贝塔-环状糊精15.8%,蔗糖4%,柠檬黄0.1%,薄荷醇0.1%,聚乙二醇6000 3%,聚乙烯吡咯烷酮1%,山药多糖2%。
制备方法:上述生姜水提物冻干粉泡腾片的各组分粉碎,过100目筛;将生姜水提物冻干粉、酒石酸、富马酸和配方中一半的水溶性壳聚糖、贝塔-环状糊精混合后,加入一半聚乙烯吡咯烷酮制成软材,40-50℃干燥6小时,整粒,得酸粒;将碳酸氢钠、另一半水溶性壳聚糖、贝塔-环状糊精和其他剩余组分混合后,加入另一半聚乙烯吡咯烷酮制成软材,40-50℃干燥6小时,整粒,得碱粒;将酸碱粒混匀、压片,即得生姜水提物冻干粉泡腾片。

Claims (5)
1.一种生姜水提物冻干粉泡腾片,其特征在于,所述泡腾片由以下质量百分比的组分制备而成:姜汁冻干粉2-25%,泡腾崩解剂40-90%,包埋填充剂4-30%,甜味剂0.1-6%,着色剂0-2%,矫味剂0-2%,润滑剂2-5%,粘合剂0.5-1%,植物生物活性成分提取物0-10%;其中,生姜水提物冻干粉占质量百分比的2-25%;泡腾崩解剂占质量百分比的40-90%,酸碱的摩尔比为1:0.5-3;其酸为有机酸,由酒石酸、苹果酸、柠檬酸、富马酸和己二酸中的一种或一种以上复配构成;其碱为碳酸钠、碳酸氢钠、碳酸钾、碳酸氢钾的一种或一种以上复配构成;包埋填充剂为贝塔-环状糊精、麦芽糊精、水溶性壳聚糖、海藻酸钠、阿拉伯胶、明胶羧甲基纤维素钠的一种或一种以上构成;甜味剂由阿斯巴甜、甜菊苷、蔗糖、葡萄糖、甘油、木糖醇、甘露醇、山梨糖醇、赤藓糖醇的一种或一种以上复配而成;矫味剂为薄荷醇和苹果香精、桔子香精、香蕉香精果味香精的一种或一种以上复配而成;润滑剂为聚乙二醇6000、微粉硅胶、十二烷基硫酸镁的一种或一种以上复配而成;粘合剂为聚乙烯吡咯烷酮或预糊化淀粉的一种或一种以上复配而成;着色剂为胡萝卜素、叶黄素、栀子黄、玉米黄素、辣椒红素、番茄红素、叶绿素铜钠盐等天然色素,和柠檬黄、胭脂红、赤藓红、亮蓝等人工合成色素的一种或一种以上复配而成。
2.一种生姜水提物冻干粉泡腾片,其特征在于,所述泡腾片由以下质量百分比的组分制备而成:姜汁冻干粉2-20%,泡腾崩解剂50-90%,包埋填充剂4-30%,甜味剂0.1-5%,着色剂0-1%,矫味剂0-1.5%,润滑剂3-5%,粘合剂0.5-1%,植物生物活性成分提取物0-7.5%。
3.一种生姜水提物冻干粉泡腾片,其特征在于,所述泡腾片由以下质量百分比的组分制备而成:姜汁冻干粉2-15%,泡腾崩解剂62-90%,包埋填充剂5-25%,甜味剂0.1-6%,着色剂0-1.5%,矫味剂0-1%,润滑剂2-4.5%,粘合剂0.5-1%,植物生物活性成分提取物0-5%。
4.根据权利要求1-3任一项所述的一种生姜水提物冻干粉泡腾片,其特征在于,所述泡腾崩解剂中的酸源为酒石酸与富马酸的混合物,碱源为碳酸氢钠;酸源与碱源的摩尔比为1:0.5-3;包埋填充剂为贝塔-环状糊精、麦芽糊精、水溶性壳聚糖、海藻酸钠、阿拉伯胶、明胶羧甲基纤维素钠的一种或一种以上构成;润滑剂聚乙二醇6000、微粉硅胶、十二烷基硫酸镁的一种或一种以上复配而成;甜味剂由阿斯巴甜、甜菊苷、蔗糖、葡萄糖、甘油、木糖醇、甘露醇、山梨糖醇、赤藓糖醇等的一种或一种以上复配而成;矫味剂为薄荷醇和苹果香精、桔子香精、香蕉香精等果味香精的一种或一种以上复配而成;生物活性成分提取物为卫生部颁布的《既是食品又是药品的物品名单》中一种或一种以上材料的超微粉;生物活性成分提取物为卫生部颁布的《既是食品又是药品的物品名单》中一种或一种以上材料的水提物或醇类等有机溶剂提取物;
维生素为各类水溶性维生素的一种或一种以上复配而成;着色剂为胡萝卜素、叶黄素、栀子黄、玉米黄素、辣椒红素、番茄红素、叶绿素铜钠盐等天然色素,和柠檬黄、胭脂红、赤藓红、亮蓝等人工合成色素的一种或一种以上复配而成。
5.一种生姜水提物冻干粉泡腾片制备方法,其特征在于,所述制备方法包括以下几种:
方法一:将生姜水提物冻干粉泡腾片的各组分粉碎,过80-100目筛,混合均匀后压片,即得生姜水提物冻干粉泡腾片;
方法二:将生姜水提物冻干粉泡腾片的各组分粉碎,过80-100目筛;将生姜水提物冻干粉、酸源和部分填充剂混合后,加入部分粘合剂制成软材,40-50℃干燥6小时,整粒,得酸粒;将碱源、润滑剂和剩余填充剂混合后,加入剩余粘合剂制成软材,40-50℃干燥6小时,整粒,得碱粒;将酸碱粒混匀、压片,即得生姜水提物冻干粉泡腾片;
方法三:除润滑剂以外的原料混匀,加入原料总质量20%的无水乙醇后再次混匀,45℃干燥12小时,研碎过14目筛后加入润滑剂混合均匀,压片,即得生姜水提物冻干粉泡腾片。
