发明内容
本发明以猫屎瓜、山黄皮为原料,同时添加午香草、营实开发出一种猫屎瓜风味山黄皮软糖,填补了国内使用这类原料制作软糖的一项空白。
一种猫屎瓜风味山黄皮软糖,采用以下步骤制作:
A.猫屎瓜预处理:取表皮完整、成熟的猫屎瓜果实,清洗后,通过斩切机切成1-2厘米长的段状,倒入装有80-100目网筛的破碎机进行破碎,制得猫屎瓜浆,加入猫屎瓜浆重1-2%的果酒酵母,密封静置发酵,待酒精度上升至1-2%重量比时,结束发酵,后加入猫屎的浆重1-3%的果醋酵母,发酵至果醋含量为0.3-0.5%时,结束发酵;

猫屎瓜,祛风除湿、清肺止咳;山黄皮,化滞祛湿、健脾健胃;午香草,消炎止痛、健胃行气;营实,利水除热、活血解毒。利用以上四味中药相互配伍,协同生效,通过调节肺的肃降,促进脾的健运,固达健脾益胃、消食化积的功效。
本发明以猫屎瓜、山黄皮为原料,同时添加午香草、营实,制作出一种猫屎瓜风味山黄皮软糖。其充分利用猫屎瓜、山黄皮的营养价值,与中药相互配伍,协同增效,具有健脾益胃、消食化积的功效。发明中,对猫屎瓜进行了果酒酵母、果醋酵母初发酵;对山黄皮进行了果酒酒母初发酵,为成品增添了特有的醇香味,制得的成品色彩鲜明,富有弹性,嚼劲十足,风味独特,且具有一定的保健功能,长期食用可明显改善饮食积滞、食欲不振人群的不适。其制作工艺简单,携带方便,符合当前市场发展需要,可以进行规模化生产。
以下结合实施例,对本发明作较为详细的说明。
具体实施方式
实施例1,一种猫屎瓜风味山黄皮软糖,采用以下步骤制作:
A.猫屎瓜预处理:取表皮完整、成熟的猫屎瓜果实,清洗后,通过斩切机切成1-2厘米长的段状,倒入装有80目网筛的破碎机进行破碎,制得猫屎瓜浆,加入猫屎瓜浆重1.2%的果酒酵母,密封静置发酵,待酒精度上升至1.2%重量比时,结束发酵,后加入猫屎的浆重2%的果醋酵母,发酵至果醋含量为0.4%时,结束发酵;
B.山黄皮预处理:取表皮完整、成熟的山黄皮,放入洗涤槽,用流动清水清洗干净,去蒂,倒入装有80目网筛的破碎机进行破碎,制得山黄皮浆,加入山黄皮浆重2%的果酒酒母,搅拌均匀,倒入不锈钢容器中,密封静置发酵,待酒精度为0.8%重量比时,结束发酵;
C.中药材预处理:按重量比例取中药材午香草55%、营实45%,加入原料中药材重8倍的水,浸泡2小时,再煎煮30分钟,后连同煎煮液一起,倒入装有80目网筛打浆机进行打浆,再入浆渣分离机,制得中药汁;
D.熬糖:取适量水倒入不锈钢容器中,烧开,加入水重1.2倍的白砂糖,混合搅拌均匀,用中火进行熬煮,待其完全溶化改小火继续熬煮,直至糖液变浓稠,清理掉糖液表层的气泡,制得糖液;
E.明胶溶液制作:取适量明胶,加入明胶重20倍的水,搅拌均匀,加热至63℃;
F.配料:取糖液100kg、发酵后的猫屎瓜浆8kg、发酵后的山黄皮浆30kg、中药汁3kg,混合搅拌均匀,小火加热4分钟,加热结束,进行冷却,待混合物冷却至62℃,加入明胶溶液10kg、柠檬酸0.7kg,混合搅拌均匀,制得猫屎瓜山黄皮混合糖液;
G.成型:将模具内壁涂上熟制后的葛根淀粉,倒入猫屎瓜山黄皮混合糖液,待冷却至软硬适中时,取出,用除粉机除去糖块表面粘附的淀粉粒;
H.包装:将成型的猫屎瓜风味山黄皮软糖用食品级包装物进行包装;
I.贮存:将包装好的猫屎瓜风味山黄皮软糖贮存于阴凉、干燥、避光的库房中,库房温度控制在18℃。
本发明实施例1经16位饮食积滞、食欲不振的人群,连续食用10天,每日20克,症状明显缓解人数为9人,有效率为56.25%;连续食用20天,每日20克以上,症状明显缓解人数为11人,有效率为68.75%。
实施例2,一种猫屎瓜风味山黄皮软糖,采用以下步骤制作:
A.猫屎瓜预处理:取表皮完整、成熟的猫屎瓜果实,清洗后,通过斩切机切成1-2厘米长的段状,倒入装有100目网筛的破碎机进行破碎,制得猫屎瓜浆,加入猫屎瓜浆重1.5%的果酒酵母,密封静置发酵,待酒精度上升至1.5%重量比时,结束发酵,后加入猫屎瓜浆重2.5%的果醋酵母,发酵至果醋含量为0.5%时,结束发酵;
B.山黄皮预处理:取表皮完整、成熟的山黄皮,放入洗涤槽,用流动清水清洗干净,去蒂,倒入装有100目网筛的破碎机进行破碎,制得山黄皮浆,加入山黄皮浆重1.5%的果酒酒母,搅拌均匀,倒入不锈钢容器中,密封静置发酵,待酒精度为0.7%重量比时,结束发酵;
C.中药材预处理:按重量比例取中药材午香草25%、营实17%、长果荜茇23%、炮仗花15%、羊角参20%,加入原料中药材重11倍的水,浸泡2.5小时,再煎煮40分钟,后连同煎煮液一起,倒入装有100目网筛打浆机进行打浆,再入浆渣分离机,制得中药汁;
D.熬糖:取适量水倒入不锈钢容器中,烧开,加入水重1.5倍的白砂糖,混合搅拌均匀,用中火进行熬煮,待其完全溶化改小火继续熬煮,直至糖液变浓稠,清理掉糖液表层的气泡,制得糖液;
E.明胶溶液制作:取适量明胶,加入明胶重18倍的水,搅拌均匀,加热至65℃;
F.配料:取糖液200kg、发酵后的猫屎瓜浆18kg、发酵后的山黄皮54kg、中药汁6.5kg,混合搅拌均匀,小火加热5分钟,加热结束,进行冷却,待混合物冷却至63℃,加入明胶溶液20kg、柠檬酸1.5kg,混合搅拌均匀,制得猫屎瓜山黄皮混合糖液;
G.成型:将模具内壁涂上熟制后的葛根淀粉,倒入猫屎瓜山黄皮混合糖液,待冷却至软硬适中时,取出,用除粉机除去糖块表面粘附的淀粉粒;
H.包装:将成型的猫屎瓜风味山黄皮软糖用食品级包装物进行包装;
I.贮存:将包装好的猫屎瓜风味山黄皮软糖贮存于阴凉、干燥、避光的库房中,库房温度应控制在15℃。
长果荜茇,为胡椒科植物假荜茇的果序,秋季果实成熟呈黑色时采摘,晒干。枝圆柱形,干时具纵纹而带褐色。单叶互生;叶片硬纸质;花单性,雌雄异株,集成与叶对生的穗状花序;未成熟浆果先端圆,下部嵌生于花序轴中并与其合生。长果荜茇味辛,性温,归胃经,具有温中健胃、祛寒止痛的功效,主治胃寒、脘腹胀满、消化不良、呕吐清水、头痛、牙痛、鼻渊、疝气。
羊角参,为百合科植物甘肃黄精或玫瑰红黄精的根茎。夏秋采收,洗净晒干,放置回润,切片晒干。干燥根茎具节,常自节处分段,每段呈角状分歧,表面黄白色,有明显纵皱纹与大小不等的茎痕及根痕,常附以少数须根。质较软,断面淡黄白色。羊角参味甘,性平,具有滋补肝肾、养阴生津的功效,常用于神经衰弱、高血压病、头痛、咽喉痛、消渴、口干舌燥。
炮仗花,别名黄鳝藤,紫葳科、炮仗藤属藤本植物,具有丝状卷须,叶对生;雄蕊着生于花冠筒中部,花丝丝状,花药叉开。子房圆柱形,密被细柔毛,花柱细,柱头舌状扁平,花柱与花丝均伸出花冠筒外。炮仗花味甘,性平,具有润肺止咳、清热利咽的功效,主治肺痨、新久咽喉肿痛。
本发明实施例2的作用机理:
猫屎瓜,祛风除湿、清肺止咳;山黄皮,化滞祛湿、健脾健胃;午香草,消炎止痛、健胃行气;营实,利水除热、活血解毒;长果荜茇,温中健胃、祛寒止痛;炮仗花,润肺止咳、清热利咽;羊角参,滋补肝肾、养阴生津。利用以上七味中药相互配伍,协同生效,通过调节肺的肃降,肝的升发,促进脾的健运,固达健脾益胃、消食化积的功效。
本发明实施例2经21位饮食积滞、食欲不振的人群,连续食用10天,每日20克,症状明显缓解人数为15人,有效率为71.43%;连续食用20天,每日20克以上,症状明显缓解人数为17人,有效率为80.95%。
实施例3,一种猫屎瓜风味山黄皮软糖及生产方法,采用以下步骤:
A.猫屎瓜预处理:取表皮完整、成熟的猫屎瓜果实,清洗后通过斩切机切成1-2厘米长的段状,倒入装有80目网筛的破碎机进行破碎,制得猫屎瓜浆,加入猫屎瓜浆重1.7%的果酒酵母,密封静置发酵,待酒精度上升至1.5%重量比,结束发酵,后加入猫屎的浆重1.5%的果醋酵母,发酵至果醋含量为0.3%时,结束发酵;
B.山黄皮预处理:取表皮完整、成熟的山黄皮,放入洗涤槽,用流动清水清洗干净,去蒂,倒入装有80目网筛的破碎机进行破碎,制得山黄皮浆,加入山黄皮浆重1.3%的果酒酒母,搅拌均匀,倒入不锈钢容器中,密封静置发酵,待酒精度为0.6%重量比时,结束发酵;
C.中药材预处理:按重量比例取中药材午香草16%、营实13%、长果荜茇18%、炮仗花13%、羊角参12%、啤酒花15%、茳芒13%,加入原料中药材重14倍的水,浸泡3小时,再煎煮50分钟,后连同煎煮液一起,倒入装有80目网筛打浆机进行打浆,再入浆渣分离机,制得中药汁;
D.熬糖:取适量水倒入不锈钢容器中,烧开,加入水重1.5倍的白砂糖,混合搅拌均匀,用中火进行熬煮,待其完全溶化改小火继续熬煮,直至糖液变浓稠清理掉糖液表层的气泡,制得糖液;
E.明胶溶液制作:取适量明胶,加入明胶重23倍的水,搅拌均匀,加热至67℃;

啤酒花,多年生攀援草本植物,茎、枝和叶柄密生绒毛和倒钩刺。雄花排列为圆锥花序,花被片与雄蕊均为5;雌花每两朵生于一苞片腋间;苞片呈覆瓦状排列为一近球形的穗状花序。啤酒花具有健胃消食、利尿安神的功效,主治消化不良、腹胀、浮肿、膀胱炎、肺结核、失眠。
茳芒,为豆科植物茳芒决明的种子,果实成熟时采收,剪下荚果,晒干,打出种子晒干备用。灌木或半灌木,高1-2m。分枝多,通常被毛。荚果近圆筒形,膨胀,边缘棕黄色,中间棕色,长7-9cm,疏生毛。茳芒味甘、苦,性平,归肝、胃、大肠经,具有清肝明目、健胃调中、润肠解毒的功效,常用于目赤肿痛、头晕头胀、口腔糜烂、习惯性便秘、小儿疳积、痢疾、疟疾。
本发明实施例3的作用机理:

本发明实施例3经25位饮食积滞、食欲不振的人群,连续食用10天,每日20克,症状明显缓解人数为20人,有效率为80%;连续食用20天,每日20克以上,症状明显缓解人数为22人,有效率为88%。

Claims (3)
1.一种猫屎瓜风味山黄皮软糖及生产方法,其特征在于,采用以下步骤:
A.猫屎瓜预处理:取表皮完整、成熟的猫屎瓜果实,清洗后通过斩切机切成1-2厘米长的段状,倒入装有80目网筛的破碎机进行破碎,制得猫屎瓜浆,加入猫屎瓜浆重1.7%的果酒酵母,密封静置发酵,待酒精度上升至1.5%重量比,结束发酵,后加入猫屎的浆重1.5%的果醋酵母,发酵至果醋含量为0.3%时,结束发酵;
B.山黄皮预处理:取表皮完整、成熟的山黄皮,放入洗涤槽,用流动清水清洗干净,去蒂,倒入装有80目网筛的破碎机进行破碎,制得山黄皮浆,加入山黄皮浆重1.3%的果酒酒母,搅拌均匀,倒入不锈钢容器中,密封静置发酵,待酒精度为0.6%重量比时,结束发酵;
C.中药材预处理:按重量比例取中药材午香草16%、营实13%、长果荜茇18%、炮仗花13%、羊角参12%、啤酒花15%、茳芒13%,加入原料中药材重14倍的水,浸泡3小时,再煎煮50分钟,后连同煎煮液一起,倒入装有80目网筛打浆机进行打浆,再入浆渣分离机,制得中药汁;
D.熬糖:取适量水倒入不锈钢容器中,烧开,加入水重1.5倍的白砂糖,混合搅拌均匀,用中火进行熬煮,待其完全溶化改小火继续熬煮,直至糖液变浓稠清理掉糖液表层的气泡,制得糖液;
E.明胶溶液制作:取适量明胶,加入明胶重23倍的水,搅拌均匀,加热至67℃;
F.配料:取糖液300kg、发酵后的猫屎瓜浆25kg、发酵后的山黄皮浆75kg、中药汁10kg,混合搅拌均匀,小火加热5分钟,加热结束,进行冷却,待混合物冷却至62℃,加入明胶溶液30kg、柠檬酸2kg,混合搅拌均匀,制得猫屎瓜山黄皮混合糖液;
G.成型:将模具内壁涂上熟制后的葛根淀粉,倒入猫屎瓜山黄皮混合糖液,待冷却至软硬适中时,取出,用除粉机除去糖块表面粘附的淀粉粒;
H.包装:将成型的猫屎瓜风味山黄皮软糖用食品级包装物进行包装;
I.贮存:将包装好的猫屎瓜风味山黄皮软糖贮存于阴凉、干燥、避光的库房中,库房温度应控制在20℃。
2.根据权利要求1所述的一种猫屎瓜风味山黄皮软糖及生产方法,其特征在于:生产过程中如糖液浓稠度不够,可在成型前适当烘制。
3.根据权利要求1所述的一种猫屎瓜风味山黄皮软糖及生产方法,其特征在于:所述步骤G所述淀粉为熟制后的葛根淀粉。
