背景技术
胖大海,又名大洞果、大海子、大海;味甘、淡,性寒,有清肺化痰、利咽开音、润肠通便的功能;主治干咳无痰,咽痛音哑,慢性咽炎,热结便秘等症。
罗汉果味甘性凉,归肺、大肠经,有润肺止咳、生津止渴的功效、适用于肺热或肺燥咳嗽、百日咳及暑热伤津口渴等,此外还有润肠通便的功效。陈皮味辛苦、性温,具有温胃散寒、理气健脾的功效,适合胃部胀满、消化不良、食欲不振、咳嗽多痰等症状的人食用。青果,又称“橄榄”,因果实尚呈青绿色时即可供鲜食而得名,性平,味甘、涩、酸,清热,利咽,生津,解毒,用于咽喉肿痛、咳嗽、烦渴等。甘草的主要功效有补脾益气,清热解毒,祛痰止咳,缓急止痛,调和诸药。薄荷茎叶有特殊香味,具有疏散风热、清利头目、利咽、透疹、疏肝解郁之功效。
蛹虫草,又名北冬虫夏草、北蛹虫草、虫草等,其富含虫草酸、虫草素、虫草多糖等成分;现代科学证明蛹虫草不仅具有特殊的营养价值,而且有明显的药用价值,具有补肺平喘,改善呼吸系统,补肺益肾,提高免疫力、大脑记忆力的功效。
目前市售的润喉产品,成分简单,保健效果不能够满足消费者清咽润喉的需要,同时,其风味、口感往往因为中药成分风味不调和而不能满足消费者需要。
针对现有技术存在问题,本发明的目的是提供一种胖大海清咽润喉糖,含胖大海成分,辅以其他中药原料和辅料制成,清咽润喉效果好,同时,该产品具有调和的气味和良好的口感。
发明内容
本发明的目的是提供一种胖大海清咽润喉糖的制备方法及所得产品,所得的糖具有保健止咳的作用。
具体技术方案如下:
(1)、按5-6:1-2:1-2:0.5-1的质量比,称取胖大海、罗汉果、薄荷、金银花,洗净切碎用纱布包裹,用总质量4-5倍的水,90℃加热煎煮2-3次,每次0.5-1小时,得煎煮液;
(2)、在每1000质量份的水中,加入以下质量份的原料:青果40-50、甘草45-50、西洋参15-20、菊花12-15、陈皮10-12,80℃加热煎煮2-3次,每次1-2小时,得煎煮液;
(3)、将步骤(1)得到的煎煮液、步骤(2)得到的煎煮液按1:1的体积比混合,按混合液的质量的7-9%加入冰糖,在90℃加热灭菌30min,作为发酵基料,然后按照3-5%的接种量向发酵基料中接入保加利亚乳杆菌、嗜热链球菌、蛹虫草菌和啤酒酵母的混合菌,在30℃发酵60h,发酵完成过滤后再按照1-2%的接种量向发酵基料中加入生香酵母,再在相同的温度下发酵48h,发酵完成后将发酵液用8层纱布过滤,得到发酵液;
(4)、浓缩:在发酵滤液加入20-30%白砂糖、5-10%麦芽糖和2-3%柠檬酸混合,倒入搪瓷锅内(不能与金属器皿接触),用旺火烧开,然后再改用文火熬煎,当锅内液汁浓缩至稠时,用筷子可以挑起并能拉成丝,即可停火,在整个熬煎过程中,火力应逐渐减小;
(5)、划切:将经浓缩的黏稠液倒入涂过熟菜油的搪瓷盘内,稍凉后压平,厚度为5-6毫米,然后,用薄刀片划切成长宽均为5-6厘米见方的小块(一般不切透),待凉透时,即为胖大海清咽润喉糖。
上述方法中,步骤(3)中,保加利亚乳杆菌、嗜热链球菌、蛹虫草菌和啤酒酵母的质量比为2:2:4:2。

4、浓缩:在发酵滤液加入30%白砂糖、10%麦芽糖和3%柠檬酸混合,倒入搪瓷锅内(不能与金属器皿接触),用旺火烧开,然后再改用文火熬煎,当锅内液汁浓缩至稠时,用筷子可以挑起并能拉成丝,即可停火,在整个熬煎过程中,火力应逐渐减小。
5、划切:将经浓缩的黏稠液倒入涂过熟菜油的搪瓷盘内,稍凉后压平,厚度为5-6毫米,然后,用薄刀片划切成长宽均为5-6厘米见方的小块(一般不切透),待凉透时,即为胖大海清咽润喉糖。
Claims (2)
1.一种胖大海清咽润喉糖的制备方法及所得产品,其特征是包括以下步骤:
(1)、按5-6:1-2:1-2:0.5-1的质量比,称取胖大海、罗汉果、薄荷、金银花,洗净切碎用纱布包裹,用总质量4-5倍的水,90℃加热煎煮2-3次,每次0.5-1小时,得煎煮液;
(2)、在每1000质量份的水中,加入以下质量份的原料:青果40-50、甘草45-50、西洋参15-20、菊花12-15、陈皮10-12,80℃加热煎煮2-3次,每次1-2小时,得煎煮液;
(3)、将步骤(1)得到的煎煮液、步骤(2)得到的煎煮液按1:1的体积比混合,按混合液的质量的7-9%加入冰糖,在90℃加热灭菌30min,作为发酵基料,然后按照3-5%的接种量向发酵基料中接入保加利亚乳杆菌、嗜热链球菌、蛹虫草菌和啤酒酵母的混合菌,在30℃发酵60h,发酵完成过滤后再按照1-2%的接种量向发酵基料中加入生香酵母,再在相同的温度下发酵48h,发酵完成后将发酵液用8层纱布过滤,得到发酵液;

2.根据权利要求1所述的制备方法,其特征是:步骤(3)中,保加利亚乳杆菌、嗜热链球菌、蛹虫草菌和啤酒酵母的质量比为2:2:4:2。
