Abstract
本发明公开了一种保健果醋及制备方法,涉及食品醋酿造技术领域,本发明采用柿子、柠檬、番木瓜等水果主料配以忍冬藤、虎杖根、茵陈、羌活等中草药辅料,通过原料预处理、混合溶液制备、果酒的制备、醋酸母液的制备、发酵、澄清、灭菌装罐加以酿制而成。此保健果醋采用独特的制备工艺,对柿子进行预处理,有效的去除了柿子中富含的单宁成分,改善了柿子口感苦涩的缺点,使其口味更为甘甜、清爽可口,成品果醋清亮透明,果香明显,酸甜适口,风味独特,营养价值高;添加的各味中草药互相配伍,协同增效,能有效的提高人体免疫力,并且具有健脾涩肠、降脂减肥、舒筋活络、清热解毒等功效。该发明保留了水果的营养成分和香气,适合于大众饮用。

技术领域
本发明涉及食品醋酿造技术领域,具体涉及一种保健果醋及制备方法。
背景技术
果醋以水果或果品加工下脚料为主要原料,利用现代生物技术酿制而成的一种营养丰富、风味优良的酸味调味品。它兼有水果和食醋的营养保健功能,是集营养、保健、食疗等功能为一体的新型饮品,但是,由于保健醋的酿制工艺复杂,目前并没有为市场所普遍接受的保健的果醋。
柿子:是柿科植物干果类水果,成熟季节在十月左右,果实形状较多,如球形、扁桃、方形等;柿子营养价值很高,含有丰富的蔗糖、葡萄糖、果糖、蛋白质、胡萝卜素、维生素C、瓜氨酸、碘、钙、磷、铁。所含维生素和糖分比一般水果高1~2倍左右,假如一个人一天吃一个柿子,所摄取的维生素C,基本上就能满足一天需要量的一半。中国传统医学认为,柿子味甘、涩,性寒,归肺经。《本草纲目》中记载“柿乃脾、肺、血分之果也。其味甘而气平,性涩而能收,故有健脾涩肠,治嗽止血之功。”同时,柿蒂,柿霜,柿叶均可入药。
具研究证明,柿果与其他水果最大的区别在于它含有高出其他水果十多倍甚至几十倍的单宁类物质,而水溶性单宁是柿果产生涩味的主要物质,而使其入口有苦涩感,影响其食用口感。
柠檬:芸香科柑橘属植物,柠檬又称柠果、洋柠檬、益母果等。柠檬因其味极酸,肝虚孕妇最喜食,故称益母果或益母子。柠檬中含有丰富的柠檬酸,因此被誉为“柠檬酸仓库”。它的果实汁多肉脆,有浓郁的芳香气。因为味道特酸,故只能作为上等调味料,用来调制饮料菜肴、化妆品和药品。此外,柠檬富含维生素C,能化痰止咳,生津健胃。用于支气管炎,百日咳,食欲不振,维生素缺乏,中暑烦渴等症状,它是"坏血病"的克星。
番木瓜:番木瓜果皮光滑美观,果肉厚实细致、香气浓郁、汁水丰多、甜美可口、营养丰富,有“百益之果”、“水果之皇”、“万寿瓜”之雅称,是岭南四大名果之一。木瓜富含17种以上氨基酸及钙、铁等,还含有木瓜蛋白酶、番木瓜碱等。半个中等大小的木瓜足供成人整天所需的维生素C;木瓜性温、味酸,入肝、脾经;具有消食,驱虫,清热,祛风的功效。
忍冬藤:又名大薜荔、水杨藤、千金藤,忍冬科多年生半常绿缠绕灌木。其味甘;性寒,归心;肺经。功能主治:清热解毒;通络。主温病发热;疮痈肿毒;热毒血痢;风湿热痹。
虎杖根:是蓼科植物虎杖的干燥根茎。其味微苦,性微寒;归肝、胆、肺经。功能主治:活血通络,清热利湿。
茵陈:别名牛至、田耐里、因尘、马先、绵茵陈、绒蒿、白蒿、细叶青蒿、安吕草,为管状花目、菊科、牛至属植物。其味苦,性平;归肝、肺经,入肺、肾二经。功能主治:清湿热,退黄疸。
羌活:别名羌青、护羌使者、胡王使者、羌滑、退风使者、黑药,为伞形科、羌活属植物,多年生草本。其味辛;苦;性温。入膀胱、肾经。功能主治:散表寒;祛风湿;利关节;止痛。主外感风寒;头痛无汗;风水浮肿;疮疡肿毒。用于阳痿遗精,遗尿尿频,腰膝冷痛,肾虚作喘,五更泄泻;外用治白癜风,斑秃。解表散寒,祛风胜湿,止痛。
发明内容
本发明的目的在于以柿子、柠檬、番木瓜等水果主料配以忍冬藤、虎杖根、茵陈、羌活等中草药辅料制备一种具有保健功效的,并能改善柿子口感苦涩的保健果醋。
一种保健果醋及制备方法所采用的技术方案是:
其制备方法包括以下步骤:
1)水果原料预处理:
①柿子:洗净、去皮取果肉,将取出的柿子果肉放入压榨机中搅拌成泥糊状,再将泥糊状的果肉置于干燥的铁锅中,加入足以浸没果肉的95%乙醇,密封加热,温度控制在50-65℃,时间为5-8小时,加热过后,打开锅盖,加入一定量的大豆粉,其添加量为柿子果肉量的0.75%-0.9%,充分搅拌30-40分钟后,用滤布进行过滤,再将过滤得到的柿子汁放入蒸馏罐中,在78℃的条件下,蒸馏分离出其所含的乙醇即可;
②柠檬放在盐水中浸泡20分钟、洗净、去皮取果肉、破碎;
③木瓜洗净、去皮去果肉、破碎;
④中草药原料预处理:将忍冬藤、虎杖根、茵陈、羌活各味中草药洗净之后放入清水中浸泡8-10小时,之后取出置于烘干箱内烘干,切碎,备用;
2)混合溶液制备:将预处理好的柠檬果肉、木瓜果肉分别放入双螺旋压榨机中进行榨汁,分别制得柠檬汁,木瓜汁,取60公斤柿子汁、30公斤柠檬汁、40公斤木瓜汁、混合制得混合溶液A;处理好的中药材投入夹层锅内进行熬煮,大火煮沸后,再用文火煎煮2-3小时,过滤得滤液B和滤渣,对滤渣进行2次煎煮、过滤得滤液C,再将滤液B和滤液C混合得中药混合液D,取6公斤的中药混合液与混合溶液A充分混合即可制得混合溶液E;
3)果酒的制备:经过截留分子量为10000的中合纤维超滤膜组件过滤后的混合溶液E内加入糖浆,搅拌使混合均匀,使果汁糖度调节至19%,制得发酵醪,之后加入发酵醪总量的0.03-0.05%的安琪活性干酵母进行酒精发酵,发酵时间为15-20天,制得果酒;
4)醋酸母液的制备:取部分制得的果酒接种活化的醋酸菌制备醋酸母液,接种的醋酸菌含量为取果酒量的8-10%,在30-33℃通风发酵7-9天,控制发酵液中总酸≥4g/100ml,残糖<0.3%,酒精含量<0.15%,以醋酸含量不再上升为准,进而制得醋酸母液;
5)发酵:将剩余的果酒与制得的醋酸母液进行混合发酵,发酵温度在32-35℃,发酵时间为4-6天,当酸度达到2-4%时,发酵停止,得到果醋初品;
6)澄清:将果醋初品经自然沉降5-7天后再经超滤膜进行过滤澄清处理;
7)杀菌、灌装:过滤之后的果醋在80-100℃的温度下加热杀菌15-20钟,冷却后灌装即为成品果醋。
本发明所述的一种保健果醋及制备方法,其特征在于,加工工艺步骤中的第(1)步中的第①步,蒸馏结束后需检验有无残留的乙醇,具体操作是:蒸馏结束后,用胶头滴管从蒸馏罐中吸取少量柿子汁,并将其滴入到铬酐的硫酸水溶液中,如果使清澈的铬酐的硫酸水溶液由橙色变为不透明的蓝绿色,说明柿子汁中的乙醇未完全蒸馏,需继续蒸馏,直至乙醇完全蒸馏出去。
本发明的有益效果:
1.柿子中富含的单宁为水溶性单宁,易溶于水和酒精等,并且单宁容易和蛋白中氨基酸的氨基端结合,使蛋白质变性凝固沉淀。本发明中的制备工艺通过对柿子果肉预处理,通过添加乙醇可以萃取出柿子中的单宁,进而加入大豆粉,大豆粉中富含水溶性蛋白质,单宁和水溶性蛋白质进行反应生成沉淀物,从而有效的对单宁进行了去除,改善了柿子的苦涩的口感。2.成品果醋清亮透明,果香明显,酸甜适口,风味独特,营养价值高;添加的各味中草药互相配伍,协同增效,能有效的提高人体免疫力,并且具有健脾涩肠、降脂减肥、舒筋活络、清热解毒等功效。该发明保留了水果的营养成分和香气,适合于大众饮用。
具体实施方式
实施例1,一种保健果醋及制备方法,采用以下步骤加以酿制:
1)水果原料预处理:
①柿子:洗净、去皮取果肉,将取出的柿子果肉放入压榨机中搅拌成泥糊状,再将泥糊状的果肉置于干燥的铁锅中,加入足以浸没果肉的95%乙醇,密封加热,温度控制在52℃,时间为6小时,加热过后,打开锅盖,加入一定量的大豆粉,其添加量为柿子果肉量的0.75%,充分搅拌30分钟后,用滤布进行过滤,得到柿子汁,再将柿子汁放入蒸馏罐中,在78℃的条件下,蒸馏分离出其所含的乙醇,蒸馏结束后,用胶头滴管从蒸馏罐中吸取少量柿子汁,并将其滴入到铬酐的硫酸水溶液中,如果使清澈的铬酐的硫酸水溶液由橙色变为不透明的蓝绿色,说明柿子汁中的乙醇未完全蒸馏,需继续蒸馏,直至乙醇完全蒸馏出去,即可得到柿子汁;

7)杀菌、灌装:过滤之后的果醋在80℃的温度下加热杀菌15钟,冷却后灌装即为成品果醋。
实施例2,一种保健果醋及制备方法,采用以下步骤加以酿制:
1)水果原料预处理:
①柿子:洗净、去皮取果肉,将取出的柿子果肉放入压榨机中搅拌成泥糊状,再将泥糊状的果肉置于干燥的铁锅中,加入足以浸没果肉的95%乙醇,密封加热,温度控制在55℃,时间为7小时,加热过后,打开锅盖,加入一定量的大豆粉,其添加量为柿子果肉量的0.8%,充分搅拌35分钟后,用滤布进行过滤,得到柿子汁,再将柿子汁放入蒸馏罐中,在78℃的条件下,蒸馏分离出其所含的乙醇,蒸馏结束后,用胶头滴管从蒸馏罐中吸取少量柿子汁,并将其滴入到铬酐的硫酸水溶液中,如果使清澈的铬酐的硫酸水溶液由橙色变为不透明的蓝绿色,说明柿子汁中的乙醇未完全蒸馏,需继续蒸馏,直至乙醇完全蒸馏出去,即可得到柿子汁;
②柠檬放在盐水中浸泡20分钟、洗净、去皮取果肉、破碎;
③木瓜洗净、去皮去果肉、破碎;
④中草药原料预处理:将忍冬藤、虎杖根、茵陈、羌活、独活、仓术各味中草药洗净之后放入清水中浸泡8-10小时,之后取出置于烘干箱内烘干,切碎,备用;
2)混合溶液制备:将预处理好的柠檬果肉、木瓜果肉分别放入双螺旋压榨机中进行榨汁,分别制得柠檬汁,木瓜汁,取65公斤柿子汁、32公斤柠檬汁、38公斤木瓜汁、混合制得混合溶液A;处理好的中药材投入夹层锅内进行熬煮,大火煮沸后,再用文火煎煮2-3小时,过滤得滤液B和滤渣,对滤渣进行2次煎煮、过滤得滤液C,再将滤液B和滤液C混合得中药混合液D,取7公斤的中药混合液与混合溶液A充分混合即可制得混合溶液E;
3)果酒的制备:经过截留分子量为10000的中合纤维超滤膜组件过滤后的混合溶液E内加入糖浆,搅拌使混合均匀,使果汁糖度调节至19%,制得发酵醪,之后加入发酵醪总量的0.04%的安琪活性干酵母进行酒精发酵,发酵时间为17天,制得果酒;
4)醋酸母液的制备:取部分制得的果酒接种活化的醋酸菌制备醋酸母液,接种的醋酸菌含量为取果酒量的9%,在32℃通风发酵7天,控制发酵液中总酸≥4g/100ml,残糖<0.3%,酒精含量<0.15%,以醋酸含量不再上升为准,进而制得醋酸母液;
5)发酵:将剩余的果酒与制得的醋酸母液进行混合发酵,发酵温度在32℃,发酵时间为5天,当酸度达到3%时,发酵停止,得到果醋初品;
6)澄清:将果醋初品经自然沉降6天后再经超滤膜进行过滤澄清处理;
7)杀菌、灌装:过滤之后的果醋在85℃的温度下加热杀菌18钟,冷却后灌装即为成品果醋。
实施例2中添加了两味中药材:独活、仓术。
独活:为伞形科植物重齿毛当归的干燥根。其味辛、性温、微苦;入肝、肾、膀胱经。功能主治:具有祛风胜湿、散寒、止痛、消肿、舒筋活络等功效。
仓术:为菊科苍术属多年生草本植物。其味辛、苦,性温;归脾、胃、肝经。功能主治:具有燥湿健脾,祛风散寒,明目等功效。
实施例3,一种保健果醋及制备方法,采用以下步骤加以酿制:
1)水果原料预处理:
①柿子:洗净、去皮取果肉,将取出的柿子果肉放入压榨机中搅拌成泥糊状,再将泥糊状的果肉置于干燥的铁锅中,加入足以浸没果肉的95%乙醇,密封加热,温度控制在65℃,时间为7小时,加热过后,打开锅盖,加入一定量的大豆粉,其添加量为柿子果肉量的0.85%,充分搅拌40分钟后,用滤布进行过滤,得到柿子汁,再将柿子汁放入蒸馏罐中,在78℃的条件下,蒸馏分离出其所含的乙醇,蒸馏结束后,用胶头滴管从蒸馏罐中吸取少量柿子汁,并将其滴入到铬酐的硫酸水溶液中,如果使清澈的铬酐的硫酸水溶液由橙色变为不透明的蓝绿色,说明柿子汁中的乙醇未完全蒸馏,需继续蒸馏,直至乙醇完全蒸馏出去,即可得到柿子汁;
②柠檬放在盐水中浸泡20分钟、洗净、去皮取果肉、破碎;
③木瓜洗净、去皮去果肉、破碎;
④中草药原料预处理:将忍冬藤、虎杖根、茵陈、羌活、独活、仓术、姜黄、川芎各味中草药洗净之后放入清水中浸泡10小时,之后取出置于烘干箱内烘干,切碎,备用;
2)混合溶液制备:将预处理好的柠檬果肉、木瓜果肉分别放入双螺旋压榨机中进行榨汁,分别制得柠檬汁,木瓜汁,取68公斤柿子汁、36公斤柠檬汁、35公斤木瓜汁、混合制得混合溶液A;处理好的中药材投入夹层锅内进行熬煮,大火煮沸后,再用文火煎煮2-3小时,过滤得滤液B和滤渣,对滤渣进行2次煎煮、过滤得滤液C,再将滤液B和滤液C混合得中药混合液D,取6.8公斤的中药混合液与混合溶液A充分混合即可制得混合溶液E;
3)果酒的制备:经过截留分子量为10000的中合纤维超滤膜组件过滤后的混合溶液E内加入糖浆,搅拌使混合均匀,使果汁糖度调节至19%,制得发酵醪,之后加入发酵醪总量的0.03-0.05%的安琪活性干酵母进行酒精发酵,发酵时间为19天,制得果酒;
4)醋酸母液的制备:取部分制得的果酒接种活化的醋酸菌制备醋酸母液,接种的醋酸菌含量为取果酒量的10%,在33℃通风发酵8天,控制发酵液中总酸≥4g/100ml,残糖<0.3%,酒精含量<0.15%,以醋酸含量不再上升为准,进而制得醋酸母液;
5)发酵:将剩余的果酒与制得的醋酸母液进行混合发酵,发酵温度在33℃,发酵时间为6天,当酸度达到3%时,发酵停止,得到果醋初品;
6)澄清:将果醋初品经自然沉降6天后再经超滤膜进行过滤澄清处理;
7)杀菌、灌装:过滤之后的果醋在80℃的温度下加热杀菌20钟,冷却后灌装即为成品果醋。
实施例3中添加了两味中药材:姜黄、川芎
姜黄:又名:郁金、宝鼎香、毫命、黄姜等。为姜黄芭蕉目,姜科、姜黄属多年生草本植物。其味辛、苦,性温。入脾、肝经。功能主治:破血,行气,通经,止痛。治心腹痞满胀痛,臂痛,症瘕,妇女血瘀经闭,产后瘀停腹痛,跌扑损伤,痈肿。
川芎:伞形科草本植物,其味辛微甘,气温。入肝、胆经。功能主治:行气开郁,法风燥湿,活血止痛。治风冷头痛旋晕,胁痛腹疼,寒痹筋挛,经闭,难产,产后瘀阻块痛,痈疽疮疡。用于月经不调,经闭痛经,瘕腹痛,胸胁刺痛,跌扑肿痛,头痛,风湿痹痛。

1.一种保健果醋及制备方法,其特征在于,采用以下步骤加以酿制:
1)水果原料预处理:
①柿子:洗净、去皮取果肉,将取出的柿子果肉放入压榨机中搅拌成泥糊状,再将泥糊状的果肉置于干燥的铁锅中,加入足以浸没果肉的95%乙醇,密封加热,温度控制在50-65℃,时间为5-8小时,加热过后,打开锅盖,加入一定量的大豆粉,其添加量为柿子果肉量的0.75%-0.9%,充分搅拌30-40分钟后,用滤布进行过滤,再将过滤得到的柿子汁放入蒸馏罐中,在78℃的条件下,蒸馏分离出其所含的乙醇,即可;
②柠檬放在盐水中浸泡20分钟、洗净、去皮取果肉、破碎;
③木瓜洗净、去皮去果肉、破碎;
④中草药原料预处理:将忍冬藤、虎杖根、茵陈、羌活各味中草药洗净之后放入清水中浸泡8-10小时,之后取出置于烘干箱内烘干,切碎,备用;
2)混合溶液制备:将预处理好的柠檬果肉、木瓜果肉分别放入双螺旋压榨机中进行榨汁,分别制得柠檬汁,木瓜汁,取60公斤柿子汁、30公斤柠檬汁、40公斤木瓜汁、混合制得混合溶液A;处理好的中药材投入夹层锅内进行熬煮,大火煮沸后,再用文火煎煮2-3小时,过滤得滤液B和滤渣,对滤渣进行2次煎煮、过滤得滤液C,再将滤液B和滤液C混合得中药混合液D,取6公斤的中药混合液与混合溶液A充分混合即可制得混合溶液E;
3)果酒的制备:经过截留分子量为10000的中合纤维超滤膜组件过滤后的混合溶液E内加入糖浆,搅拌使混合均匀,使果汁糖度调节至19%,制得发酵醪,之后加入发酵醪总量的0.03-0.05%的安琪活性干酵母进行酒精发酵,发酵时间为15-20天,制得果酒;
4)醋酸母液的制备:取部分制得的果酒接种活化的醋酸菌制备醋酸母液,接种的醋酸菌含量为取果酒量的8-10%,在30-33℃通风发酵7-9天,控制发酵液中总酸≥4g/100ml,残糖<0.3%,酒精含量<0.15%,以醋酸含量不再上升为准,进而制得醋酸母液;
5)发酵:将剩余的果酒与制得的醋酸母液进行混合发酵,发酵温度在32-35℃,发酵时间为4-6天,当酸度达到2-4%时,发酵停止,得到果醋初品;
6)澄清:将果醋初品经自然沉降5-7天后再经超滤膜进行过滤澄清处理;
7)杀菌、灌装:过滤之后的果醋在80-100℃的温度下加热杀菌15-20钟,冷却后灌装即为成品果醋。
2.根据权利要求1所述的一种保健果醋及制备方法,其特征在于,加工工艺步骤中的第(1)步中的第①步,蒸馏结束后需检验有无残留的乙醇,具体操作是:蒸馏结束后,用胶头滴管从蒸馏罐中吸取少量柿子汁,并将其滴入到铬酐的硫酸水溶液中,如果使清澈的铬酐的硫酸水溶液由橙色变为不透明的蓝绿色,说明柿子汁中的乙醇未完全蒸馏,需继续蒸馏,直至乙醇完全蒸馏出去。
