本发明公开一种腐婢保健糯米食品的制作方法,该制作方法包括以下具体步骤:把500‑600g鲜青艾、400‑500g鲜腐婢叶清理洗干净,分别把鲜艾草、鲜腐婢叶放入开水锅中烫一下捞出沥水,用打碎机把鲜艾草打碎成细碎末汁,用打碎机把鲜腐婢叶打碎成细碎末榨汁,将鲜艾草细碎末汁、鲜腐婢叶汁加入3‑5g小苏打混合均匀;再将混合液倒入500‑800g糯米粉中和好糯米粉面团;用上述面团包馅制作糯米青团饼或汤圆。本发明在糯米青团食品中添加适当腐婢叶汁后,不仅改善了糯米食品粘性大,稳定性差的缺陷,使青团硬度降低,口感变好,还增强了糯米食品保健功能,延长产品的保鲜期。

本发明属于食品加工技术领域,涉及一种腐婢叶保健糯米食品的制作方法。
背景技术
青艾,为菊科蒿属多年生草本植物,植株有香气。在我国分布甚广。具有理气行血,逐寒调经,安胎,祛风除湿,消肿止血等功能,嫩苗作菜蔬食用。俗称,小叶艾、狭叶艾,艾叶等,具有理气行血,逐寒调经,安胎,祛风除湿,消肿止血等功能。能治感冒,头痛,疟疾,皮肤瘙痒,痈肿等症。因此,在盛夏季节,不妨家养一盆野艾,每当被蚊虫叮咬、奇痒难耐之时,可随手摘一两片野艾叶,搓揉后敷于被叮咬处,即刻痒痛顿消。如果手脚等因不慎而导致外伤出血,也可摘一两片艾叶,揉软后敷于伤口处,即可达到止血之功效。
用青艾加工成蒿子馍馍,又称青团,是清明期间的各食品店加工的主打产品,就像是春节要吃饺子、端午节要吃粽子一样,在南方各地非常流行。青团味道的确非常清香和可口,每年到了农历二月中下旬左右,青团就开始在市场上畅销了。青团主要原料是用青艾配以糯米粉,揉成面团,这样的面团发出清新的蒿香。青团的馅可以根据自己的口味,雪里红、猪肉、冬笋、四方子等等,可谓是荤素搭配,不油不腻,放锅里用火蒸或用电饭锅蒸熟即可实用。清蒸出的青团可以保证原滋原味,浓浓的墨绿散发出蒿香,最有营养。
青团是由鲜野艾蒿汁末拌糯米粉揉成面团加工而成,由于糯米粉蒸熟后粘性大,食用既不方便,有粘牙。有些店家为了克服这些缺陷,在糯米粉中添加普通米粉,这样做的青团硬度高,口感差。

本发明的目的可以通过以下技术方案实现:
一种腐婢叶保健糯米食品的制作方法,该制作方法包括以下具体步骤:
把500-600g鲜青艾、400-500g鲜腐婢叶清理洗干净,分别把鲜艾草、鲜腐婢叶放入开水锅中烫一下捞出沥水,用打碎机把鲜艾草打碎成细碎末汁,用打碎机把鲜腐婢叶打碎成细碎末榨汁;
将鲜艾草细碎末汁、鲜腐婢叶汁加入3-5g小苏打混合均匀;
再将混合液倒入500-800g糯米粉中和好糯米粉面团;
用上述面团包馅可制作成各种口味的糯米青团饼或汤圆,通过蒸、煮、炸熟制食用。
腐婢(俗称豆腐柴),直立灌木,植被高2-6m。幼枝有柔毛,老枝渐无毛。腐婢其叶和嫩枝含有大量的多糖类果胶蛋白质和纤维素,也含有较多的叶绿素和维生素C,还含有丰富的矿质元素,如钙、钾等。腐婢所含热量很低,以腐婢叶和嫩枝为原料,经选料、清洗、捣烂、过滤、稀释、灭菌、加碱水和凝固工艺过程,可生产得到类豆腐食品即为柴叶豆腐,民间称之为″观音豆腐,色泽嫩绿,口感滑爽,营养丰富,为无污染绿色食品。具有清热泻火、祛风除湿、止血消肿、解暑之功效。腐婢干叶中果胶含量可达30-40%,是一种良好的天然稳定剂,在食品中添加适量的腐婢叶汁,能有效防止颗粒物品散失流动,能提高食品的弹性和稳定。
糯米是一种温和的滋补品,有补虚、补血、健脾暖胃、止汗等作用。适用于脾胃虚寒所致的反胃、食欲减少、泄泻和气虚引起的汗虚、气短无力、妊娠腹坠胀等症。糯米含有蛋白质、脂肪、糖类、钙、磷、铁、维生素B及淀粉等,所为温补强壮品。
本发明的有益效果:本发明在糯米青团食品中添加适当腐婢叶后,不仅改善了糯米食品粘性大,稳定性差的缺陷,使青团硬度降低,口感变好,还增强了糯米食品保健功能,延长产品的保鲜期。

实施例1
取糯米粉500g、鲜青艾500g、鲜腐婢叶400、小苏打3g
步骤:把500g鲜青艾、400g鲜腐婢叶清理洗干净,分别把鲜艾草、鲜腐婢叶放入开水锅中烫一下捞出沥水,用打碎机把鲜艾草打碎成细碎末汁,用打碎机把鲜腐婢叶打碎成细碎末榨汁;
将鲜艾草细碎末汁、鲜腐婢叶汁加入3g小苏打混合均匀;
再将混合液倒入500g糯米粉中和好糯米粉面团。
用该面团包馅可制作成各种口味的糯米青团饼,糯米青团饼放在蒸笼上蒸熟食用。
实施例2
取糯米粉600g、鲜青艾600g、鲜腐婢叶500、小苏打4g
步骤:把600g鲜青艾、500g鲜腐婢叶清理洗干净,分别把鲜艾草、鲜腐婢叶放入开水锅中烫一下捞出沥水,用打碎机把鲜艾草打碎成细碎末汁,用打碎机把鲜腐婢叶打碎成细碎末榨汁;
将鲜艾草细碎末汁、鲜腐婢叶汁加入4g小苏打混合均匀;
再将混合液倒入600g糯米粉中和好糯米粉面团。
用该面团包馅可制作成各种口味的糯米青团饼,油炸熟制食用。
实施例3
取糯米粉800g、鲜青艾600g、鲜腐婢叶500、小苏打5g
步骤:把600g鲜青艾、500g鲜腐婢叶清理洗干净,分别把鲜艾草、鲜腐婢叶放入开水锅中烫一下捞出沥水,用打碎机把鲜艾草打碎成细碎末汁,用打碎机把鲜腐婢叶打碎成细碎末榨汁;
将鲜艾草细碎末汁、鲜腐婢叶汁加入5g小苏打混合均匀;
再将混合液倒入800g糯米粉中和好糯米粉面团。
用该面团包馅可制作成各种口味的汤圆,汤圆下锅煮熟食用。

将鲜艾草细碎末汁、鲜腐婢叶汁加入3-5g小苏打混合均匀;
再将混合液倒入500-800g糯米粉中和好糯米粉面团。
