本发明涉及食品技术领域,尤其涉及一种降血压烟熏鸡翅。
背景技术
鸡翅又名鸡翼、大转弯。肉少,皮富胶质。又分“鸡膀”“膀尖”两种。鸡膀,连接鸡体至鸡翅的第一关节处,肉质较多;鸡翅有温中益气、补精添髓、强腰健胃等功效,鸡中翅相对翅尖和翅根来说,它的胶原蛋白含量丰富,对于保持皮肤光泽、增强皮肤弹性均有好处。
儿茶,中药名。为豆科植物儿茶Acacia catechu (L.f.)Willci.的去皮枝、干的干燥煎膏。冬季采收枝、干,除去外皮,砍成大块,加水煎煮,浓缩,干燥。分布于云南南部地区,海南有栽培。具有活血止痛,止血生肌,收湿敛疮,清肺化痰的功效。用于跌扑伤痛,外伤出血,吐血衄血,疮疡不敛,湿疹、湿疮,肺热咳嗽。
罗布麻(学名:A. venetum L.),别称红麻、茶叶花、红柳子等,直立半灌木,高1.5-3米,一般高约2米,最高可达4米,生长于河岸、山沟、山坡的砂质地,在中国淮河、秦岭、昆仑山以北各省(自治区)都有罗布麻分布,有清火,降压,强心,利尿,治心脏病等作用。。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种降血压烟熏鸡翅。
本发明是通过以下技术方案实现的:
一种降血压烟熏鸡翅,其是由下述重量份的原料制得:儿茶0.1-0.3、山楂叶1-2、茯神1-2、白芍2-4、山药3-4、熟地2-3、黑木耳1-3、罗布麻1-2、月见草1-3、丹参1-2、金荞麦2-4、绿豆衣2-3,红曲米粉0.3-0.5、柠檬酸0.2-0.4、卡拉胶1-2、果胶多糖1-2、蔗糖酯1-3、普鲁兰多糖2-4、食盐25-40、鸡翅500-600。
所述的一种降血压烟熏鸡翅,
(1)按重量份取丹参、金荞麦、绿豆衣,清洗干净后,破碎成浆,然后加入上述原料重量3-5倍的纯净水,加热熬制10-30分钟后,冷却,加入红曲米粉,室温发酵3-4天,取出后过滤,得一次发酵液备用;
(2)将儿茶、山楂叶、茯神、白芍、山药、熟地、黑木耳、罗布麻、月见草混合并绞碎后,搅拌均匀后,与一次发酵液混合均匀后,室温发酵3-5天,过滤,得二次发酵液备用;
(3)将鸡翅与二次发酵液和食盐混匀,放入真空滚揉机中缓慢滚揉,再挂晾3-5天后,用桂枝燃烧产生的烟在空气湿度为20-40%,温度为18-25℃房间烟熏120-150小时,得烟熏脆骨备用;
(4)将蔗糖酯加适量水搅拌均匀,再加入卡拉胶、果胶多糖,充分地搅拌、静止,再加入其余原料混匀后,得到浆液,将其喷涂到烟熏鸡翅表面,快速风干即得。
本发明的优点是:(1)本发明原料复配合理,能够达到很好的清肺、降压、活血等养生保健作用 ,山楂叶能防治心血管疾病,具有扩张血管、增加冠脉血流量、改善心脏活力、兴奋中枢神经系统、降低血压和胆固醇、软化血管及利尿和镇静作用;罗布麻可治神经衰弱,眩晕,脑震荡后遗症,心悸,失眠,高血压,肝硬化腹水,浮肿:
(2)本发明的发酵液采用多阶段发酵干燥工艺,不仅可达到发酵快和低成本的目的,而且还可有效抑制畜肉腥膻味,使所制得的产品既保持了天然特性,又具有独特的风味。
(3)在发酵的鸡翅表面涂一层薄膜,具有防腐、保鲜、杀菌和防失水的功效,能够避免发酵脆骨中的营养成分的流失或腐坏变质,延长保质期。。
具体实施方式
一种降血压烟熏鸡翅,其是由下述重量份的原料制得:儿茶0.1、山楂叶1、茯神1、白芍2、山药3、熟地2、黑木耳1、罗布麻1、月见草1、丹参1、金荞麦2、绿豆衣2,红曲米粉0.3、柠檬酸0.2、卡拉胶1、果胶多糖1、蔗糖酯1、普鲁兰多糖2、食盐25、鸡翅500。
所述的一种降血压烟熏鸡翅,
(1)按重量份取丹参、金荞麦、绿豆衣,清洗干净后,破碎成浆,然后加入上述原料重量3倍的纯净水,加热熬制10分钟后,冷却,加入红曲米粉,室温发酵3天,取出后过滤,得一次发酵液备用;
(2)将儿茶、山楂叶、茯神、白芍、山药、熟地、黑木耳、罗布麻、月见草混合并绞碎后,搅拌均匀后,与一次发酵液混合均匀后,室温发酵3天,过滤,得二次发酵液备用;
(3)将鸡翅与二次发酵液和食盐混匀,放入真空滚揉机中缓慢滚揉,再挂晾3天后,用桂枝燃烧产生的烟在空气湿度为20%,温度为18℃房间烟熏120小时,得烟熏脆骨备用;
(4)将蔗糖酯加适量水搅拌均匀,再加入卡拉胶、果胶多糖,充分地搅拌、静止,再加入其余原料混匀后,得到浆液,将其喷涂到烟熏鸡翅表面,快速风干即得。
Claims (2)
1.一种降血压烟熏鸡翅,其特征在于:其是由下述重量份的原料制得:儿茶0.1-0.3、山楂叶1-2、茯神1-2、白芍2-4、山药3-4、熟地2-3、黑木耳1-3、罗布麻1-2、月见草1-3、丹参1-2、金荞麦2-4、绿豆衣2-3,红曲米粉0.3-0.5、柠檬酸0.2-0.4、卡拉胶1-2、果胶多糖1-2、蔗糖酯1-3、普鲁兰多糖2-4、食盐25-40、鸡翅500-600。
2.根据权利要求1所述的一种降血压烟熏鸡翅,其特征在于:
(1)按重量份取丹参、金荞麦、绿豆衣,清洗干净后,破碎成浆,然后加入上述原料重量3-5倍的纯净水,加热熬制10-30分钟后,冷却,加入红曲米粉,室温发酵3-4天,取出后过滤,得一次发酵液备用;
(2)将儿茶、山楂叶、茯神、白芍、山药、熟地、黑木耳、罗布麻、月见草混合并绞碎后,搅拌均匀后,与一次发酵液混合均匀后,室温发酵3-5天,过滤,得二次发酵液备用;
(3)将鸡翅与二次发酵液和食盐混匀,放入真空滚揉机中缓慢滚揉,再挂晾3-5天后,用桂枝燃烧产生的烟在空气湿度为20-40%,温度为18-25℃房间烟熏120-150小时,得烟熏脆骨备用;
