背景技术
车前草又名车轮菜,为车前科多年生草本。生长在山野、路旁、花圃、河边等地。根茎短缩肥厚,密生须状根。有利水通淋、清热解毒、清肝明目、祛痰、止泻的功效。
全草含车前甙,桃叶珊瑚甙,乌苏酸,B-谷甾醇、棕酸豆甾醇酯、维生素B、维生素C、以及车前果胶 (系由D-半乳醛酸甲酯.D-半糖、L-阿拉伯糖、L-鼠李糖等组成)、蛋白质、琥珀酸、腺嘌呤、胆碱、梓醇、硬质酸、花生酸、亚麻酸、亚没酸等脂肪酸。
由于车前草可食用期短和生长地区比较狭小,在其他的季节或地区,则吃不到以车前草为调味品烹饪的羊肉类食物,目前,还没有以车前草为原料制成的烹饪羊肉专用调味品。

本发明的目的是针对上述不足,而提出的一种工艺简单,不含防腐剂,存放时间长,以车前草作为主要原料的车前草烹饪羊肉专用调味品。
本发明的技术解决方案是:车前草烹饪羊肉专用调味品配料如下:车前草提取物:10-20克、绿茶粉:5-10克、大蒜粉:3-5克、干姜粉3-5克、黄豆粉5-10克、清香或者麻辣辅料:5-30克。
清香型车前草烹饪羊肉专用调味品配料如下:车前草提取物:10-20克、绿茶粉:5-10克、大蒜粉:3-5克、干姜粉3-5克、黄豆粉5-10克、香叶粉:3-5克、甘草粉:3-5克、玫瑰花粉:3-5克。
麻辣型车前草烹饪羊肉专用调味品配料如下:车前草提取物:10-20克、绿茶粉:5-10克、大蒜粉:3-5克、干姜粉3-5克、黄豆粉5-10克、辣椒粉:3-5克、花椒粉:5-8克、孜然粉:3-5克。
本发明的技术解决方案中所述的车前草烹饪羊肉调味品,其生产工艺是:①车前草提取物的提取方法如下:a、将车前草干燥粉碎后加入5%乙醇水溶液于50-60℃热回流浸提40-60分钟,并过滤,得浸提液;b、将上述浸提液用乙醚进行萃取,得萃取液;c、将上述萃取液用聚乙二醇5000柱进行柱层析,再用浓度为5-10%的醋酸水溶液洗脱,得洗脱液;d、将上述洗脱液用乙醇进行重结晶,干燥后,即得所述车前草提取物。②将车前草提取物和市售的其他辅料分别用小型高速粉碎机粉碎过100目筛网,将筛下的配料称重后在搅拌机内混合搅拌15分钟,混合均匀,即制成本发明所述调味品。
本发明的生产成本低,设备简单,原料丰富,车前草野生或栽培种广泛分布或种植于长江及以南流域,用本发明作为烹饪羊肉专用调料,具有增鲜提味,促进食欲的功用,且绿色环保,不含任何防腐剂,无任何副作用,存放时间长,可达12个月以上。经理化及微生物指标测试,磨碎细度(30孔∕cm2筛上的残留物)≤1.5%;含水量≤12%;总灰分≤9%;酸不溶灰分≤4%;总菌数≤1.0×104/克;大肠杆菌≤45MPN/100克,均符合国家调味品指标要求。
具体实施方式
将车前草干燥粉碎后加入5%乙醇水溶液于60℃热回流浸提60分钟,并过滤,得浸提液;b、将上述浸提液用乙醚进行萃取,得萃取液;c、将上述萃取液用聚乙二醇5000柱进行柱层析,再用浓度为10%的醋酸水溶液洗脱,得洗脱液;d、将上述洗脱液用乙醇进行重结晶,干燥后,即得所述车前草提取物。
清香型车前草烹饪羊肉专用调味品配料:
车前草提取物15克、绿茶粉5克、大蒜粉3克、干姜粉3克、黄豆粉5克、香叶粉3克、甘草粉3克、玫瑰花粉3克
将车前草提取物和市售的其他辅料分别用小型高速粉碎机粉碎过100目筛网,将筛下的配料称重后在搅拌机内混合搅拌15分钟,混合均匀,即制成本发明所述调味品。
