本发明公开了一种鱼蛋白营养花生核桃粉,由以下重量份原料制成:核桃仁300‑320、花生仁90‑100、桂花汁140‑150、西瓜260‑270、鳕鱼80‑90、麦芽糊精60‑70、食用明胶10‑15、维生素E1‑2、鱼肝油8‑10、食用乙醇35‑40、乳双歧杆菌粉6‑7、罗伊氏乳杆菌粉4‑6、柏子仁5‑6、酸枣仁5‑6等;本发明的一种鱼蛋白营养核桃粉,在制备过程中将核桃去皮、脱脂使粉质更加细腻,且不易变质,添加乳双歧杆菌粉、罗伊氏乳杆菌粉,使核桃粉富含益生菌粉,能够有助胃肠道有益菌群的建立,促进人体对营养物质的吸收,添加鳕鱼、鱼肝油,将鳕鱼优质蛋白添加到核桃粉中,提供营养,促进钙的吸收,与柏子仁、酸枣仁、远志、合欢皮等提取物搭配,能够有助于大脑发育,安神补脑。

本发明涉及核桃粉技术领域,尤其涉及一种鱼蛋白营养花生核桃粉及其制备方法。
背景技术
核桃含油量较高,深加工产品常温下易变质,难以保存,而核桃得深加工产品核桃粉,营养价值较高,可广泛应用于饮料、蛋糕等各类食品中,市场需求不断增加。市场上所售的核桃粉多为核桃仁直接细磨得来,产品颗粒硬度大、溶解性差、易沉淀,营养结构单一,这显然已经不能满足人们的需求。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种鱼蛋白营养花生核桃粉及其制备方法。
本发明是通过以下技术方案实现的:
一种鱼蛋白营养花生核桃粉,由以下重量份原料制成:核桃仁300-320、花生仁90-100、桂花汁140-150、西瓜260-270、鳕鱼80-90、麦芽糊精60-70、食用明胶10-15、维生素E1-2、鱼肝油8-10、食用乙醇35-40、乳双歧杆菌粉6-7、罗伊氏乳杆菌粉4-6、柏子仁5-6、酸枣仁5-6、远志6-7、合欢皮6-7、金花葵3-4、猪殃殃2-3、蔗糖10-15、0.5%NaOH溶液适量、0.1%CaCl溶液适量、水适量。
所述的一种鱼蛋白营养核桃粉的制备方法,包括以下工艺:
(1)将花生仁洗净,置于锅中,倒入桂花汁,加热焖煮50-60分钟,使桂花香味浸入花生仁,取出花生仁,放入烤箱中烤干,去皮后备用;
(2)将核桃仁置于容器中,倒入0.5%NaOH溶液、0.1%CaCl溶液,充分搅拌,加热至63-65℃,浸泡5-7分钟备用;
(3)将步骤(2)中处理的核桃仁置于清洗槽中,用高压水枪喷淋,并在300W的超声波条件下振荡去皮,反复3-4次,得脱皮核桃仁;
(4)将脱皮核桃仁烘干,与花生仁混合磨碎,放入液压榨油机中压榨脱油,过滤,得滤饼,即低变性脱脂花生核桃粕,对花生核桃粕进一步破碎,并加水磨浆,用振动筛过滤,滤渣经真空干燥、粉碎成高纤脱脂花生核桃粉;
(5)将西瓜洗净,取其果肉,放入-32℃的冷冻箱中冷冻10-12小时,取出后真空干燥,再用超微粉碎机粉碎,得西瓜果粉备用;
(6)将鳕鱼肉洗净,放入蒸汽锅中蒸熟,蒸熟后取出,与4-5倍量的水混合磨浆,所得浆液过胶体磨,得鳕鱼浆液备用;
(7)将鳕鱼浆液置于锅中,烧热后加入麦芽糊精,糊精融化后,将维生素E与鱼肝油、食用乙醇合并,搅拌混匀倒入鳕鱼浆液,再加入食用明胶,加热搅拌,待其乳化后,将乳化液过胶体磨细磨,再经喷雾干燥,得粉末备用;
(8)将柏子仁、酸枣仁、远志、合欢皮、金花葵、猪殃殃用5-10倍量的水加热提取,过滤,得中药提取物,入喷雾干燥器,得中药粉备用;
(9)将高纤脱脂花生核桃粉、西瓜果粉、步骤(7)处理得到的粉末、中药粉与乳双歧杆菌粉、罗伊氏乳杆菌粉、蔗糖合并,混匀后包装即可。
本发明的优点是:本发明的一种鱼蛋白营养核桃粉,在制备过程中将核桃去皮、脱脂使粉质更加细腻,且不易变质,添加乳双歧杆菌粉、罗伊氏乳杆菌粉,使核桃粉富含益生菌粉,能够有助胃肠道有益菌群的建立,促进人体对营养物质的吸收,添加鳕鱼、鱼肝油,将鳕鱼优质蛋白添加到核桃粉中,提供营养,促进钙的吸收,与柏子仁、酸枣仁、远志、合欢皮等提取物搭配,能够有助于大脑发育,安神补脑。
具体实施方式
一种鱼蛋白营养花生核桃粉,由以下重量份(Kg)原料制成:核桃仁300、花生仁90、桂花汁140、西瓜260、鳕鱼80、麦芽糊精60、食用明胶10、维生素E1、鱼肝油8、食用乙醇35、乳双歧杆菌粉6、罗伊氏乳杆菌粉4、柏子仁5、酸枣仁5、远志6、合欢皮6、金花葵3、猪殃殃2、蔗糖10、0.5%NaOH溶液适量、0.1%CaCl溶液适量、水适量。
所述的一种鱼蛋白营养核桃粉的制备方法,包括以下工艺:
(1)将花生仁洗净,置于锅中,倒入桂花汁,加热焖煮50分钟,使桂花香味浸入花生仁,取出花生仁,放入烤箱中烤干,去皮后备用;
(2)将核桃仁置于容器中,倒入0.5%NaOH溶液、0.1%CaCl溶液,充分搅拌,加热至63℃,浸泡5分钟备用;
(3)将步骤(2)中处理的核桃仁置于清洗槽中,用高压水枪喷淋,并在300W的超声波条件下振荡去皮,反复3次,得脱皮核桃仁;

(5)将西瓜洗净,取其果肉,放入℃的冷冻箱中冷冻10小时,取出后真空干燥,再用超微粉碎机粉碎,得西瓜果粉备用;
(6)将鳕鱼肉洗净,放入蒸汽锅中蒸熟,蒸熟后取出,与4倍量的水混合磨浆,所得浆液过胶体磨,得鳕鱼浆液备用;
(7)将鳕鱼浆液置于锅中,烧热后加入麦芽糊精,糊精融化后,将维生素E与鱼肝油、食用乙醇合并,搅拌混匀倒入鳕鱼浆液,再加入食用明胶,加热搅拌,待其乳化后,将乳化液过胶体磨细磨,再经喷雾干燥,得粉末备用;
(8)将柏子仁、酸枣仁、远志、合欢皮、金花葵、猪殃殃用5倍量的水加热提取,过滤,得中药提取物,入喷雾干燥器,得中药粉备用;
(9)将高纤脱脂花生核桃粉、西瓜果粉、步骤(7)处理得到的粉末、中药粉与乳双歧杆菌粉、罗伊氏乳杆菌粉、蔗糖合并,混匀后包装即可。

1.一种鱼蛋白营养花生核桃粉,其特征在于,由以下重量份原料制成:核桃仁300-320、花生仁90-100、桂花汁140-150、西瓜260-270、鳕鱼80-90、麦芽糊精60-70、食用明胶10-15、维生素E1-2、鱼肝油8-10、食用乙醇35-40、乳双歧杆菌粉6-7、罗伊氏乳杆菌粉4-6、柏子仁5-6、酸枣仁5-6、远志6-7、合欢皮6-7、金花葵3-4、猪殃殃2-3、蔗糖10-15、0.5%NaOH溶液适量、0.1%CaCl₂溶液适量、水适量。
2.如权利要求1所述的一种鱼蛋白营养核桃粉的制备方法,其特征在于,包括以下工艺:
(1)将花生仁洗净,置于锅中,倒入桂花汁,加热焖煮50-60分钟,使桂花香味浸入花生仁,取出花生仁,放入烤箱中烤干,去皮后备用;
(2)将核桃仁置于容器中,倒入0.5%NaOH溶液、0.1%CaCl₂溶液,充分搅拌,加热至63-65℃,浸泡5-7分钟备用;
(3)将步骤(2)中处理的核桃仁置于清洗槽中,用高压水枪喷淋,并在300W的超声波条件下振荡去皮,反复3-4次,得脱皮核桃仁;
(4)将脱皮核桃仁烘干,与花生仁混合磨碎,放入液压榨油机中压榨脱油,过滤,得滤饼,即低变性脱脂花生核桃粕,对花生核桃粕进一步破碎,并加水磨浆,用振动筛过滤,滤渣经真空干燥、粉碎成高纤脱脂花生核桃粉;
(5)将西瓜洗净,取其果肉,放入-32℃的冷冻箱中冷冻10-12小时,取出后真空干燥,再用超微粉碎机粉碎,得西瓜果粉备用;
(6)将鳕鱼肉洗净,放入蒸汽锅中蒸熟,蒸熟后取出,与4-5倍量的水混合磨浆,所得浆液过胶体磨,得鳕鱼浆液备用;
(7)将鳕鱼浆液置于锅中,烧热后加入麦芽糊精,糊精融化后,将维生素E与鱼肝油、食用乙醇合并,搅拌混匀倒入鳕鱼浆液,再加入食用明胶,加热搅拌,待其乳化后,将乳化液过胶体磨细磨,再经喷雾干燥,得粉末备用;
(8)将柏子仁、酸枣仁、远志、合欢皮、金花葵、猪殃殃用5-10倍量的水加热提取,过滤,得中药提取物,入喷雾干燥器,得中药粉备用;
(9)将高纤脱脂花生核桃粉、西瓜果粉、步骤(7)处理得到的粉末、中药粉与乳双歧杆菌粉、罗伊氏乳杆菌粉、蔗糖合并,混匀后包装即可。
