Abstract
本发明涉及食品领域,尤其涉及一种新会柑美白酵素的生产方法。包含如下步骤,将包含新鲜新会柑肉的榨汁原料的基础物料装入发酵罐中,装量为总容积的96%,封口,在含氧空间注入空气总体积的0.3‑0.5%的臭氧,活跃在液体表面的好氧菌就会触及到臭氧而被消灭而达到消灭好氧菌的目的;首次发酵、二次发酵,加入药食同源具有美白功能的中药组方进行二次发酵。利用微生态学、仿生学的方法,通过生物嫁接的方式,在体外模拟人体的肠道环境和中药成分在人体内的消化分解过程,对提取的中药有效成分进行生物学转化,将中药的大分子物质,经过微生物转化成为能够被人体肠道直接吸收的小分子成分,使中药成为快速吸收、定量疗效的新型药物。在传统的中药生产中的中药炮制就利用了天然微生物中药发酵以提高中药药效、消除中药毒副作用。

本发明涉及食品领域,尤其涉及一种新会柑美白酵素的生产方法。
背景技术
新会陈皮是国家地理标准产品,是广东新会所产的大红柑的干果皮。由于它具有很高的药用价值,又是传统的香料和调味佳品,所以向来享有盛誉。据说新会陈皮运往北方各地,过了岭南之后,其味更为芳香。曾有华侨携带新会陈皮乘船出国,船抵太平洋,顿时芳香四溢,无法掩盖。新会陈皮散发芳香扑鼻的香味,是其独有品质。经药检部门初步化验结果表明,由于土壤条件、栽培技术、农田气候的差异,新会产的陈皮与外地移植新会柑的陈皮,其形状组织结构虽然相似,但挥发油所含的成分及品味都有很大差异。因此,药用与调味效果就相差很大。新会民间流传以能看见熊(ní)子塔地方为田区,传说以会城梅江塞口围有机栽培方法所产出的新会柑最正宗、品质最好。由于产品具有独特的药业和食用价值,近年来种植面积在不断地增加,而加工方法易各有不同,在市场上的产品有:陈皮茶、陈皮果脯、陈皮饮料、陈皮酒,及以陈皮为原料的各种菜谱和调味用料,这些产品都具有浓郁的地方特色和食用药用价值,本发明在提供一款新的陈皮产品,新会柑全身是宝,其皮:味苦、辛,性温。有理气、健脾、燥湿、化痰功能。用于胸脘胀满、嗳气呕吐、食欲不振、咳嗽痰多。用量5~15g、祛痰、平喘作用:陈皮挥发油(主要成分为柠檬烯)有刺激性祛痰作用。煎剂及乙醇提取液用于兔气管灌流,发现灌注流速稍快,似对气管有扩张作用。川陈皮素在豚鼠离体气管试验和麻醉猫静注时都有平喘作用。其肉柑肉多汁,糖酸比为15:32是甜中带酸的独有风味,每百毫升果汁中含维生素C 34.3毫克,柠檬酸0.76克,可溶性固形物11.13%。,含核黄素0.05毫克,尼克酸0.3毫克,抗坏血酸(维生素C)16毫克,蛋白质0.9克,脂肪0.1克,糖12克,粗纤维0.2克,无机盐0.4克,钙26毫克,磷15毫克,铁0.2毫克,热量221.9焦耳。橘中的胡萝卜素(维生素A原)含量仅次于杏,比其他水果都高。
发明内容
发明的目的:为了提供一种效果更好的新会柑美白酵素的生产方法,具体目的见具体实施部分的多个实质技术效果。
为了达到如上目的,本发明采取如下技术方案:
方案一:
一种新会柑美白酵素的生产方法,其特征在于,包含如下步骤,
将包含新鲜新会柑肉的榨汁原料的基础物料装入发酵罐中,装量为总容积的96%,封口,在含氧空间注入空气总体积的0.3-0.5%的臭氧,活跃在液体表面的好氧菌就会触及到臭氧而被消灭而达到消灭好氧菌的目的;
首次发酵,接入新会柑酵素菌群静置发酵2个月,测定ph值为2.6-3.6时完成第一次发酵;
二次发酵,加入美白中药组方进行二次发酵。
本发明进一步技术方案在于,所述二次发酵中的中药组方为如下重量份的物质,白丁香、白蒺藜、白僵蚕、白芨、白丑、白芷各90份,白附子、白茯苓各15分,去皮去弦的皂角30份,绿豆3份。
本发明进一步技术方案在于,所述二次发酵中的中药组方为如下重量份的物质,白牵牛、白蔹、白细辛、白丁香、白莲蕊、白茯苓、白僵蚕、白芨、白芷、白术、绿豆、甘松各50份,荆芥、独活、羌活、檀香各25份,珍珠0.5 份。
本发明进一步技术方案在于,所述二次发酵中的中药组方为如下重量份的物质,薏仁50份,莲子30份,银耳20份,枸杞20份。
本发明进一步技术方案在于,将中药组方各组分混合水提两次,第一次加8倍重量量的水回流提取2小时,放出提取液;第二次加水8倍重量量回流提取2小时,合并滤液,浓缩成相对密度1:1.5时即得流浸膏;将此按总量的10%加入酵素发酵罐中;混合发酵30天,制成饮料、口服液、片剂、粉剂、胶囊剂或膏剂。
本发明进一步技术方案在于,所述消灭好氧菌的步骤在罐体中完成,所述罐体上包含四个以上的口部,一个口安装安全阀,该安全阀为朝外排气的单向阀;一个口安装有能够检查罐内压力的压力表;一个口安装PH值传感器口;一个口为进料口;在含氧空间注入空气总体积的0.3-0.5%的臭氧即在加入物料的罐体中注入空气总体积的0.3-0.5%的臭氧,厌氧菌是无呼吸发酵,所以发酵期间不会产气,当压力表显示压力为零且不再拨动的时候,好氧菌杀灭完成。
方案二:
新会柑或者新会柑酵素在制备美白酵素或者美白药物中的用途。
采用如上技术方案的本发明,相对于现有技术有如下有益效果:利用微生态学、仿生学的方法,通过生物嫁接的方式,在体外模拟人体的肠道环境和中药成分在人体内的消化分解过程,对提取的中药有效成分进行生物学转化,将中药的大分子物质,经过微生物转化成为能够被人体肠道直接吸收的小分子成分,使中药成为快速吸收、定量疗效的新型药物。在传统的中药生产中的中药炮制就利用了天然微生物中药发酵以提高中药药效、消除中药毒副作用。

具体实施方式
下面本发明的实施例进行说明,实施例不构成对本发明的限制:
方案一:
一种新会柑美白酵素的生产方法,其特征在于,包含如下步骤,
将包含新鲜新会柑肉的榨汁原料的基础物料装入发酵罐中,装量为总容积的96%,封口,在含氧空间注入空气总体积的0.3-0.5%的臭氧,活跃在液体表面的好氧菌就会触及到臭氧而被消灭而达到消灭好氧菌的目的;
首次发酵,接入新会柑酵素菌群静置发酵2个月,测定ph值为2.6-3.6时完成第一次发酵;
二次发酵,加入美白中药组方进行二次发酵。
1、生产前准备,准备干净塑料袋筐做到一筐一袋,榨汁机清洗消毒,安装水泵并消毒,清洗消毒发酵罐及运输车辆并消毒。
2、按食用要求回收新会柑肉,(剥皮后的柑肉不能超过4小时的新鲜无污染的果肉,)并及时组织榨汁装罐,(当天必须按要求装到位)果汁量占发酵罐总容积的96%。
3、灭菌,装罐配糖,24小时后,要及时消除好氧菌,在进料口输入臭氧数量为,有氧体积的0.3%,封闭排气口,12-24小时,打开排气阀,排出臭氧。
4、接种,按规定量将菌种接入罐中,用不锈钢接料管将菌种接入发酵罐的中部,封闭进料口,静置发酵60天,每一个月在取样口取样测试:菌落总数、PH值、糖度、色泽、酸溶蛋白,氨基酸,酶活力等等指标。
5、当发酵液PH值达到3.6时加入处方一流浸膏,再发酵30天。
取新鲜新会柑肉,榨汁,装入发酵罐中,装量为总容积的96%,配糖,测定新会柑汁糖度为6-9%添加蔗糖7-5%,配制成总糖度为11-13%,封口,臭氧输入 0.3%,(以料液面上部空间计算)灭去有氧菌群,接入新会柑酵素菌群静置发酵2个月,测定ph值为2.6-3.6时加入各处方的提取流浸膏10%,再发酵1个月即得。
处方一:八白散
配方:白丁香、白蒺藜、白僵蚕、白芨、白丑、白芷各90克,白附子、白茯苓各15克,皂角(去皮、弦)三个,绿豆少许。中药各组分混合水提2次第一次加8倍重量量的水回流提取2小时。放出提取液,第二次药渣加水8倍重量量回流提取2小时,合并滤液,浓缩成相对密度1:1.5时即得流浸膏,将此按总量的10%加入酵素发酵罐中总量为容积的96%。混合发酵30天,可按照现有工艺需要制成饮料、口服液、片剂、粉剂、胶囊剂或膏剂。8倍重量为被提取的各组分的初始重量。
处方二、玉容散
配方:白牵牛、白蔹、白细辛、白丁香、白莲蕊、白茯苓、白僵蚕、白芨、白芷、白术、绿豆、甘松各50克,荆芥、独活、羌活、檀香各25克,珍珠0.5 克。中药各组分混合水提2次第一次加8倍重量量的水回流提取2小时。放出提取液,第二次药渣加水8倍重量量回流提取2小时,合并滤液,浓缩成相对密度1:1.5时即得流浸膏,将此按总量的10%加入酵素发酵罐中总量为容积的96%。混合发酵30天,可按照现有工艺需要制成饮料、口服液、片剂、粉剂、胶囊剂或膏剂。
处方三、女人四物羹
配方:薏仁50克,莲子30克,银耳20克(4朵左右),枸杞20克,冰糖适量。中药各组分混合水提2次第一次加8倍重量量的水回流提取2小时。放出提取液,第二次药渣加水8倍重量量回流提取2小时,合并滤液,浓缩成相对密度1:1.5时即得流浸膏,将此按总量的10%加入酵素发酵罐中总量为容积的96%。混合发酵30天,可按照现有工艺需要制成饮料、口服液、片剂、粉剂、胶囊剂或膏剂。
原理:
1、研究发现酵素新会柑酵素中含有大量的干酪乳杆菌,和复合酶、氨基酸及小分子肽等成分,具有强烈的分解作用,当发酵液的PH值达到3.6时将中药提取浸膏加入10-20%使发酵液的PH值稀释至5左右,中药浸膏中的糖分、淀粉等被微生物分解,将大分子变成小分子,同时产生了许多代谢物,使药物的因子更加容易被人体吸收,酵素中的营养物又能提高人体的免疫力,消除了中药成分中的不良气味,使良药不再口苦。中药不光光是治病,同时还能养生。

方案二:
新会柑或者新会柑酵素在制备美白酵素或者美白药物中的用途。
采用以上技术方案,使得中药不仅仅没有苦味,还形成了独特的风味,营养价值更高。作为简易说明:选育条件是在酸度最高环境中还能生存的菌,原因是,一般细菌在酸度为3.6一下是无法生存的,选育这种菌种的目的,一是可以保持产品的稳定性,二是可以抑制其它细菌的生长。同时可以达到我们要的酶的总量最高值。
作为优选:
所述消灭好氧菌的步骤在罐体中完成,所述罐体上包含四个以上的口部,一个口安装安全阀,该安全阀为朝外排气的单向阀;一个口安装有能够检查罐内压力的压力表;一个口安装PH值传感器口;一个口为进料口;在含氧空间注入空气总体积的0.3-0.5%的臭氧即在加入物料的罐体中注入空气总体积的0.3-0.5%的臭氧,厌氧菌是无呼吸发酵,所以发酵期间不会产气,当压力表显示压力为零且不再拨动的时候,好氧菌杀灭完成。所述PH值传感器接与中控系统,H值传感器能够记录发酵的酸度变化。所述罐体底部包含排污口。所述罐体距离底平面10-30厘米的部位包含出料口。
发酵罐的材质:(1)不锈钢304,316,规格的材质。(2)玻璃钢耐酸碱符合食品发
工程酵材质标准的材质,不会对发酵产品带来任何污染的材质。
1、功能组成:管体要求,功能设置:上部:有一大三小的口:大口用来发酵后期补料用,前期要封闭保持绝对密封状态,小口装排气阀,此阀的功能是只能排气,不能进气,所以要单项阀,只出不进。小口安装压力表,随时检查罐内压力,压力检查的理由是可以直观的表明,好氧菌的杀灭情况,(厌氧菌是无呼吸发酵,所以发酵期间不会产气,好氧菌反之小口是PH值传感器口,PH值传感器接与电脑链接,可以记录发酵的酸度变化,该口还可以用来在前后期灭菌用。因此,发酵罐的顶部,最少要三个以上小口。中部有一个大口(人孔)可以用来安全检查用的,平时要封闭严密,底部侧底平口是排污口。用来排渣和清洗废水用。稍上部的口是,出料口。原因是酵素发酵完成,发酵酵罐上下部分都有发酵残渣,而中部是澄清液体,因此出料口放在距离底平面10-30厘米的部位比较好用。

Claims (7)
1.一种新会柑美白酵素的生产方法,其特征在于,包含如下步骤,
将包含新鲜新会柑肉的榨汁原料的基础物料装入发酵罐中,装量为总容积的96%,封口,在含氧空间注入空气总体积的0.3-0.5%的臭氧,活跃在液体表面的好氧菌就会触及到臭氧而被消灭而达到消灭好氧菌的目的;
首次发酵,接入新会柑酵素菌群静置发酵2个月,测定ph值为2.6-3.6时完成第一次发酵;
二次发酵,加入美白中药组方进行二次发酵。
2.如权利要求1所述的一种新会柑美白酵素的生产方法,其特征在于,所述二次发酵中的中药组方为如下重量份的物质,白丁香、白蒺藜、白僵蚕、白芨、白丑、白芷各90份,白附子、白茯苓各15分,去皮去弦的皂角30份,绿豆3份。
3.如权利要求1所述的一种新会柑美白酵素的生产方法,其特征在于,所述二次发酵中的中药组方为如下重量份的物质,白牵牛、白蔹、白细辛、白丁香、白莲蕊、白茯苓、白僵蚕、白芨、白芷、白术、绿豆、甘松各50份,荆芥、独活、羌活、檀香各25份,珍珠0.5 份。
4.如权利要求1所述的一种新会柑美白酵素的生产方法,其特征在于,所述二次发酵中的中药组方为如下重量份的物质,薏仁50份,莲子30份,银耳20份,枸杞20份。
5.如权利要求2-4任意所述的一种新会柑美白酵素的生产方法,其特征在于,将中药组方各组分混合水提两次,第一次加8倍重量量的水回流提取2小时,放出提取液;第二次加水8倍重量量回流提取2小时,合并滤液,浓缩成相对密度1:1.5时即得流浸膏;将此按总量的10%加入酵素发酵罐中;混合发酵30天,制成饮料、口服液、片剂、粉剂、胶囊剂或膏剂。
6.如权利要求1所述的一种新会柑美白酵素的生产方法,其特征在于,所述消灭好氧菌的步骤在罐体中完成,所述罐体上包含四个以上的口部,一个口安装安全阀,该安全阀为朝外排气的单向阀;一个口安装有能够检查罐内压力的压力表;一个口安装PH值传感器口;一个口为进料口;在含氧空间注入空气总体积的0.3-0.5%的臭氧即在加入物料的罐体中注入空气总体积的0.3-0.5%的臭氧,厌氧菌是无呼吸发酵,所以发酵期间不会产气,当压力表显示压力为零且不再拨动的时候,好氧菌杀灭完成。
7.新会柑或者新会柑酵素在制备美白酵素或者美白药物中的用途。
