发明公开了一种滋阴补肾撒汤的制作方法,它的步骤如下:(1)配制撒汤的原料:大猪骨头、老母鸡、糯米、白芝麻、葱、生姜、八角、肉桂、白芷、丁香、草果、桂皮、紫苏、肉蔻、鸡精、味精、盐、麻油、胡椒粉、小麦粉;(2)将大猪骨头烧煮;(3)将老母鸡、葱、生姜、八角、肉桂、白芷、丁香、草果、桂皮、紫苏、肉蔻,然后大火烧烧煮;(4)小火焖炖9个小时后,停火,把小麦粉缓慢倒入锅中,把鸡精、味精、盐添加到锅中,烧至沸腾,在碗中放入鸡蛋,将汤缓慢冲入碗中,再放入麻油,胡椒粉,洒在汤表面,本发明通过把各成分有效地搭配在一起,配合后来的大猪骨头表层刮下来得成分,从根本上对人身体进行调理,尤善滋阴补肾、填精益髓功能。

背景技术
清朝乾隆年间,乾隆皇帝微服游访江南路过安徽蒙城,走得又饥又渴,傍晚,到一家客店投宿,店主是位老妈妈,还有她的独生女儿。老妈妈见来了几位贵客,虽然风尘满面,穿戴却十分整齐,观那主人身材魁伟,气宇轩昂,手摇一把撒金折扇,更显得风流潇洒。店家婆笑脸相迎,一面端茶,一面吩咐女儿杀了两只肥老母鸡,用沙锅煨炖。时值初夏季节,乾隆和侍从坐在院中,一边饮茶,一边闲聊,等待用膳,谁知直等到日落月上柳梢,还不见店家送饭,乾隆饿得饥肠漉漉,命侍从前去催促,店家回答说:“鸡汤没煨好,请客官再稍候。”乾隆又等了半个时辰,忽闻一阵扑鼻的香味从厨房飘来。姑娘盛了几碗汤,用托盘端置桌上。乾隆连吃三大碗,赞道:“美哉!好汤。”乾隆膳后问侍从道:“这汤叫啥汤?”侍从心想:自古君无戏言,皇上说是啥汤就是“啥汤”。于是便顺口答道:“啥汤。”乾隆又问“啥汤”的“啥”是哪个字?侍从本是为迎合皇上的心意,哪里考究过“啥汤”的“啥”是那个字呢,狡黠的侍从急中生智,想起皇上在月下久等汤的情景,于是便编造了个生字:月光为伴,一边为“月”字,另一边皇上为天子,“天”字为上头,久等的“久”字放在下边,并取其谐音字“韭”代之,这样便造出一个“啥”谐音的“sa“’字。乾隆看看也像个字样,但觉得眼生,记不清什么时候在康熙皇爷字典里似曾见过。于是命侍从取出文房四宝,提笔写“sa汤”二字,下边题了“乾隆御书”留给了店家。
店家婆不识字,把乾隆题字拿给当地一位有学问的人看,那人一看,大吃一惊,说是当今乾隆皇帝的亲笔题字。事后店家请木匠精心制作了一块招牌,将乾隆题字刻在上面。过往行人见此招牌,都来品尝乾隆皇帝品尝过的“撒”汤。从此,小店生意十分兴隆。其他店家见此,也模仿乾隆御书“撒汤”字样做出金字招牌,开起了撒汤店,久而久之,蒙城的撒汤便远近闻名。
发明内容
本发明的目的是提供一种滋阴补肾撒汤的制作方法。
本发明通过以下技术方案实现:
一种滋阴补肾撒汤的制作方法,它的步骤如下:
(1)按以下重量份数配制撒汤的原料:大猪骨头20、老母鸡10、糯米3、白芝麻0.6、葱0.3、生姜 0.8、八角0.5、肉桂0.2、白芷0.3、丁香0.2、草果0.1、桂皮0.5、紫苏0.3、肉蔻0.4、鸡精0.01、味精0.02、盐0.5、麻油0.05、胡椒粉0.03、小麦粉1;
(2)将大猪骨头用水泡上10-12个小时,然后用温水洗净,把大猪骨头放入锅内烧煮,用水量为大猪骨头重量的10倍,等到水沸腾15分钟后,把水表面的血沫打净;
(3)将老母鸡放在2-3℃无菌环境下放置20分钟后,与糯米、白芝麻一起放入到锅中,盖盖子,烧煮5分钟后,添加葱、生姜、八角、肉桂、白芷、丁香、草果、桂皮、紫苏、肉蔻,然后大火烧2个小时中间停火15分钟,然后继续大火2个小时;
(4)将大火转小火焖炖9个小时后,停火,将大猪骨头、老母鸡、八角、肉桂、白芷、丁香、草果、桂皮、紫苏、肉蔻取出,把老母鸡撕成块,放入锅中,将大猪骨头表面刮下,放入锅中,等汤烧煮至沸腾后,把小麦粉缓慢倒入锅中,并不停的搅拌,使其汤粘稠,最后把鸡精、味精、盐添加到锅中,烧至沸腾,在碗中放入鸡蛋,搅拌均匀后,将汤缓慢冲入碗中,使鸡蛋浮起,再放入麻油,胡椒粉,洒在汤表面。
进一步地,所述步骤(3)中添加的白芝麻经过白酒浸泡45分钟。
进一步地,所述步骤(4)中大猪骨头表面刮的厚度为0.25mm。
本发明的有益效果是:
本发明采用大猪骨头和老母鸡佐以各种食用中药材精心熬制,味道鲜美,香而不腻,色味俱全,能够具有健脑健身,护眼护心,防癌抗癌之功效,实乃养生之美食,滋补之佳膳。本发明通过把葱、经过白酒浸泡的白芝麻、生姜、八角、肉桂、白芷、丁香、草果、桂皮、紫苏、肉蔻等成分有效地搭配在一起,配合后来的大猪骨头表层刮下来得成分,从根本上对人身体进行调理,能增强人体免疫功能,滋养人体五脏六腑,尤善滋阴补肾、填精益髓功能,还具有安神的功效;食用本发明撒汤,能综合调理人机体内环境、提高人体抗病能力、预防癌症的发生;适用于广大人群,尤其对肾阴虚症型骨质增生症有头晕、耳鸣、腰酸背痛、肢体麻木影响活动的人群效果更佳;本发明工艺先进,食用方便,价格低廉。

(2)将大猪骨头用水泡上10-12个小时,然后用温水洗净,把大猪骨头放入锅内烧煮,用水量为大猪骨头重量的10倍,等到水沸腾15分钟后,把水表面的血沫打净;
