本发明提供了一种白首乌发酵饮料,由鲜白首乌果实、白首乌根及金银花发酵菌液等发酵而成,本发明制备成的饮料具有良好的保健功能,能治疗咽炎、胃炎、腹胀、胃溃疡、结肠炎、脂肪肝、糖尿病等,另可肿瘤放化疗患者有提高免疫力,减低放化疗副作用。

技术领域
本发明属于具有保健功能的发酵型饮料技术领域,具体涉及由白首乌果实及根等原料发酵制备而成的发酵饮料。
技术背景
唐元和七年李翱作《何首乌录》,始有何首乌“雌、雄”同用的记载,宋《开宝本草》中更明确指出何首乌分“赤、白两种,赤者雄,白者雌”,“春夏用其根,雌雄并用”。明朝李时珍《本草纲目》中记载的首乌内容中,明确写道:“白者入气分,赤者入血分”。说明对于首乌药材的临床应用研究已经颇为深入了。
根据本草学考证及商品原植物调查,何首乌与赤首乌一致,确系蓼科植物何首乌PolygonummultiflorumThunb.的块根,而首乌中所谓“白者”或“雌者”,即萝藦科植物白首乌CynanchumbungeiD.的块根。
现代研究证明:白首乌块根中含有蛋白质、碳水化合物、膳食纤维、磷脂和矿物元素,以及维生素B等一般营养物质,还含有苯乙酮、二苯酮、羽扇豆醇乙酸酯、白桦脂酸、琥珀酸等有效成分,具有益肝养血、固精补肾、强筋健骨、乌须黑发之功效,而且《中药大辞典》中记载认为白首乌滋补作用优于中药何首乌。
经过文献资料核查证明,目前对于白首乌的研究全部集中在其根的研究,而未见对于其果实的研究。研究发现白首乌结果多者,往往块根生长不很大,可能是由于营养供应果实而导致根中营养积累减少的现象。因此,种植经验告诉我们想要采收白首乌块根,应该在种植过程中进行摘花或摘果,以利于块根生长。每年的7月份是白首乌果实的幼嫩期,这些果实一般都是要白白扔掉的,是一种资源浪费。
白首乌作为萝藦科植物的一种,实验证明其根无任何毒性,是一种天然的药食两用品,其果实“棒极果”含有丰富的营养物质,如:蛋白质、糖类、脂肪、纤维素、维生素、矿物质等,同时还含有三萜、甾醇、有机酸、苯乙酮类等有效成分。幼嫩时采摘,可以生吃、做汤、醋渍、蘸酱吃、拌沙拉、制泡菜、制罐头,也可以炒肉,炒蛋等,也可摊饼吃,吃法多样,制作简单,营养保健。其主要成分参见下表1:

发明内容
为了解决以上技术问题,本发明提供了一种白首乌发酵饮料。
本发明的技术方案如下:
一种白首乌发酵饮料,由以下重量份的原料制备而成:
鲜白首乌果实3.0~15.0;
白首乌根片0.5~5.0;
新橙皮苷二氢查尔酮0.001~0.005;
大枣0.6-1.0
调味剂5~15;
鲜柠檬片1-2;
鲜菠萝片2-3;
金银花菌发酵液65.0~90.0。
所述金银花菌发酵液为专利ZL201010579919.2获得所需发酵液,过滤菌丝后的液体即为金银花菌发酵液。
所述调味剂为白糖。
制备方法如下:
白首乌根和大枣,加入10倍、8倍量水煎煮两次,每次20分钟,放凉滤出,合并滤液,置于容器中,煮后的大枣挑出,也置于容器中;再将干净的鲜白首乌果实切成片或段,放入容器中,同时,加入削皮后的菠萝片适量,柠檬片放入,新橙皮苷二氢查尔酮、白糖,最后倒入金银花菌发酵液,再加入50-150重量份水;再用干净的食品级塑料袋扎紧口,室温放置2天后,打开塑料布封口,放气并振摇容器,密封后隔2天再放气,再扎口后室温放置三个月(利用其中的金银花菌继续发酵,发酵过程中继续产生纤维素酶、果胶酶、蛋白酶等多种酶类,分解白首乌果实中的纤维素、果胶和蛋白等成分,使其变成利于人体的营养成分或功能成分),三个月后,液体颜色呈棕黄色,滤出液体即得本发明饮料。
本发明采用“金银花菌深层发酵生产工艺”(ZL201010579919.2)的基础上,采用其发酵菌液继续对新鲜白首乌果实(棒极果),白首乌根片等进行发酵,是在创新基础上的又一次创新,是对白首乌深度开发的有益探索,所得的该创新产品口感好、且具有良好的保健功能,能治疗咽炎、胃炎、腹胀、胃溃疡、结肠炎、脂肪肝、糖尿病等,另对肿瘤放化疗患者有提高免疫力,减低放化疗副作用。
本发明饮料色泽黄棕至浅棕红色,澄清透明,酸甜爽口,并微有醇酒香气,风味良好,可居家备用,也可灌装后外出携带饮用,招待客人等。无防腐剂和不良添加剂,对人体有益无害。
本发明的保健饮料可以家中自制,也可大规模工业化生产,效益可观、前景良好,是一款深受大众欢迎的安全绿色饮料。
试用效果观察:本专利饮料养胃护肝的疗效明显同时对咽炎和肿瘤放化疗后副作用有显著的治疗作用,效果优于单独服用金芝发酵制品或单独服用白首乌。

1、例数是选择40岁以上至70岁的人数,男女合计;

实施例1
按以下重量份称取原料:鲜白首乌果实3.0;白首乌根片0.5;新橙皮苷二氢查尔酮0.001;
大枣0.6;白糖5;鲜柠檬片1;鲜菠萝片2;金银花菌发酵液65.0。取白首乌根和大枣,加入10倍、8倍量水煎煮两次,每次20分钟,放凉滤出,合并滤液,置于容器中,煮后的大枣挑出,也置于容器中;再将干净的鲜白首乌果实切成片或段,放入容器中,同时,加入削皮后的菠萝片适量,柠檬片放入,新橙皮苷二氢查尔酮、白糖,最后倒入金银花菌发酵液,再加入50-150重量份水;再用干净的食品级塑料袋扎紧口,室温放置2天后,打开塑料布封口,放气并振摇容器,密封后隔2天再放气,再扎口后室温放置三个月,滤出液体即得本发明。

取白首乌根片和大枣,加入10倍、8倍量水煎煮两次,每次20分钟,放凉滤出,合并滤液,置于容器中,煮后的大枣挑出,也置于容器中;再将干净的鲜白首乌果实切成片或段,放入容器中,同时,加入削皮后的菠萝片,柠檬片,新橙皮苷二氢查尔酮、白糖,最后倒入金银花菌发酵液,再加入50-150重量份水;用干净的食品级塑料袋扎紧口,室温放置2天后,打开塑料布封口,放气并振摇容器,密封后隔2天再放气,再扎口后室温放置三个月,滤出液体即得。
