技术领域
本发明涉及功能饮料领域,尤其涉及一种保健养生酒精饮料的制备方法。
背景技术
随着人们生活水平的提高,具有保健作用的功能饮料受到国内消费者的认可。目前据统计,功能饮料每年都以较快的速度平稳增长。将具有多重功效的植物玛咖,应用至功能饮料中,是一项值得研究的技术,目前国内外报导的还比较少。
因为在现有的养生保健白酒生产过程中,还存在一些技术难点,主要有饮料的沉淀问题和功能性成分指标控制问题。
对于沉淀问题,目前常常采用的方法主要有物理方法、化学方法和酶方法。物理方法是采用超滤技术去除容易形成沉淀的果胶、蛋白等大分子物质;或通过低温处理方法促进沉淀形成,然后离心、过滤除去。化学方法是通过调节酸碱度、加入外源化学物处理去除。酶方法通过加入果胶酶、单宁酶等将果胶、单宁等分解,防止形成沉淀。但是,单一的物理法、化学法或酶法都很难将沉淀彻底除去,影响功能饮料的品质。
对于功能性成分指标控制问题,主要有不当的操作工艺,会极大的损失功能饮料的药用价值,使功能饮料失去“保健”的功能。
发明内容
本发明的目的在于提供一种含有中草药成分,具有保肝养生功效的酒精饮料及其制备方法。
本发明所要解决的技术问题采用以下技术方案来实现:
一种保健养生酒精饮料的制备方法,其特征在于:制备方法如下:
1)将玛咖5份、半夏0.5份、补血菜2份、干西兰花0.5份、茅根0.5份、炮姜0.5份、茭白0.5份、虫草花0.5份、淫羊藿0.5份、香蕉皮0.3份、锁阳0.5份、酒药花0.5份、紫苏0.2份、花椒叶0.2份、金银花0.5份、牛筋0.2份、丹参0.2份、当归0.2份,粉碎至85目,混匀得到药粉;
2)将步骤1)中的药粉与水按质量比1:0.2的比例混合,混合方式采用喷雾方式将水喷洒在药粉上,然后将药粉在4-6℃的环境下冷藏3-8小时,得到润料,然后对润料间断微波处理,间断处理次数为4~10次,间断时间为40秒,且最终温度不超过100℃;
3)将步骤2)中微波处理后的润料加入到纯净水中,并加热到65℃,再加入木聚糖酶搅拌均匀并保持温度在40~60℃浸提2~4h,得到提取液;其中润料、木聚糖酶与水的添加比例为每1kg纯净水中加入润料0.6-0.7kg,木聚糖酶0.03kg;
4)将提取液温度升到70~80℃,滤清后得提取药液,将提取药液与啤酒100份进行混合调配,让其自然缔合;
5)然后将酒液转入储罐,入库贮存3个月,再将贮存后的酒液过滤至清澈透明,使用纯化水调和浓度后,即可包装出厂。
本发明公开的制备方法,很好的解决了现有技术中酒精饮料生产所存在的技术问题。生产工艺克服了单一的物理法、化学法或酶法都去除沉淀不彻底的技术难题,将现代食品新技术和传统方法相结合,将微波和酶提取技术应用到酒精饮料产品生产中,有效消除了沉淀,保证了产品的质量。
本发明的有益效果是:本发明是对传统工艺进行了改进,通过特殊的药物配制,该酒精饮料集营养、保健功能于一体,长期饮用可以增强人体免疫力,达到保健功效。使消费者既能享受饮用酒精饮料的乐趣,又能得到身体健康,感受天然绿色滋补。

实施例1
一种保健养生酒精饮料,由以下重量份的组分制成:啤酒100份、玛咖5份、半夏0.5份、补血菜2份、干西兰花0.5份、茅根0.5份、炮姜0.5份、茭白0.5份、虫草花0.5份、淫羊藿0.5份、香蕉皮0.3份、锁阳0.5份、酒药花0.5份、紫苏0.2份、花椒叶0.2份、金银花0.5份、牛筋0.2份、丹参0.2份、当归0.2份。
上述酒精饮料的制备方法如下:
1)将玛咖、半夏、补血菜、西兰花、茅根、炮姜、茭白、虫草花、紫苏、花椒叶、金银花、香蕉皮、淫羊藿、锁阳、牛筋、丹参、酒药花及当归,粉碎至85目,混匀得到药粉;
2)将步骤1)中的药粉与水按质量比1:0.2的比例混合,混合方式采用喷雾方式将水喷洒在药粉上,然后将药粉在4-6℃的环境下冷藏3-8小时,得到润料,然后对润料间断微波处理,间断处理次数为4~10次,间断时间为40秒,且最终温度不超过100℃;
3)将步骤2)中微波处理后的润料加入到纯净水中,并加热到65℃,再加入木聚糖酶搅拌均匀并保持温度在40~60℃浸提2~4h,得到提取液;其中润料、木聚糖酶与水的添加比例为每1kg纯净水中加入润料0.6-0.7kg,木聚糖酶0.03kg;
4)将提取液温度升到70~80℃,滤清后得提取药液,将提取药液与啤酒进行混合调配,让其自然缔合;
5)然后将酒液转入储罐,入库贮存3个月,再将贮存后的酒液过滤至清澈透明,使用纯化水调和浓度,即可包装出厂。
本发明公开的制备方法,很好的解决了现有技术中酒精饮料生产所存在的技术问题。生产工艺克服了单一的物理法、化学法或酶法都去除沉淀不彻底的技术难题,将现代食品新技术和传统方法相结合,将微波和酶提取技术应用到酒精饮料产品生产中,有效消除了沉淀,保证了产品的质量。
调制的酒精饮料清澈,无沉淀,无悬浮物,具有己酸乙酯为主体的复合香气,香味协调,入口纯正,纯净爽口。
由于本发明在啤酒中兑入了由中草药制备的提取药液,为保证其引用的安全性,本发明人进行了大量的动物急性毒性试验和动物长期毒性试验,对该酒投入市场销售环节提供了科学而客观的依据。其试验方法和试验结果分别如下:
1.为了验证本发明提取药液的安全性,申请人进行了动物急性毒性试验:
药物:由本发明的组方提取的提取药液,在冰箱内保存备用,由安徽中医学院第一附属医院提供。
试验动物:小白鼠,体重平均在40g左右,雌雄随机选择,由安徽医科大学提供。
方法和结果:取小白鼠50只,分成5组,每组10只,饥饿15小时左右,直接将本申请提取药液灌喂小白鼠,按每只每次10ml灌喂药物,第1、2、3、4、5组分别在24小时内灌喂药物1、2、3、4、5次,观察5天,小白鼠活动正常,无毒性反应,无死亡。表明本申请提取药液无急性毒性,临床用药剂量安全。
2.为了验证本发明提取药液的安全性,申请人进行了动物长期毒性试验:
试验动物:大白鼠,体重平均在130g左右,雌雄随机选择,由安徽医科大学提供。
方法和结果:取大白鼠50只,分成5组,每组10只,其中第1、2、3、4组作为给药组,直接将本申请提取药液灌喂小白鼠,每组分别灌喂5ml、15ml、20ml、25ml,第五组正常喂食作为对照组,每日一次,连续灌喂90天,测体重,于最后一次给药后24小时断头处死,测血、尿常规、肝功能、肾功能,取心、肾等内脏,观察组织形态的变化,观察剂量的作用,观察饮食、活动的变化,实验证明给药组与对照组比较无显著变化,可见按公斤体重计算相对于临床50-200倍的剂量均无毒性反应,是一种安全的提取药液。
