技术领域
本发明属于营养食品加工技术领域,尤其是指一种养发乌发健康食品及其生产方法。
背景技术
头发,是指生长在头部的毛发,头发不是器官,不含神经、血管,但含有细胞,头发除了使人增加美感之外,主要作用是保护头脑。浓密蓬松的头发具有弹性,可以抵挡较轻的碰撞,寒冷时保暖、炎热时帮助头部汗液蒸发。毛发是皮肤的附属器,它同身体其它各部位的器官、组织一样,需要充足的营养。人种不同,发色也不同,白种人发色金黄、棕种人发色红黑、黄种人发色褐黑色或黑色。乌黑、浓密而具有光泽的美发一直是黑发人种群的美的追求;而早生的白发则给人以疲惫、衰老的印象。有关研究表明白发产生的主要原因是由于头发髓质和皮质里的黑色素颗粒减少或被空气填空。正常情况下,毛乳头内有丰富的血管,为毛乳头、毛球部提供充足的营养,黑色素颗粒顺利合成,头发呈黑色。当黑色素颗粒在毛乳头、毛球部的形成发生障碍,或者形成的黑色素但因某种原因,不能顺利运送到毛发中去,使毛发髓质、皮质部分的黑色素颗粒减少、消失,则头发变成白发。
白发指原本不是白色的头发全部或部分变白,有先天性白发和后天性白发。先天性白发往往有家族史,除白发增多外,不影响身体健康。后天白发则与营养障碍、精神状态等因素有关,例如长期精神紧张压抑;生活环境恶劣阳光不足;饮食中长期缺乏铜、钴、铁等无机盐影响黑色素的合成;长期缺乏蛋白质、植物油、维生素B1、维生素B2、维生素B6等,都将会导致头发由黑变白。中医认为头发与肝肾有密切关系,肾藏精肝主血,其华在发,肝肾虚则精血不足,毛囊得不到充足的营养,肝肾功能衰弱,导致身体代谢功能减慢,导致合成黑色素能力减弱,出现白发;或者毛囊萎缩、坏死,造成脱发。如果肝肾强健,益血养颜、促进新陈代谢,上荣于头则毛发浓密乌黑。
发明内容
本发明提供一种无添加剂含木耳养发乌发健康食品及其生产方法,本产品以黑木耳、黑豆、桑葚、黑芝麻、黑枸杞、海参、黑米、芡实为主要原料,不添加任何药物、不添加任何化学添加剂,即全部使用食品级原料,采用高压超临界流体破壁与干制、紫外微波超声波协同活化分离等工艺精心加工而成;产品不含香精、色素、防腐剂,具有调养气血、滋补肝肾、养发乌发功效,产品适合各阶层、各年龄段缓解或预防后天黑发枯燥变白症状。产品生产过程无污染,无废渣、废汽及有害物质产生,实现绿色生产,产品风味优良,安全无毒。
本发明采取的技术方案是,是由下列重量份的原料和步骤得到的:
黑木耳20~35份、黑豆15~25份、桑葚干15~20份、黑芝麻10~15份、黑枸杞5~9份、黑糙米3~7份、淡干海参1~3份、芡实1~3份;
(一)桑葚干、黑芝麻、黑枸杞、淡干海参超临界CO2破壁与干制;
淡干海参泡发后破碎成粒度60~100目的浆料,然后与洁净无杂质的桑葚干、黑芝麻、黑枸杞混合均匀,至于超临界反应釜中,于60~70℃、压力50~80MPa、时间30~60min的条件下利用高压超临界CO2对物料进行穿透破壁,同时脱除物料中液相成分,得到液相成分含量3~6%的干制样,无尘粉碎得到粒度为120~200目精细粉,备用;脱除的液相成分密闭绝氧冷藏,备用;
(二)黑豆、黑糙米、芡实活化分离及粉碎
洁净无杂质的黑豆、黑糙米、芡实加入其质量3~6倍的pH4.5~5.5的纯净水,混合均匀,置于紫外微波超声波一体机中于微波温度45~60℃、时间10~20min、超声波功率100W、紫外功率300W条件下进行活化分离处理,使植物细胞壁内的有效成分分离出来,然后粉碎至粒度20~60目,85~110℃高压螺旋挤出、并切片处理,于45~60℃低温干燥至含水量3~6%的干制样,精细粉碎至120~200目精细粉,备用;
(三)黑木耳香化熟化处理
洁净无杂质的黑木耳置于远红外烤箱中于120~150℃的条件下烘烤15~40min,精细粉碎至120~200目精细粉,备用;
(四)混合、制片
将步骤(一)至(三)获得的所有产物洁净条件下混合均匀,振荡造粒,高压制片,得到单片粒重1~3g的片剂,辐射杀菌后泡罩包装,即为含木耳养发乌发健康食品。
本发明产品不含药物及化学添加剂,全部由食物原料组成,具有食品级产品的安全性,长期食用无毒副作用,不产生药物依赖。长期食用具有调养气血、滋补肝肾、养发乌发功效,可以缓解或预防后天黑发枯燥变白症状。产品生产过程无污染,无废渣、废汽及有害物质产生,实现绿色生产,产品风味优良,安全无毒。
本发明所用原料均为具有调养气血、滋补肝肾作用的食品级原料,具体如下:
黑木耳:又名木耳、木蛾、树鸡、木机、云耳等,味甘、性平,富含蛋白质、脂肪、多糖和钙、磷、铁等元素以及胡萝卜素、维生素B1、维生素B2、烟酸、磷脂等营养素,被誉为“菌中之冠”。100克干黑木耳中水分10.9克、蛋白质10.6克、脂肪0.2克、碳水化合物65.5克、热量306千卡、粗纤维7.0 克、钙357毫克、磷201毫克、铁185毫克、胡萝卜素0.03毫克、硫胺素0.15毫克、核黄素0.55毫克、烟碱酸2.7毫克。中国传统医学认为黑木耳具有益气强身、活血养血、防治缺铁性贫血、驻颜、疏通肠胃、润滑肠道、缓解高血压等功效。主治气虚血亏、肺虚久咳、高血压、跌打伤痛等症。
黑豆:又称乌豆、黑大豆,味甘、性微寒,入脾、肾经。每100克黑豆含水分9.9克、蛋白质36克、碳水化合物33.6克、脂肪15.9克、膳食纤维10.2克、胡萝卜素30毫克、维生素E17.36毫克、维生素A5 毫克、尼克酸2毫克、核黄素0.33 毫克、硫胺素0.2徽克、锌4.8毫克、钙224毫克、硒6.79微克、磷500毫克、铜156毫克、钾1377毫克、锰2.83毫克、钠3毫克、铁7毫克、镁243毫克以及黑豆色素、黑豆多糖、花青素和异黄酮等多种生物活性物质。中医认为具有补肾益阴、健脾利湿、明目乌须发、祛风防热、活血解毒等功效。主治肝肾阴虚亏损、消渴、头晕目眩、视物昏暗、须发早白、黄疽浮肿等症。
黑枸杞:拉丁文名Lycium ruthenicum Murr. 茄科、枸杞属多棘刺灌木,多分枝;分枝斜升或横卧于地面,白色或灰白色,坚硬,常成之字形曲折,有不规则的纵条纹,小枝顶端渐尖成棘刺状,节间短缩,浆果球形,皮薄,皮熟后紫黑色,果实里面含丰富的紫红色素,极易溶于水,属天然的水溶性花色甙黄酮类。藏医用于治疗心热病、心脏病、降低胆固醇、兴奋大脑神经、增强免疫功能、防治癌症、抗衰老、美容养颜、月经不调、停经等且药效显著。民间作滋补强壮补肾,降压药用。被收载于《维吾尔药志》,《四部医典》,《晶珠本草》等藏药经典著作中。
黑枸杞:味甘、性平,富含蛋白质、脂肪、糖类、游离氨基酸、有机酸、矿物质、微量元素、生物碱、维生素C、B1、B2及钙、镁、铜、锌、锰、铁、铅、镍、镉、钴、铬、钾、钠等营养素。经检测黑枸杞钙、铁、尼克酸含量分别为红枸杞的2.3、4.6、16.7倍,尤其是原花青素(OPC)超过蓝莓(黑果枸杞OPC含量3690mg/100g,蓝莓OPC含量330~3380mg/100g),是迄今为止发现OPC含量最高的天然野生果实,具有清除自由基、抗氧化功能、抗衰老、改善睡眠、美容养颜、补肾益精、预防癌症、护肝明目、增进视力等功效。花青素可被人体100%地吸收,服用20分钟后,血液中就能检测到,并在体内维持长达27小时。特别是花青素可以跨越血脑屏障直接保护大脑中枢神经系统,花青素还能够增强血管弹性,改善循环系统,增进皮肤的光滑度,抑制炎症和过敏。所以常食黑枸杞具有补益虚损、强身健体的作用。
桑葚:桑树的成熟果实,桑葚,又名桑葚、桑葚子、桑蔗、桑枣、桑果、乌椹等,其性味甘寒,入肺、肝、肾、大肠经。每100克鲜桑葚含水分81.8克,蛋白质1.8克,脂肪0.3克。纤维素4.9克,碳水化合物10克,灰分1.2克,胡萝卜素30微克,硫胺素0.02毫克、核黄素0.06毫克,维生素 E6.95毫克,钾33毫克,锌0.27毫克,铜0.08毫克,硒4.8微克。此外,还含有鞣酸,苹果酸,维生素C、脂肪酸、矢车菊素、矢车菊甙、乌发素等。中医学认为桑葚具有补益肝肾、滋阴养血、生津润肠、息风、改善皮肤(包括头皮)血液供应、营养肌肤、乌发明目等功效。主治心悸失眠、头晕目眩、须发早白、耳鸣、盗汗、瘰疬、关节不利等病症。
黑芝麻:为胡麻科芝麻的黑色种子,含有丰富脂肪和蛋白质,以及糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分及芝麻素(sesamin)、芝麻林酚素(sesamolin)、芝麻酚(sesamol)、胡麻甙(pedaliin)、车前糖(planteose)、芝麻糖(sesamose)、黑色素等特殊成分。另外黑芝麻脂肪中主要含有油酸、亚油酸、亚麻酸等人体必需脂肪酸。黑芝麻味甘、性平,具有滋补肝肾、益血润肠、通便、健胃、保肝、促进红细胞生长的作用。研究发现黑芝麻水提液能促使酪氨酸酶表达,提高黑色素的合成量,使白发转黑。
黑米:为黑稻加工而成,素有“黑珍珠”和“米中之王”美誉,古称“药米”、“贡米”、“寿米”。黑米富含蛋白质、碳水化合物、B族维生素、维生素E、钙、磷、钾、镁、铁、锌等营养元素。黑米所含锰、锌、铜等无机盐大都比大米高1~3倍,更含有大米所缺乏的维生素C、叶绿素、花青素、胡萝卜素及强心甙等特殊成分,因而黑米比普通精白米更具营养。黑米中粗蛋白质8.5~12.5%,粗脂肪2.7~3.8%,碳水化合物75~84%,粗灰分1.7~2%。
中医认为黑米性平、味甘,归脾、胃经,具有滋阴补肾、健脾开胃、养肝明目,益气补肺,活血补血、润肠等功效。现代医学研究证明黑米具有清除自由基、改善缺铁性贫血、抗应激反应以及免疫调节等多种生理功能;具有维持血管正常渗透压、减轻血管脆性、防止血管破裂、止血、抗菌,降血压、改善心肌营养、降低心肌耗氧量、抑制癌细胞生长等功效。
经常食用黑米,可防治头昏目眩、贫血、须发早白、腰膝酸软、肺燥咳嗽、大便秘结、小便不利、肾虚水肿、食欲不振、脾胃虚弱等症。
海参:是生活在海边至8000米深的海洋棘皮动物,距今已有六亿多年的历史,以海底藻类和浮游生物为食。海参广布于世界各海洋中,我国南海沿岸种类较多,约有二十余种,《本草从新》指出:“海参,产辽海者良。”。干品海参含蛋白质76.5%,脂肪1.1%。每100克含碳水化合物0.4克,钙357毫克、磷12毫克,铁2.4毫克,以及维生素B1、B2、尼克酸等50多种对人体生理活动有益的营养成分,氨基酸组成达18种之多。另外含有牛磺酸、硫酸软骨素、精氨酸、赖氨酸、蛋氨酸、刺参粘多糖等多种特殊生理活性成分。《本草纲目拾遗》记载:海参性温、味甘咸,具有补肾、益精髓、摄小便、壮阳疗痿之功效,足敌人参,故名海参。中医药理论认为海参性微寒,味甘咸,归肺、肾、大肠经。具有补肾益精、养血润燥、止血功效。主治精血亏损、虚弱劳怯、阳痿梦遗、肠燥便秘、肺虚咳嗽、咯血、肠风、便血、外伤出血等症。现代临床相关研究结果表明海参具有提高记忆力、延缓衰老、防止动脉硬化及抗肿瘤等作用,对治疗肺结核咯血、再生障碍性贫血、糖尿病等具有一定疗效。海参体内含有一种酸性粘多糖,抑制恶性肿瘤的生长、转移,促进机体细胞的再生和机体受损后的修复,提高人体的免疫功能。海参高蛋白、低脂肪、低胆固醇,肉质细嫩,易于消化,非常适合老年人与儿童,以及体质虚弱者食用。海参中牛磺酸、尼克酸、硫酸软骨素和刺参粘多糖具有调节神经系统、快速消除疲劳、促生长发育、抗炎成骨、预防组织老化、促进伤口愈合、抑制癌细胞的功效。
芡实:睡莲科、芡属一年生大型水生草本植物,又叫鸡头米、鸡头荷、鸡头莲、刺莲藕等。拉丁文名Euryale ferox .分布于我国大部分地区。果实可食用,也可药用。每100克芡实含水分11.4克、碳水化合物79.6克、蛋白质8.3克、脂肪0.3克、膳食纤维0.9克、灰分0.4克。芡实含丰富矿物质及维生素,每100克芡实含钙37毫克、磷56毫克、钾60毫克、钠2804毫克、镁16毫克、铁0.5毫克、锌1.24、硒6.03微克、铜0.63毫克、锰1 .51毫克及核黄素0.09毫克、尼克酸0.4毫克、硫胺素0.3微克。芡实性平、味甘涩,入脾、肾经。具有补中益气、开胃、补肾祛湿、提神强志等功效,《本草纲目》记载其“止渴益肾”。主治风湿性关节炎、腰背膝痛、治神经衰弱、治消化不良、慢性泄泻、小便频数、梦遗等症。

洁净无杂质的黑木耳置于远红外烤箱中于120℃的条件下烘烤40min,精细粉碎至120目精细粉,备用;
(四)混合、制片
将步骤(一)至(三)获得的所有产物洁净条件下混合均匀,振荡造粒,高压制片,得到单片粒重1g的片剂,辐射杀菌后泡罩包装,即为含木耳养发乌发健康食品。
产品不含任何添加剂,全部采用食品级原料,食用方便,无剂量限制。
实施例2
是由下列重量份的原料和步骤得到的:
黑木耳35份、黑豆25份、桑葚干20份、黑芝麻15份、黑枸杞9份、黑糙米7份、淡干海参3份、芡实3份;
(一)桑葚干、黑芝麻、黑枸杞、淡干海参超临界CO2破壁与干制;
淡干海参泡发后破碎成粒度100目的浆料,然后与洁净无杂质的桑葚干、黑芝麻、黑枸杞混合均匀,至于超临界反应釜中,于70℃、压力80MPa、时间60min的条件下利用高压超临界CO2对物料进行穿透破壁,同时脱除物料中液相成分,得到液相成分含量6%的干制样,无尘粉碎得到粒度为200目精细粉,备用;脱除的液相成分密闭绝氧冷藏,备用;
(二)黑豆、黑糙米、芡实活化分离及粉碎
洁净无杂质的黑豆、黑糙米、芡实加入其质量6倍的pH5.5的纯净水,混合均匀,置于紫外微波超声波一体机中于微波温度60℃、时间20min、超声波功率100W、紫外功率300W条件下进行活化分离处理,使植物细胞壁内的有效成分分离出来,然后粉碎至粒度60目,110℃高压螺旋挤出、并切片处理,于60℃低温干燥至含水量6%的干制样,精细粉碎至200目精细粉,备用;
(三)黑木耳香化熟化处理
洁净无杂质的黑木耳置于远红外烤箱中于150℃的条件下烘烤15min,精细粉碎至200目精细粉,备用;
(四)混合、制片
将步骤(一)至(三)获得的所有产物洁净条件下混合均匀,振荡造粒,高压制片,得到单片粒重3g的片剂,辐射杀菌后泡罩包装,即为含木耳养发乌发健康食品。
产品不含任何添加剂,全部采用食品级原料,食用方便,无剂量限制。
实施例3
是由下列重量份的原料和步骤得到的:
黑木耳27.5份、黑豆20份、桑葚干17.5份、黑芝麻12.5份、黑枸杞7份、黑糙米5份、淡干海参2份、芡实2份;
(一)桑葚干、黑芝麻、黑枸杞、淡干海参超临界CO2破壁与干制;
淡干海参泡发后破碎成粒度80目的浆料,然后与洁净无杂质的桑葚干、黑芝麻、黑枸杞混合均匀,至于超临界反应釜中,于65℃、压力65MPa、时间45min的条件下利用高压超临界CO2对物料进行穿透破壁,同时脱除物料中液相成分,得到液相成分含量4.5%的干制样,无尘粉碎得到粒度为160目精细粉,备用;脱除的液相成分密闭绝氧冷藏,备用;
(二)黑豆、黑糙米、芡实活化分离及粉碎
洁净无杂质的黑豆、黑糙米、芡实加入其质量4.5倍的pH5.0的纯净水,混合均匀,置于紫外微波超声波一体机中于微波温度52℃、时间15min、超声波功率100W、紫外功率300W条件下进行活化分离处理,使植物细胞壁内的有效成分分离出来,然后粉碎至粒度40目,100℃高压螺旋挤出、并切片处理,于52℃低温干燥至含水量4.5%的干制样,精细粉碎至160目精细粉,备用;
(三)黑木耳香化熟化处理
洁净无杂质的黑木耳置于远红外烤箱中于135℃的条件下烘烤27min,精细粉碎至160目精细粉,备用;
(四)混合、制片
将步骤(一)至(三)获得的所有产物洁净条件下混合均匀,振荡造粒,高压制片,得到单片粒重2g的片剂,辐射杀菌后泡罩包装,即为含木耳养发乌发健康食品。
产品不含任何添加剂,全部采用食品级原料,食用方便,无剂量限制。
本发明经人群测试效果良好,结果如表1:

淡干海参泡发后破碎成粒度60~100目的浆料,然后与洁净无杂质的桑葚干、黑芝麻、黑枸杞混合均匀,置于 超临界反应釜中,于60~70℃、压力50~80MPa、时间30~60min的条件下利用高压超临界CO2对物料进行穿透破壁,同时脱除物料中液相成分,得到液相成分含量3~6%的干制样,无尘粉碎得到粒度为120~200目精细粉,备用;脱除的液相成分密闭绝氧冷藏,备用;
(二)黑豆、黑糙米、芡实活化分离及粉碎
洁净无杂质的黑豆、黑糙米、芡实加入其质量3~6倍的pH4.5~5.5的纯净水,混合均匀,置于紫外微波超声波一体机中于微波温度45~60℃、时间10~20min、超声波功率100W、紫外功率300W条件下进行活化分离处理,使植物细胞壁内的有效成分分离出来,然后粉碎至粒度20~60目,85~110℃高压螺旋挤出、并切片处理,于45~60℃低温干燥至含水量3~6%的干制样,精细粉碎至120~200目精细粉,备用;
(三)黑木耳香化熟化处理
洁净无杂质的黑木耳置于远红外烤箱中于120~150℃的条件下烘烤15~40min,精细粉碎至120~200目精细粉,备用;
(四)混合、制片
将步骤(一)至(三)获得的所有产物洁净条件下混合均匀,振荡造粒,高压制片,得到单片粒重1~3g的片剂,辐射杀菌后泡罩包装,即为含木耳养发乌发健康食品。
2.如权利要求1所述的一种无添加剂含木耳养发乌发健康食品的生产方法,其特征在于:包括下列重量份的原料和步骤:
黑木耳20~35份、黑豆15~25份、桑葚干15~20份、黑芝麻10~15份、黑枸杞5~9份、黑糙米3~7份、淡干海参1~3份、芡实1~3份;
(一)桑葚干、黑芝麻、黑枸杞、淡干海参超临界CO2破壁与干制;
