技术领域
本发明涉及食品加工技术领域,尤其涉及一种虫草桑叶米酒及其制备方法。
背景技术
桑叶不仅可用来饲养家蚕,也可入药。桑叶的药用首载于《神农本草经》:桑叶性寒、味苦、归肺、肝经,具有祛风清热、凉血明目等功效。桑叶,以老而经霜者为佳,欲其气之全,力之厚也,故入药用冬桑叶:亦曰霜叶。桑叶营养丰富,主要含有香豆素类、酚性物质、黄酮类物质、人体所需的18种氨基酸及7种维生素,还含有锌、锰、钙、铁等微量元素,已被国家卫生部正式列入“既是食品又是药品”资源名单。近年来的研究表明,桑叶具有降血糖、降血脂、抗肿瘤、抗氧化、增强免疫力、抗炎、抑菌、抗病毒、抗凝血及扩血管等作用,日本、韩国和中国已开发出桑叶茶、桑叶降血糖药物、桑叶香烟和具有抗衰老、保湿、美白功效的化妆品等产品。目前,桑叶酒多采用桑叶浸提液勾兑而成,不具有酿造酒醇厚的口感,并且味道苦涩、保健功能不强,不适合工业化生产。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种虫草桑叶米酒及其制备方法。
本发明是通过以下技术方案实现的:
一种虫草桑叶米酒,由下列重量份的原料制成:
大米350-400、霜桑叶18-20、可乐7-8、冬瓜皮5-6、蕃茄6-7、山露菜5-6、冬虫夏草3-4、珍珠母1-1.2、槐花1.2-1.4、党参1-1.2、麦芽糊精0.25-0.3、马利酵母4-5、水适量。
所述的一种虫草桑叶米酒的制备方法,包括以下步骤:
(1)将霜桑叶用清水漂洗干净后,置于室温下萎凋4-5小时,再转至蒸汽式杀青机中在100-110℃下进行去苦涩处理50-60秒;将去苦涩处理后的霜桑叶置于连续烘干机中在120℃下烘干处理25-30分钟,出料摊晾后再粉碎,过100目筛;
(2)将麦芽糊精置于30倍水中搅拌至完全溶化,得麦芽糊精溶液;将麦芽糊精溶液均匀喷淋在步骤(1)所得霜桑叶粉末上,搅拌均匀后再进行真空冷冻干燥8-9小时;
(3)将冬虫夏草、珍珠母、槐花、党参混合,加6-8倍的水在70-75℃下浸提10-15分钟,过滤除渣,收集滤液;
(4)将冬瓜皮置于可乐中浸泡3-4小时,过滤,所得滤液与蕃茄、山露菜混合打浆,得浆液;
(5)将大米淘洗干净后,与步骤(3)、(4)处理后的物料混合入锅,加适量水煮成米饭,米饭温度冷却至30℃时保温备用;
(6)将步骤(2)、(5)处理后的物料混合,再加入马利酵母混合均匀,在30℃下密封发酵10-12天,将所得物料进行压榨、过滤、勾兑,即得。
本发明的优点是:本发明先对霜桑叶进行萎凋处理,再置于蒸汽式杀青机中处理,有助于增加桑叶的甜爽香味,同时有效去除霜桑叶的苦涩味道;粉碎处理后的霜桑叶先与麦芽糊精溶液混合,经冷冻干燥处理后,再在发酵过程中添加到米饭中,其中,麦芽糊精可以作为定型填充料渗透到霜桑叶颗粒内部,使其组织更加充实,呈疏松多孔海绵状,更容易与酵母融合,缩短发酵时间;本发明的菌种采用马利酵母,使得发酵的米酒酒精度高、酒体醇厚,桑叶香和酒香纯正;此外,本发明采用的蕃茄等辅料具有减肥瘦身、消除疲劳、增进食欲、提高对蛋白质的消化的功能,采用的冬虫夏草等中草药具有增强机体的免疫力、滋补肺肾的功效。
具体实施方式
一种虫草桑叶米酒,由下列重量份的原料制成:
大米350、霜桑叶18、可乐7、冬瓜皮5、蕃茄6、山露菜5、冬虫夏草3、珍珠母1、槐花1.2、党参1、麦芽糊精0.25、马利酵母4、水适量。
所述的一种虫草桑叶米酒的制备方法,包括以下步骤:
(1)将霜桑叶用清水漂洗干净后,置于室温下萎凋4小时,再转至蒸汽式杀青机中在100℃下进行去苦涩处理50秒;将去苦涩处理后的霜桑叶置于连续烘干机中在120℃下烘干处理25分钟,出料摊晾后再粉碎,过100目筛;
(2)将麦芽糊精置于30倍水中搅拌至完全溶化,得麦芽糊精溶液;将麦芽糊精溶液均匀喷淋在步骤(1)所得霜桑叶粉末上,搅拌均匀后再进行真空冷冻干燥8小时;
(3)将冬虫夏草、珍珠母、槐花、党参混合,加6倍的水在70℃下浸提10分钟,过滤除渣,收集滤液;
(4)将冬瓜皮置于可乐中浸泡3小时,过滤,所得滤液与蕃茄、山露菜混合打浆,得浆液;
(5)将大米淘洗干净后,与步骤(3)、(4)处理后的物料混合入锅,加适量水煮成米饭,米饭温度冷却至30℃时保温备用;
(6)将步骤(2)、(5)处理后的物料混合,再加入马利酵母混合均匀,在30℃下密封发酵10天,将所得物料进行压榨、过滤、勾兑,即得。

1.一种虫草桑叶米酒,其特征在于由下列重量份的原料制成:
大米350-400、霜桑叶18-20、可乐7-8、冬瓜皮5-6、蕃茄6-7、山露菜5-6、冬虫夏草3-4、珍珠母1-1.2、槐花1.2-1.4、党参1-1.2、麦芽糊精0.25-0.3、马利酵母4-5、水适量。
2.根据权利要求1所述的一种虫草桑叶米酒的制备方法,其特征在于包括以下步骤:
(1)将霜桑叶用清水漂洗干净后,置于室温下萎凋4-5小时,再转至蒸汽式杀青机中在100-110℃下进行去苦涩处理50-60秒;将去苦涩处理后的霜桑叶置于连续烘干机中在120℃下烘干处理25-30分钟,出料摊晾后再粉碎,过100目筛;
