一种山药即食片及其制备方法,山药即食片包括山药粉5%-40%、水溶性高分子聚合物10%-30%、增塑剂0-15%、添加剂0-15%和纯化水。制备方法包括步骤,将水溶性高分子聚合物溶解于溶剂中,使其成为均匀的粘稠液;将山药粉分散于溶剂中,搅拌均匀;将矫味剂溶于溶剂中形成溶液;将山药粉和矫味剂的溶液在搅拌下依次加入水溶性高分子聚合物的粘稠液中,充分搅拌均匀,使其成为均匀的浆液;将增塑剂、表面活性剂、着色剂加入上述的均匀浆液中,搅拌均匀后,在60℃恒温下连续搅拌,溶解,并超声脱除气泡,得到均匀的浆液;将脱泡后得到的均匀浆液,均匀涂布于涂抹过脱模剂的模具上,加热干燥,冷却,起模,切割,得到山药即食片成品。具有即食方便、入口即溶、色泽均匀的特点,且通过口腔黏膜吸收,可提高生物利用度。
Description
技术领域
本发明涉及一种山药即食片及其制备方法。
背景技术
山药为薯蓣科多年生草本植物,是传统的药食同源性食物之一,山药多糖是山药中的主要活性物质,山药多糖分为中性多糖和两种酸性多糖,山药中性多糖的单糖的组成为葡萄糖、果糖和甘露糖,山药酸性多糖分别由葡萄糖、半乳糖、甘露糖或由葡萄糖、甘露糖、阿拉伯糖,木糖组成。研究表明山药多糖具有免疫调节、抗氧化、降血糖、降血脂、抗衰老、抗突变等生物活性。
免疫系统由免疫器官、免疫细胞、免疫活性物质三大部分组成,免疫调节是指免疫系统中的免疫细胞和免疫分子之间,以及与其它系统之间的相互作用,使免疫应答以恰当的方式维持在适当的水平。免疫调节机制是维持机体内环境稳定的关键,如果免疫调节功能异常,对自身成分产生强烈的免疫攻击,造成细胞破坏,功能丧失,就会发生自身免疫病。如果机体对外界病原微生物的感染不能产生适度的反应,也可造成对机体的不利影响。免疫调节机制不但决定了免疫应答的发生,而且也决定了免疫反应的强弱。
糖尿病是由于胰岛素分泌缺陷或胰岛素作用障碍造成的,以高血糖为特征的代谢性疾病。持续性高血糖与长期代谢紊乱可导致全身组织器官的损害和衰竭。严重者可引起失水,酸碱平衡失调和电解质紊乱等急性并发症和高渗昏迷。
在调节免疫方面,山药酸性多糖可不同程度提高NK细胞活性、血清IgG含量、血清溶血素活性、T淋巴细胞增殖能力,也可以增强巨噬细胞的吞噬能力,既具有非特异性免疫功能又有提高特异性细胞免疫和体液免疫功能。
四氧嘧啶进入机体后可选择性地被胰岛B细胞摄取,产生的超氧阴离子自由基能破坏胰岛B细胞,大量的B细胞损伤与坏死将导致胰岛素原合成受阻,引发糖尿病。山药多糖具有保护胰岛细胞免受破坏,增加胰岛素的分泌,改善受损的胰岛B细胞的功能。
目前对山药的加工研究主要集中在山药果脯、山药酸奶、山药片、山药黄酒、山药果冻和乳酸菌发酵山药饮料,对山药即食片的研究并未涉及。
发明内容
本发明其目的就在于提供一种山药即食片及其制备方法,具有即食方便、入口即溶、色泽均匀的特点,且通过口腔黏膜吸收,可提高生物利用度。
实现上述目的而采取的技术方案,
一种山药即食片,包括山药粉重量百分比5%-40%、水溶性高分子聚合物重量百分比10%-30%、增塑剂重量百分比0-15%、添加剂重量百分比0-15%和纯化水。
一种山药即食片的制备方法,包括以下步骤:
(1)将水溶性高分子聚合物溶解于溶剂中,搅拌,使其成为均匀的粘稠液;
(2)将山药粉分散于溶剂中,搅拌均匀;
(3)将矫味剂溶于溶剂中形成溶液;
(4)将步骤(2)和步骤(3)的溶液在搅拌下依次加入步骤(1)的粘稠液中,充分搅拌均匀,使其成为均匀的浆液;
(5)将增塑剂、表面活性剂、着色剂加入步骤(4)的均匀浆液中,搅拌均匀后,在60℃恒温下连续搅拌,溶解,并超声脱除气泡,得到均匀的浆液;
(6)将脱泡后得到的均匀浆液,均匀涂布于涂抹过脱模剂的模具上,加热干燥,冷却,起模,切割,得到山药即食片成品。
与现有技术相比本发明具有以下优点。
现代人工作压力大,饮食不平衡,生活节奏过快,容易导致免疫力降低,糖尿病等疾病。与片剂、颗粒剂相比,山药多糖即食片给药方便,不需饮水即可服用,放在舌上即溶,药物通过口腔黏膜吸收,可提高生物利用度,该即食片厚度在0.05mm-0.25mm,色泽均匀,入口即溶。
具体实施方式
包括山药粉重量百分比5%-40%、水溶性高分子聚合物重量百分比10%-30%、增塑剂重量百分比0-15%、添加剂重量百分比0-15%和纯化水。
所述的水溶性高分子聚合物包括海藻酸钠、羟丙基甲基纤维素、羧甲基纤维素钠、羟丙纤维素、聚乙烯醇、直链淀粉及乙基纤维素中的一种或几种。
所述的增塑剂包括甘油、聚乙二醇、丙二醇及三乙酸甘油酯中的一种或几种。
所述的添加剂包括矫味剂、着色剂、表面活性剂或它们的混合物。
所述的矫味剂包括甜菊糖、薄荷香精、橙子香精、木糖醇及安赛蜜中的一种或几种。
所述的着色剂包括栀子黄、柠檬黄、日落黄或它们的混合物。
所述的表面活性剂包括吐温80、吐温20及十二烷基硫酸钠中的一种或几种。
一种山药即食片的制备方法,包括以下步骤:
(1)将水溶性高分子聚合物溶解于溶剂中,搅拌,使其成为均匀的粘稠液;
(2)将山药粉分散于溶剂中,搅拌均匀;
(3)将矫味剂溶于溶剂中形成溶液;
(4)将步骤(2)和步骤(3)的溶液在搅拌下依次加入步骤(1)的粘稠液中,充分搅拌均匀,使其成为均匀的浆液;
(5)将增塑剂、表面活性剂、着色剂加入步骤(4)的均匀浆液中,搅拌均匀后,在60℃恒温下连续搅拌,溶解,并超声脱除气泡,得到均匀的浆液;
(6)将脱泡后得到的均匀浆液,均匀涂布于涂抹过脱模剂的模具上,加热干燥,冷却,起模,切割,得到山药即食片成品。
所述的溶剂为纯化水。
所述的山药粉采用山药干燥工艺技术加工而成。
所述的山药干燥工艺采用热泵-热风联合干燥技术,干燥时间缩短,含水率降低,产品质量提高;在干燥初始阶段,采用低温热泵干燥(35-45℃),在干燥后期随着环境水分含量减少,酶活力大大降低,热敏性组分对温度的稳定性不断提高。此时采用热风干燥,在脱水山药粉的加工过程中,先后采用超微粉碎和微粉造粒技术加工而成。
实施例1
本实施例的山药即食片成分如下:
山药粉2.7g海藻酸钠1g羟丙基甲基纤维素1g羧甲基纤维素钠2g
木糖醇0.03g薄荷醇0.02g栀子黄0.0015g甘油1mL吐温800.02mL
制备方法:(1)用纯化水溶解海藻酸钠,将山药粉分散于纯化水中;(2)将羟丙基甲基纤维素和羧甲基纤维素钠分别溶解于纯化水,待吸水溶胀后,在60oC水浴锅中水浴溶解;(3)将木糖醇和薄荷醇按配比溶于纯化水中;(3)将上述溶液混匀后,再加入栀子黄、甘油及吐温80,60oC恒温水浴40min;(4)超声脱除气泡后涂膜,加热干燥,冷却,起模,切割成3cm×2cm长方形薄片,得到山药即食片成品。
实施例2
本实施例的山药即食片成分如下:
山药粉1.5g羟丙基甲基纤维素1g羧甲基纤维素钠2g木糖醇0.01g甜菊糖0.03g栀子黄0.001g柠檬黄0.0005g甘油1mL吐温800.02mL薄荷醇0.01g
制备方法:(1)将山药粉分散于纯化水中;(2)将羟丙基甲基纤维素和羧甲基纤维素钠分别溶解于纯化水,待吸水溶胀后,在60oC水浴锅中水浴溶解;(3)将木糖醇、甜菊糖和薄荷醇按配比溶于纯化水中;(4)将栀子黄和柠檬黄按配比溶于纯化水;(4)将上述溶液混匀后,再加入甘油及吐温80,60oC恒温水浴40min;(4)超声脱除气泡后涂膜,加热干燥,冷却,起模,切割成3cm×2cm长方形薄片,得到山药即食片成品。
实施例3
本实施例的山药即食片成分如下:
山药粉2.5g羟丙基甲基纤维素2g羧甲基纤维素钠1g橙子香精0.01g甜菊糖0.04g栀子黄0.001g甘油1mL吐温800.02mL薄荷醇0.01g
制备方法:(1)将山药粉分散于纯化水中;(2)将羟丙基甲基纤维素和羧甲基纤维素钠分别溶解于纯化水,待吸水溶胀后,在60oC水浴锅中水浴溶解;(3)将橙子香精和甜菊糖按配比溶于纯化水中;(4)将上述溶液混匀后,再加入薄荷醇、栀子黄、甘油及吐温80,60oC恒温水浴40min;(4)超声脱除气泡后涂膜,加热干燥,冷却,起模,切割成3cm×2cm长方形薄片,得到山药即食片成品。
实施例4
本实施例的山药即食片成分如下:
山药粉2g羟丙基甲基纤维素1g羧甲基纤维素钠2g安赛蜜0.001g甜菊糖0.02g栀子黄0.002g甘油1mL吐温800.02mL薄荷醇0.02g
制备方法:(1)将山药粉分散于纯化水;(2)将羟丙基甲基纤维素和羧甲基纤维素钠分别溶解于纯化水,待吸水溶胀后,在60oC水浴锅中水浴溶解;(3)将甜菊糖和安赛蜜按配比溶解于纯化水中;(4)将上述溶液混匀后,再加入薄荷醇、栀子黄、甘油及吐温80,60oC恒温水浴40min;(4)超声脱除气泡后涂膜,加热干燥,冷却,起模,切割成3cm×2cm长方形薄片,得到山药即食片成品。
Claims (9)
1.一种山药即食片,其特征在于,包括山药粉重量百分比5%-40%、水溶性高分子聚合物重量百分比10%-30%、增塑剂重量百分比0-15%、添加剂重量百分比0-15%和纯化水。
2.根据权利要求1所述的一种山药即食片,其特征在于,所述的水溶性高分子聚合物包括海藻酸钠、羟丙基甲基纤维素、羧甲基纤维素钠、羟丙纤维素、聚乙烯醇、直链淀粉及乙基纤维素中的一种或几种。
3.根据权利要求1所述的一种山药即食片,其特征在于,所述的增塑剂包括甘油、聚乙二醇、丙二醇及三乙酸甘油酯中的一种或几种。
4.根据权利要求1所述的一种山药即食片,其特征在于,所述的添加剂包括矫味剂、着色剂、表面活性剂或它们的混合物。
5.根据权利要求4所述的一种山药即食片,其特征在于,所述的矫味剂包括甜菊糖、薄荷香精、橙子香精、木糖醇及安赛蜜中的一种或几种。
6.根据权利要求4所述的一种山药即食片,其特征在于,所述的着色剂包括栀子黄、柠檬黄、日落黄或它们的混合物。
7.根据权利要求4所述的一种山药即食片,其特征在于,所述的表面活性剂包括吐温80、吐温20及十二烷基硫酸钠中的一种或几种。
8.根据权利要求1所述的一种山药即食片的制备方法,其特征在于,包括以下步骤:
(1)将水溶性高分子聚合物溶解于溶剂中,搅拌,使其成为均匀的粘稠液;
(2)将山药粉分散于溶剂中,搅拌均匀;
(3)将矫味剂溶于溶剂中形成溶液;
(4)将步骤(2)和步骤(3)的溶液在搅拌下依次加入步骤(1)的粘稠液中,充分搅拌均匀,使其成为均匀的浆液;
(5)将增塑剂、表面活性剂、着色剂加入步骤(4)的均匀浆液中,搅拌均匀后,在60℃恒温下连续搅拌,溶解,并超声脱除气泡,得到均匀的浆液;
(6)将脱泡后得到的均匀浆液,均匀涂布于涂抹过脱模剂的模具上,加热干燥,冷却,起模,切割,得到山药即食片成品。
9.根据权利要求7所述的一种山药即食片的制备方法,其特征在于,所述的溶剂为纯化水。
