Abstract
本发明公开了一种益生元黑芝麻糊/乳,是由以下重量份的原料制成:紫米40-80份,黑芝麻20-50份,木糖醇10-20份,L-阿拉伯糖0-5份,低聚木糖0-5份,食盐0-5份,复合稳定剂0-5份,所述复合稳定剂为魔芋胶、黄原胶或羟甲基纤维素钠的任意一种或几种的混合物。本发明还公开了该益生元黑芝麻糊/乳的制备方法。本发明的黑芝麻糊/乳香甜可口,口感细腻,特别添加调理肠道功能的低聚木糖,以及抑制蔗糖吸收的L-阿拉伯糖等功效成分;用木糖醇进行甜味调节,特别适宜肥胖和高血糖人群食用。

技术领域
本发明涉及一种益生元黑芝麻糊/乳及其制备方法,属于食品技术领域。
背景技术
肥胖作为一种发病率高,危害性大的综合症,已经日益引起人们的关注。世界卫生组织(WHO)调查表明2005年全球有16亿人超重,至少4亿人肥胖。2002年中国营养调查表明,我国成人超重率为22.8%,肥胖率为7.1%,与1992年调查资料相比,成人超重率上升39%,肥胖率上升97%。肥胖严重危害着人类的健康和生活质量,研究表明BMI(Body Mass Index,体质指数)大于32即可使预期寿命平均减少6-7年,导致死亡率加倍。肥胖还可以引起一系列代谢系统的紊乱,其中肥胖所致脂肪肝的发病率正逐年上升,肥胖人群中脂肪肝的发病率高达60%,已成为中国重大的公共卫生问题。
肥胖的发生与人们的饮食习惯密切相关,黑芝麻糊/乳一直以来都是我国民间的传统食品,市面上的黑芝麻糊/乳大都由黑芝麻、米粉、麦芽糊精、淀粉等混合而成,其中米粉、淀粉热量较高,多食容易引起肥胖的发生。
肥胖不仅影响美观,而且还会引起多种疾病的发生,如高血压、血脂异常、Ⅱ型糖尿病、冠心病、中风、胆囊病、骨关节炎和子宫内膜癌、乳腺癌、前列腺癌、结肠癌等。对于肥胖人群而言,一味的节食或服用减肥药物并非是治疗肥胖的有效方法,食疗与之相比是一种更为健康的治疗方法,但目前市场上缺少适合于肥胖人群或高血糖人群食用的食品。
发明内容
针对上述现有技术,本发明的目的是提供一种益生元黑芝麻糊/乳及其制备方法。
为实现上述目的,本发明采用下述技术方案:
一种益生元黑芝麻糊/乳,是由以下重量份的原料制成:
紫米40-80份,黑芝麻20-50份,木糖醇10-20份,L-阿拉伯糖0-5份,低聚木糖0-5份,食盐0-5份,复合稳定剂0-5份。
所述复合稳定剂为魔芋胶、黄原胶或羟甲基纤维素钠的任意一种或几种的混合物。
优选的,该益生元黑芝麻糊/乳,是由以下重量份的原料制成:
紫米40-60份,黑芝麻20-35份,木糖醇15-20份,L-阿拉伯糖2-4份,低聚木糖1-3份,食盐1-2份,复合稳定剂0.5-1份。
该益生元黑芝麻糊/乳的制备方法,包括以下步骤(其工艺流程见图1):
(1)选取饱满,无杂质,无发霉的紫米和黑芝麻;
(2)将黑芝麻用清水淘洗干净(3-4次),之后在鼓风干燥箱中烘干,烘制温度75-85℃,时间14-16h。炒烤温度140-150℃,文火慢炒。翻炒15-20min至芝麻内部白色变成深黄色,出现香味为度。芝麻出锅后迅速冷却,使温度骤降,待用。
(3)将紫米用清水淘洗干净(3-4次),放入膨化机中膨化,以产品膨松为宜(其熟化度≥98%),待用。
(4)按组方配比称取步骤(2)处理的黑芝麻和步骤(3)处理的紫米,粉碎至30目左右,加入相当于其质量15倍的水(g/mL),升温至50℃,浸泡6~7小时,然后进行磨浆机粗磨一次,再入胶体磨研磨两次,进行分离,浆液用300目滤布过滤去渣,得浆液待用。
(5)按组方配比称取低聚木糖、木糖醇、阿拉伯糖、食盐、复合稳定剂,将其溶解在其总质量5-10倍的水(g/mL)中,制备成混合液,待用。
(6)将步骤(4)制得的浆液和步骤(5)制备的混合液加入到配料罐中,并加入400份的水搅拌均匀,并进行煮浆,沸腾1-2min。
(7)将步骤(6)的混合液均质、灌装、杀菌,得到黑芝麻乳。
(8)将步骤(6)的混合液在30℃-90℃干燥、包装,得到黑芝麻糊。

所述复合稳定剂的主要组成
所述黑芝麻含有大量的脂肪和蛋白质,还有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分。黑芝麻含有的多种人体必需氨基酸在维生素E、维生素B1的作用参与下,能加速人体的代谢功能;黑芝麻含有的铁和维生素E是预防贫血、活化脑细胞、消除血管胆固醇的重要成分;黑芝麻含有的脂肪大多为不饱和脂肪酸,有延年益寿的作用;中医中药理论认为,黑芝麻具有补肝肾、润五脏、益气力、长肌肉、填脑髓的作用,可用于治疗肝肾精血不足所致的眩晕、须发早白、脱发、腰膝酸软、四肢乏力、步履艰难、五脏虚损、皮燥发枯、肠燥便秘等病症。
所述紫米是特种稻米的一种,素有“米中极品”之称。紫米粒细长,且表皮呈紫色。紫米分皮紫内白非糯性和表里皆紫糯性两种。民间喜在年节喜庆时做成八宝饭食用,味香微甜,黏而不腻。其主要成分是赖氨酸、色氨酸、维生素B1、维生素B2、叶酸、蛋白质、脂肪等多种营养物质,以及铁、锌、钙、磷等人体所需矿物元素。其在明代李时珍的本草纲目中便有记载。文曰:紫米有滋阴补肾、健脾暖肝、明目活血,补血益气、收宫滋阴、治疗神经衰弱等功用。紫米的功用众多,而近期有专家指出,紫米含有低糖高纤成分,是抗癌的比较好食品之一。在美国,科学家发现紫米外壳含有丰富的青花素抗氧化剂成分,而这种抗氧化剂成分可于维他命相媲美,且紫米含糖成分低,亦是爱美女性不可多得的美容食品。另有食品学家研究表示:紫米中的植物抗氧化剂成分利于爱护心血管健康,防止动脉硬化,对DNA能起到爱护作用,防范癌症发生。所含有的蛋白酶成分可帮助老年人改善睡眠质量。紫米中的硫氨素则能改善女性的贫血状况,色氨酸成分能降血脂,维护生命机体健康。
所述低聚木糖是由2-7个木糖分子通过β-1,4糖苷键连接聚合而成的非消化性低聚糖,具有益生元属性。其能量几乎为零,既不影响血糖浓度,也不增加血糖中胰岛素水平,并且不会形成脂沉淀,特别适合糖尿病,肥胖症,高血压等人群食用;酸、热稳定性好,pH=2.5-8.0范围内,加热肪至100℃基本不分解。它不被机体的消化酶系所分解消化,而是直接经过机体的消化道到达结肠部位,被寄生在那里的乳酸菌、双歧杆菌等有益菌高选择性利用,在促进有益菌增长繁殖的同时抑制大肠杆菌等有害菌的生长,最终促使机体内微生态菌群达成平衡。而机体的健壮有赖于机体微生态菌群的平衡。这些有益菌在生长繁殖的过程中能够产生短链脂肪酸和免疫因子能够促进机体免疫系统的健康,并有预防癌症的效果;而这些酸性物质短链脂肪酸的产生能够刺激机体肠道蠕动,并提高结肠渗透压,提高机体粪便水分,改善或防止便秘。其人体有效剂量为0.7-1.4g/d,甚至在0.4g/d的食用量也能起到良好的调节人体肠道,增殖有益菌的效果。
所述L-阿拉伯糖是自然界中一种特殊的天然稀有功能糖,是一种有甜味的戊糖。在自然界中L-阿拉伯糖很少以单糖形式存在,通常与其他单糖结合,以杂多糖的形式存在于胶质、半纤维素、果胶酸、细菌多糖及某些糖苷中。其对热和酸的稳定性高。在蔗糖中添加2%的L-阿拉伯糖,可以抑制40%蔗糖的吸收,同时也使血糖值少升高约50%。如果L-阿拉伯糖添加量达到4%,可以使血糖值完全不升高。对胰岛素分泌的抑制也是一样,添加2%L-阿拉伯糖,可使胰岛素分泌减少50%,添加4%L-阿拉伯糖,则胰岛素几乎不分泌。
本发明的有益效果:
本发明的益生元黑芝麻糊/乳的各原料组分的有机组合,是通过反复试验验证后得出的最佳组合。其中,以紫米和黑芝麻为主要原料,为人体提供了多种营养物质,同时添加具有整肠作用的益生元物质-低聚木糖,与紫米中的高纤物质协同增效人体结肠微生物菌群调节作用;添加的L-阿拉伯糖对人体蔗糖的代谢吸收起到了有效的抑制作用,同时以木糖醇作为甜味调节剂,特别适合肥胖和高血糖人群食用。
本发明所述产品与传统黑芝麻糊相比较,具有以下区别:
1、从原料上来讲,本发明特别添加了功能因子低聚木糖和阿拉伯糖,其中阿拉伯糖具体抑制人体蔗糖吸收的功效;并且以木糖醇作为产品甜度的调节剂,代替了传统产品中的白糖。
2、本发明产品的总还原糖含量≤20%,远远低于传统产品。
综上所述,该产品比传统产品更适宜肥胖或者高血糖人群食用。

实施例1:益生元黑芝麻糊的制备
配方:紫米50克,黑芝麻30克,木糖醇15克,L-阿拉伯糖2克,低聚木糖1克,食盐1克,复合稳定剂1克,其中,复合稳定剂是由黄原胶和魔芋胶按质量比1:1组成。
制备方法:
(1)选取饱满,无杂质,无发霉的紫米和黑芝麻;
(2)将黑芝麻用清水淘洗干净(3-4次),之后在鼓风干燥箱中烘干,烘制温度75℃,时间16h。炒烤温度140℃,文火慢炒。翻炒20min至芝麻内部白色变成深黄色,出现香味为度。芝麻出锅迅速冷却,使温度骤降,待用。
(3)将紫米用清水淘洗干净(3-4次),放入膨化机中膨化,以产品膨松为宜(其熟化度≥98%),待用。
(4)按组方配比称取步骤(2)处理的黑芝麻和步骤(3)处理的紫米,粉碎至30目左右,加入相当于其质量15倍量的水,单位是g/mL,升温至50℃,浸泡6小时,然后进行磨浆机粗磨一次,再入胶体磨研磨两次,进行分离,浆液用300目滤布过滤去渣,得浆液待用。

(7)将步骤(6)的混合液60℃干燥、包装,得到黑芝麻糊。

实施例2:益生元黑芝麻乳的制备
配方:紫米50克,黑芝麻25克,木糖醇18.5克,L-阿拉伯糖3克,低聚木糖1.5克,食盐1.5克,复合稳定剂0.5克,其中,复合稳定剂是由黄原胶和羧甲基纤维素钠按质量比2:1组成。
制备方法:
(1)选取饱满,无杂质,无发霉的紫米和黑芝麻;
(2)将黑芝麻用清水淘洗干净(3-4次),之后在鼓风干燥箱中烘干,烘制温度85℃,时间14h。炒烤温度150℃,文火慢炒。翻炒15min至芝麻内部白色变成深黄色,出现香味为度。芝麻出锅后迅速冷却,使温度骤降,待用。
(3)将紫米用清水淘洗干净(3-4次),放入膨化机中膨化,以产品膨松为宜(其熟化度≥98%),待用。

配方:紫米47克,黑芝麻30克,木糖醇18克,L-阿拉伯糖2克,低聚木糖1.5克,食盐1克,复合稳定剂0.5克,其中,复合稳定剂是由魔芋胶和羧甲基纤维素钠按质量比1:1组成。
制备方法:
(1)选取饱满,无杂质,无发霉的紫米和黑芝麻;
(2)将黑芝麻用清水淘洗干净(3-4次),之后在鼓风干燥箱中烘干,烘制温度75-85℃,时间15h。炒烤温度145℃,文火慢炒。翻炒18min至芝麻内部白色变成深黄色,出现香味为度。芝麻出锅后迅速冷却,使温度骤降,待用。
(3)将紫米用清水淘洗干净(3-4次),放入膨化机中膨化,以产品膨松为宜(其熟化度≥98%),待用。

配方:紫米45克,黑芝麻30克,木糖醇17克,L-阿拉伯糖4克,低聚木糖1克,食盐2克,复合稳定剂1克,其中复合稳定剂为魔芋胶、黄原胶和羟甲基纤维素钠按质量比1:1:1组成。
制备方法同实施例1。
实施例5:益生元黑芝麻糊的制备
配方:紫米50克,黑芝麻27克,木糖醇15克,L-阿拉伯糖3克,低聚木糖2.5克,食盐1.5克,复合稳定剂1克,其中复合稳定剂为魔芋胶、黄原胶和羟甲基纤维素钠按质量比1:1:1组成。
制备方法同实施例1。
本发明实施例制备的产品减肥功效评价
1、减肥功能
对200名肥胖女性受试者者进行体重跟踪调查,受试者平均体重74公斤,受试者分为5组,分别食用实施例1-5制备的黑芝麻糊/乳,每日1次替代早餐粥。结果显示:坚持食用1个月就能显示良好的减肥功能。1个月后,其体重减少了原来的4.5%-5.0%;3个月后,其体重减少了原来的9.0%-9.5%;半年后,其体重减少了原来的12.5%-13.0%。(结果见表2)

以30%的该黑芝麻糊替代基础饲料,进行大鼠(SPF级SD雄性大鼠,100±10g)肠道菌群试验,并设置对照组,饲养3周。每周测定大鼠粪便中双歧杆菌、乳杆菌、肠杆菌、肠球菌的数量。结果显示,本发明产品能够有效的降低大鼠粪便中肠杆菌和肠球菌的数量,并且能够增加其双歧杆菌和乳杆菌的数量。结果表明,本发明产品具有调节肠道菌群的功能。(部分数据见表3)

Claims (5)
1.一种益生元黑芝麻糊/乳,其特征在于,是由以下重量份的原料制成:
紫米40-80份,黑芝麻20-50份,木糖醇10-20份,L-阿拉伯糖0-5份,低聚木糖0-5份,食盐0-5份,复合稳定剂0-5份;
所述复合稳定剂为魔芋胶、黄原胶或羟甲基纤维素钠的任意一种或几种的混合物。
2.如权利要求1所述的一种益生元黑芝麻糊/乳,其特征在于,是由以下重量份的原料制成:
紫米40-60份,黑芝麻20-35份,木糖醇15-20份,L-阿拉伯糖2-4份,低聚木糖1-3份,食盐1-2份,复合稳定剂0.5-1份。
3.如权利要求1所述的一种益生元黑芝麻糊/乳,其特征在于,是由以下重量份的原料制成:紫米50份,黑芝麻30份,木糖醇15份,L-阿拉伯糖2份,低聚木糖1份,食盐1份,复合稳定剂1份。
4.权利要求1至3任一项所述的益生元黑芝麻糊的制备方法,其特征在于,步骤如下:
(1)将除杂、洗净后的黑芝麻烘干、炒制,烘干温度75-85℃,时间14-16h;炒烤温度140-150℃,翻炒15-20min至芝麻内部白色变成深黄色,出现香味为度;待用;
(2)将除杂、洗净后的紫米进行膨化处理,待用;
(3)将步骤(1)处理后的黑芝麻和步骤(2)处理后的紫米,粉碎,加入相当于其质量15倍的水,浸泡6~7小时,然后进行磨浆机粗磨一次,再入胶体磨研磨两次,进行分离,浆液过滤去渣,得过滤后的浆液,待用;
(4)将低聚木糖、木糖醇、阿拉伯糖、食盐、复合稳定剂溶解在其总质量5-10倍的水中,制备成混合液,待用。
(5)将步骤(3)制得的浆液和步骤(4)制备的混合液加入到配料罐中,并加入水搅拌均匀,进行煮浆,沸腾1-2min;
(6)将步骤(5)的混合液干燥、包装,得到黑芝麻糊。
5.权利要求1至3任一项所述的益生元黑芝麻乳的制备方法,其特征在于,步骤如下:
(1)将除杂、洗净后的黑芝麻烘干、炒制,烘干温度75-85℃,时间14-16h;炒烤温度140-150℃,翻炒15-20min至芝麻内部白色变成深黄色,出现香味为度;待用;
(2)将除杂、洗净后的紫米进行膨化处理,待用;
(3)将步骤(1)处理后的黑芝麻和步骤(2)处理后的紫米,粉碎,加入相当于其质量15倍的水,浸泡6~7小时,然后进行磨浆机粗磨一次,再入胶体磨研磨两次,进行分离,浆液过滤去渣,得过滤后的浆液,待用;
(4)将低聚木糖、木糖醇、阿拉伯糖、食盐、复合稳定剂溶解在其总质量5-10倍的水中,制备成混合液,待用。
(5)将步骤(3)制得的浆液和步骤(4)制备的混合液加入到配料罐中,并加入水搅拌均匀,进行煮浆,沸腾1-2min;
(6)将步骤(5)的混合液均质、灌装、杀菌,得到黑芝麻乳。
