灵芝整株切片加工工艺
技术领域
本发明涉及农产品加工技术领域,尤其是一种鲜灵芝整株切片加工工艺。
背景技术
灵芝的加工方法一般是将鲜灵芝制成灵芝干,再采用研磨成粉、整株入药、切割分块、化工提纯等方法将灵芝制成为药丸、茶品或饮品等,这些加工方法可以将灵芝内部分有效营养成分进行提取,但是加工工艺较为复杂,操作技术要求较高,此外,化工提纯对灵芝原有的多糖、多肽和氨基酸的破坏,以及操作过程过于繁琐等问题,不可避免的导致灵芝所含的灵芝多糖、灵芝酸、腺苷、氨基酸、蛋白质和其他微量元素的大量流失;现已有多地开展人工培育灵芝,人工培育的灵芝有效成分较野生灵芝稳定而且能在短时间内获得,但有机锗和微量元素往往不易产生甚至欠缺,如用传统的加工方法加工人工培育的灵芝,很容易导致加工后灵芝营养成分的流失,使灵芝的功效显著降低。
发明内容
本发明的目的是提供一种灵芝整株切片加工工艺,它可以解决现有技术加工后灵芝所含有效营养成分流失的问题。
为了解决上述问题,本发明采用的技术方案是:
一种灵芝整株切片加工工艺,包括以下步骤:
A、采摘:选取成熟期的鲜灵芝,利用灵芝剪由灵芝脚底部采下,放置于专用采集框内,防止挤压造成菌面破损;
B、保存:将采下的鲜灵芝从菌叶底部剪下菌脚,切面以与菌叶底部齐平为准,将切下的菌叶放入专用灵芝架存放备用,存放地温度保持在20℃,以免菌叶变质;
C、切片:用切片机将菌叶底面切成网状,菌面保持0.1㎝厚的菌肉不切断,形成整朵连体的灵芝菌片,切片完成后,将其均匀放置于菌框中,周围保持2cm的间隔;
D、烘干:待菌叶内水分自然风干至含水量为70%后,放入烘干机内进行烘干,烘干采用以下三种温度时间梯度依次进行:a)首先将烘干温度设定为30℃,烘干时间设定为5小时;b)然后再将烘干温度设定为40℃,烘干时间设定为3小时;c)最后将烘干温度设定为50℃,烘干时间设定为2小时; 
E、提香:烘干后菌叶水的含水量为15%时,将菌叶放入提香机进行提香,提香时间控制在2小时~5小时;
F、包装:当提香机内菌叶的水分降至湿度5%时,将菌叶从提香机取出冷却,待菌叶表面温度降至25℃时,使用真空袋进行真空包装即可。
由于采用了上述技术方案,本发明与现有技术相比具有如下有益效果:
1、采用本发明的灵芝加工工艺,可以最大程度保持灵芝内的有效营养成分和微量元素;
2、本发明灵芝加工工艺采用鲜灵芝进行,工艺简单、操作方便。

下面结合实施例对本发明做进一步详述: 
一种灵芝整株切片加工工艺,包括以下步骤:
A、采摘:选取成熟期的鲜灵芝,利用灵芝剪由灵芝脚底部采下,放置于专用采集框内,防止挤压造成菌面破损;
B、保存:将采下的鲜灵芝从菌叶底部剪下菌脚,切面以与菌叶底部齐平为准,将切下的菌叶放入专用灵芝架存放备用,存放地温度保持在20℃,以免菌叶变质;
C、切片:用切片机将菌叶底面切成网状,菌面保持0.1㎝厚的菌肉不切断,形成整朵连体的灵芝菌片,切片完成后,将其均匀放置于菌框中,周围保持2cm的间隔;

1.一种灵芝整株切片加工工艺,其特征在于:包括以下步骤:
A、采摘:选取成熟期的鲜灵芝,利用灵芝剪由灵芝脚底部采下,放置于专用采集框内,防止挤压造成菌面破损;
B、保存:将采下的鲜灵芝从菌叶底部剪下菌脚,切面以与菌叶底部齐平为准,将切下的菌叶放入专用灵芝架存放备用,存放地温度保持在20℃,以免菌叶变质;
C、切片:用切片机将菌叶底面切成网状,菌面保持0.1㎝厚的菌肉不切断,形成整朵连体的灵芝菌片,切片完成后,将其均匀放置于菌框中,周围保持2cm的间隔;
