背景技术
面粉(小麦粉)是中国北方大部分地区的主食,以面粉制成的食物品种繁多,花样百出,风味迥异。当前市场上有各类面粉,包括全麦粉,麦芯粉等多种类型。麦芯粉又称为麦心粉,是由小麦中心部分的胚乳磨制而成的小麦面粉。麦芯粉加工精度高、筋力强,无添加剂,面色自然黄亮,延伸性和操作性良好,粉质细腻,食用品质好,制成品表面光滑透亮,结构细腻,口感润滑,爽口不粘牙。麦芯粉适用于酒店,宾馆等高级面点制作。适用于制作家庭面食如面条、水饺、馄饨等面食。制品晶莹爽滑,口感劲道,麦香浓郁,营养丰富,久煮不烂,不混汤。
糖尿病是中老年人的常见疾病,近年来发病率不断增高。糖尿病是由遗传因素、免疫功能紊乱、微生物感染及其毒素、自由基毒素、精神因素等等各种致病因子作用于机体导致胰岛功能减退、胰岛素抵抗等而引发的糖、蛋白质、脂肪、水和电解质等一系列代谢紊乱综合征,临床上以高血糖为主要特点,典型病例可出现多尿、多饮、多食、消瘦等表现,即“三多一少”症状,糖尿病(血糖)一旦控制不好会引发并发症,导致肾、眼、足等部位的衰竭病变,且无法治愈。血液中的糖称为血糖,绝大多数情况下都是葡萄糖。体内各组织细胞活动所需的能量大部分来自葡萄糖,所以血糖必须保持一定的水平才能维持体内各器官和组织的需要。糖尿病患者饮食比较苛刻,不能食用高糖食物,但是我们日常使用的面粉就是高糖食物,因此,糖尿病患者不易过多食用面粉食品;而且糖尿病患者需要服药或者注射胰岛素来控制血糖水平。长期服药对身体会有较大的毒副作用,并且影响胃、肝、肾的功能。如果不需要服药即可控制血糖,而且能够参与正常饮食,那么糖尿病患者将会大大减轻痛苦,并且生活质量大大提高。
发明内容
为了克服现有技术的不足,本发明提供了一种新型麦芯粉,该新型麦芯粉不但具备麦芯粉的一般优点,还可以调整糖尿病患者的饮食情况,有效地控制血糖浓度,效果好,无毒副作用。
一种新型麦芯粉,其按照如下方法制备而成:
步骤1)制备麦芯粉:选用优质小麦为原料,去除各种杂质;然后进行润麦,润麦的时间20-40小时,使含水量15-16%;最后进行制粉,获得的麦芯粉的质量指标为:湿面筋含量25-28%,灰分(干基)≤0.3%,稳定时间≥5min,吸水率≥60%,延伸度≥135mm,其它指标符合国标一等标准。
步骤2)制备配料A:将菊花、瓜蒌和桑叶按照1:1:1的质量比混合,用两倍重量的85%的乙醇浸泡12小时,回流提取两次,每次1小时,合并提取液,浓缩成密度为1.15g/ml的浸膏,干燥后粉碎100目的粉末,即为配料A;
步骤3)制备配料B:将山楂和牛蒡根按照1:1的质量比混合,用水煎煮提取2次,第一次提取加10倍重量的水,提取时间为1小时,收集提取液;第二次提取加5倍重量的水,提取时间为1小时,收集提取液;合并上述两次提取液,浓缩至密度为1.2g/ml的稠膏,干燥后粉碎成100目的粉末,即为配料B;
步骤4)制备配料C:取山药研磨成粉末状,过100目筛,即得;
步骤5)制备配料D:将苦瓜切成1cm左右的正方体碎块,放入体积分数为70%的乙醇中浸泡30-40分钟,减压旋转蒸发去除乙醇;然后送入压榨机内,榨出物过滤后取滤液,浓缩至密度为1.1g/ml的清膏,干燥后粉碎成100目的粉末,即为配料D;
步骤6)搅拌混匀:将麦芯粉、配料A、配料B、配料C以及配料D按照100-150:3-5:2-3:1-2:1-2混合,搅拌均匀,即得。
本发明的新型麦芯粉可制备成馒头、水饺、面包等食品供糖尿病患者使用,也可供正常人食用。但是食用期间,要尽量忌食辛辣及寒凉食物,避免烟酒刺激,注意休息,生活要有规律有节制。

本发明制备的新型麦芯粉属于改进的麦芯粉,其口感和色泽与麦芯粉相差无异;适合做高档次的湿面产品:高档水饺、高档面条以及高档馒头,做出的成品色泽自然洁白;本发明的新型麦芯粉可以给糖尿病患者食用,而且能够有效地控制血糖浓度;本发明精心挑选几种中草药成分,合理配伍,巧妙地添加麦芯粉粉中,使得面粉的食用功能和药材的保健功能有机结合到一起;避免了患者长期服药带来的副作用,并且减轻了患者的经济负担;本发明对不同的原料采用不同的处理方式,最大限度地保留原料的有效成分;本发明制备方法简单可行,可以大规模工业化生产。
具体实施方式
为了使本技术领域的人员更好地理解本申请中的技术方案,下面将结合本申请具体实施例,对本申请的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本申请一部分实施例,而不是全部的实施例。基于本申请中的实施例,本领域普通技术人员在没有作出创造性劳动前提下所获得的所有其他实施例,都应当属于本发明保护的范围。
实施例1
一种新型麦芯粉,其按照如下方法制备而成:
步骤1)制备麦芯粉:选用优质小麦为原料,去除各种杂质;然后进行润麦,润麦的时间20小时,使含水量16%;最后进行制粉,获得的麦芯粉的质量指标为:湿面筋含量25-28%,灰分(干基)≤0.3%,稳定时间≥5min,吸水率≥60%,延伸度≥135mm,其它指标符合国标一等标准;制粉过程可包括:依次通过剥刮率为35%、33%、14%的不同磨粉机;合理调整清粉机风量和筛号配备,保证提出的胚乳100%的纯度。
步骤2)制备配料A:将菊花、瓜蒌和桑叶按照1:1:1的质量比混合,用两倍重量的85%的乙醇浸泡12小时,回流提取两次,每次1小时,合并提取液,浓缩成密度为1.15g/ml的浸膏,干燥后粉碎100目的粉末,即为配料A;
步骤3)制备配料B:将山楂和牛蒡根按照1:1的质量比混合,用水煎煮提取2次,第一次提取加10倍重量的水,提取时间为1小时,收集提取液;第二次提取加5倍重量的水,提取时间为1小时,收集提取液;合并上述两次提取液,浓缩至密度为1.2g/ml的稠膏,干燥后粉碎成100目的粉末,即为配料B;
步骤4)制备配料C:将山药去皮,晒干,研磨成粉末状,过100目筛,即得;
步骤5)制备配料D:将苦瓜切成1cm左右的正方体碎块,放入体积分数为70%的乙醇中浸泡30分钟,减压旋转蒸发去除乙醇;然后送入压榨机内,榨出物过滤后取滤液,浓缩至密度为1.1g/ml的清膏,干燥后粉碎成100目的粉末,即为配料D;
步骤6)搅拌混匀:将麦芯粉、配料A、配料B、配料C以及配料D按照100:3:2:1:1混合,搅拌均匀,即得。
实施例2
一种新型麦芯粉,其按照如下方法制备而成:
步骤1)制备麦芯粉:选用优质小麦为原料,去除各种杂质;然后进行润麦,润麦的时间30小时,使含水量15%;最后进行制粉,获得的麦芯粉的质量指标为:湿面筋含量25-28%,灰分(干基)≤0.3%,稳定时间≥5min,吸水率≥60%,延伸度≥135mm,其它指标符合国标一等标准。
步骤2)制备配料A:将菊花、瓜蒌和桑叶按照1:1:1的质量比混合,用两倍重量的85%的乙醇浸泡12小时,回流提取两次,每次1小时,合并提取液,浓缩成密度为1.15g/ml的浸膏,干燥后粉碎100目的粉末,即为配料A;
步骤3)制备配料B:将山楂和牛蒡根按照1:1的质量比混合,用水煎煮提取2次,第一次提取加10倍重量的水,提取时间为1小时,收集提取液;第二次提取加5倍重量的水,提取时间为1小时,收集提取液;合并上述两次提取液,浓缩至密度为1.2g/ml的稠膏,干燥后粉碎成100目的粉末,即为配料B;
步骤4)制备配料C:将山药研磨成粉末状,过100目筛,即得;
步骤5)制备配料D:将苦瓜切成1cm左右的正方体碎块,放入体积分数为70%的乙醇中浸泡40分钟,减压旋转蒸发去除乙醇;然后送入压榨机内,榨出物过滤后取滤液,浓缩至密度为1.1g/ml的清膏,干燥后粉碎成100目的粉末,即为配料D;
步骤6)搅拌混匀:将麦芯粉、配料A、配料B、配料C以及配料D按照150:5:3:2:2混合,搅拌均匀,即得。
实施例3
本发明新型麦芯粉的动物试验:
试验动物:SD大鼠150只,190-210g,山东医科院动物中心提供。大鼠在动物房适应喂养1周后,随机抽取30只作为正常对照组喂以普通维持饲料。高糖高脂饲料配方:大鼠基础饲料68%,蔗糖10%,蛋黄粉9%,猪油8%,胆固醇1%,胆盐0.2%,其余为水。其余120只采用高糖高脂饲料喂养4周。4周后大鼠经禁食24h后,链脲佐菌素静脉注射20mg/Kg,每两天一次,使用两次后,血糖血脂居高不下者为造模成功。选取造模成功的大鼠90只,随机分为3组,每组30只,即阴性对照组(食用常规面粉200g/每天)、本发明组(食用本发明实施例麦芯粉200g/每天)、阳性对照组:使用盐酸二甲双胍(20mg/kg),施用方式均为口服。分别于15天和30天两次尾部取血检测如表1所示,血糖单位为mmol/L。

结论:通过大鼠实验可发现,服用本发明麦芯粉可以有效地控制血糖,能够和服药达到类似的效果;我们还可以根据血糖浓度的高低,采用食疗来辅助药物治疗或者代替药物治疗糖尿病。
实施例4
临床患者试验:征集中医院门诊II型糖尿病患者共90例,其中男71例,女19例,空腹血糖以及餐后2小时血糖均较正常值大幅升高。服用本发明实施例1制备的新型麦芯粉加工的各类食品,1个月之后,检测血糖水平。治愈:空腹血糖<6.1mmol/L,餐后2h血糖<7.9mmol/L。无效:空腹血糖、餐后2h血糖均无明显改变。有效:空腹血糖、餐后2h血糖有所改善,但未达到正常水平。
治疗效果:治愈38例,有效49例,无效3例,总有效率为96.7%。
典型病例:
孙某某,男59岁,十字路镇人,空腹血糖7.9mmol/L,餐后两小时血糖9.4mmol/L,坚持食用本发明实施例2的麦芯粉加工的各类食品一个月后,空腹血糖降至6.3mmol/L,餐后两小时血糖降至8.3mmol/L,继续服用1个月,空腹血糖降至5.8mmol/L,餐后两小时血糖降至7.7mmol/L,坚持食用本发明的麦芯粉制品,一年后随访,血糖浓度无反弹。
虽然,上文中已经用一般性说明及具体实施方式对本案作了详尽的说明,但在本发明基础上,可以对之作一些修改或改进,这对本领域技术人员而言是显而易见的。因此,在不偏离本发明精神的基础上所作的修改或改进,均属于本发明要求保护的范围。
Claims (4)
1.一种新型麦芯粉,其特征在于,所述新型麦芯粉按照如下方法制备而成:
步骤1)制备麦芯粉,步骤2)制备配料A,步骤3)制备配料B,步骤4)制备配料C,步骤5)制备配料D,以及步骤6)搅拌混匀。
2.根据权利要求1所述的新型麦芯粉,其特征在于,所述麦芯粉按照如下方法制备而成:
步骤1)制备麦芯粉:选用小麦为原料,去除各种杂质;然后进行润麦,润麦的时间20-40小时,使含水量15-16%;最后进行制粉,即得;
步骤2)制备配料A:将菊花、瓜蒌和桑叶按照1:1:1的质量比混合,用两倍重量的85%的乙醇浸泡12小时,回流提取两次,每次1小时,合并提取液,浓缩成密度为1.15g/ml的浸膏,干燥后粉碎成100目的粉末,即为配料A;
步骤3)制备配料B:将山楂和牛蒡根按照1:1的质量比混合,用水煎煮提取2次,第一次提取加10倍重量的水,提取时间为1小时,收集提取液;第二次提取加5倍重量的水,提取时间为1小时,收集提取液;合并上述两次提取液,浓缩至密度为1.2g/ml的稠膏,干燥后粉碎成100目的粉末,即为配料B;
步骤4)制备配料C:将山药研磨成粉末状,过100目筛,即得;
步骤5)制备配料D:将苦瓜切成碎块,放入体积分数为70%的乙醇中浸泡30-40分钟,减压旋转蒸发去除乙醇;然后送入压榨机内,榨出物过滤后取滤液,浓缩至密度为1.1g/ml的清膏,干燥后粉碎成100目的粉末,即为配料D;
步骤6)搅拌混匀:将麦芯粉、配料A、配料B、配料C以及配料D按照100-150:3-5:2-3:1-2:1-2混合,搅拌均匀,即得。
3.权利要求1或2所述的新型麦芯粉的保健用途。
4.一种新型麦芯粉的制备工艺,其特征在于,所述工艺包括如下步骤:
步骤1)制备麦芯粉:选用小麦为原料,去除各种杂质;然后进行润麦,润麦的时间20-40小时,使含水量15-16%;最后进行制粉,即得;
步骤2)制备配料A:将菊花、瓜蒌和桑叶按照1:1:1的质量比混合,用两倍重量的85%的乙醇浸泡12小时,回流提取两次,每次1小时,合并提取液,浓缩成密度为1.15g/ml的浸膏,干燥后粉碎成100目的粉末,即为配料A;
