Abstract

本发明公开了一种桑葚食用品及其制备方法,包括桑葚20-100、蜂蜜2-60、或还包括食用添加剂适量;可将桑葚榨汁,过滤,加入蜂蜜或食用添加剂,灭菌即得;本发明还提供了桑葚食用品的果酱、桑葚果冻、桑葚糖果食品。本发明提供了一种富含多种营养、口味纯正的桑葚食用品。

一种桑葚食用品及其制备方法
技术领域
本发明属于食用品领域,尤其涉及一种桑葚食用品及其制备方法。
背景技术
桑椹(葚),又名桑实、乌椹。为桑科落叶乔木桑树的成熟果穗。主产于我国南方育蚕区。以个大、肉厚、紫红色、味甘略酸者为佳。 桑椹味甘、酸,性微寒。归心、肝、肾经。 功效: (1)滋阴补血:用于阴血不足所致的眩晕耳鸣、虚烦失眠、须发早白。 (2)生津润肠:用于津伤口渴、内伤消渴及阴血不足所致的肠燥便秘。 用法,用量:煎服,6~15克。 桑椹主含:葡萄糖、果糖、苹果酸以及维生素B1、B2、C等。虽然据本草纲目查证,桑葚具有消食化食、美容、保健、医药等方面的应用优点,但将桑葚用于工业化生产成可食可药用的产品存在困难。目前主要以桑葚的浆果直接食用,目前存在果农卖果难,储藏也难的问题,而且收获时价格低保鲜期短易腐坏。因此,存在如何利用桑葚这一天然资源,充分利用桑葚富含的多种营养, 同时得到口味纯正,并达到长期、有效保存的桑葚制品的问题。 
发明内容
本发明的目的是提供一种桑葚食用品及其制备方法和应用,克服了目前没有充分利用桑葚富含的多种营养, 同时得到口味纯正,并达到长期、有效保存的桑葚食用品的缺点。 
本发明的目的是通过以下技术方案来实现的: 
一种桑葚食用品,为包括以下重量份组分原料制成的食用品:桑葚汁20 -100、蜂蜜2-60;优选所述食用品可为以下重量份组分:桑葚汁60-85、蜂蜜10-30; 
所述食用品还可以包括以下食用添加剂之一或其组合重量份组分:天然色素、天然水果香料、天然矫味剂、碳水化合物、微量元素适量; 
所述蜂蜜为优质纯净蜂蜜;所述蜂蜜可为槐花蜜;所述槐花蜜含有 18种氨基酸,以及糖类,有机酸,维生素,酶类活性物质等高级营养成份和生化活性成份,对于补中益气,润燥滑肠及止咳解毒等具有良好功效; 
所述天然色素可为天然石榴红、天然果红、天然果绿;所述天然水果香料为柠檬香料、草莓香料、苹果香料、葡萄香料、橙子香料、水蜜桃味香料;所述天然矫味剂为柠檬酸、酒石酸、苹果酸;甘露醇、蔗糖、低聚糖、甜叶菊苷;所述碳水化合物为葡萄糖;所述微量元素为钙、镁、铁、锌以及人体所需的矿物元素; 
所述低聚糖主要生理功能具有促进双岐杆菌的增殖,减少有毒发酵物,及有害菌的产生,抑制病原菌和腹泻,防止便秘,保护肝脏,降低血清胆醇、降低血压,增强免疫力,抗肿瘤,金属维生素等,另外,这些功能性低聚糖不宜被人们吸收,不提供能量,不能被口腔细菌利用,不引起龋齿; 
甜叶菊苷为无糖甜味剂; 
所述食用添加剂重量份组分为:天然色素0.05-0.4、天然水果香型0.05 -2.0、天然矫味剂0.01-20、碳水化合物1-5、微量元素0.02-2; 
所述食用添加剂重量份组分为:天然色素0.2,天然水果香型1.5,天然 矫味剂10,碳水化合物3、微量元素0.1。 
一种桑葚食用品的制备方法,包括以下步骤: 
选取桑葚果,榨汁,过滤去渣,制得桑葚汁;按权利要求1-5所述比例加入蜂蜜和/或食用添加剂,搅拌均匀,灭菌即得; 
所述食用添加剂石榴香料可通过将石榴原汁,加热蒸馏脱气,进行芳香气回收,或用45-95%乙醇进行芳香气回收,制得天然石榴香精; 
所述过滤为常规果汁过滤方法;所述灭菌为100℃蒸汽灭菌或钴60灭菌 10-30分钟。 
所述桑葚食用品还可为制成本领域食用品,如桑葚果酱、桑葚果冻、桑葚糖果。 
一种桑葚食用品在制备果酱方面的应用,所述桑葚食用品为所述的桑葚食用品,将所述桑葚食用品按常规制备果酱的方法,如蒸煮制备而成。 
本发明具有以下优点: 
1、改变了人们长期食用桑葚的方式,本发明提供了更方便、有效、卫生地食用桑葚的产品。 
2、本发明加入蜂蜜更有效地提供人们多种营养的需要。 
3、本发明加入食用添加剂,如天然色素、天然水果香型香料、天然矫味剂等口味香甜、纯正。 
4、本发明还加入多种矿物质、微量元素可提供人们多种营养。 
实施例1 
一种桑葚食用品,由以下原料(千克)制成:桑葚汁100,蜂蜜20。 
制备方法:选取桑葚果150公斤,榨汁棉饼过滤去渣,制得石桑葚汁100公斤;按比例加入蜂蜜20公斤搅拌均匀,100℃蒸汽灭菌20分钟,灌装,即得本发明一种桑葚食用品。 
 
实施例2 
制备方法:选取桑葚,榨汁得40公斤桑葚汁;按比例加蜂蜜2公斤、石榴香精0.4公斤搅拌均匀,100℃蒸汽灭菌10分钟, 灌装,即得本发明一种桑葚食用品。 
实施例3 
选取桑葚,榨汁得桑葚汁60公斤,按比例加入蜂蜜30公斤、天然柠檬香料1.5公斤、碳酸钙0.1公斤、硫酸亚铁0.02公斤、低聚糖0.01公斤、甜叶菊苷0.01公斤,搅拌均匀,100℃蒸汽灭菌15分钟灌装,即得本发明。 

Claims (8)

1.一种桑葚食用品,其特征要求含有桑葚汁20-100重量份和蜂蜜2-60重量份,还可以进一步含有适量食用添加剂。
2. 根据权利要求1所述的桑葚食用品,所述食用添加剂可以选自以下一种或多种成分:天然色素、天然水果香料、天然矫味剂、碳水化合物或微量元素适量。
3. 根据权利要求1所述的桑葚食用品,所述组分可为以下重量份组分: 桑葚汁60-85、蜂蜜10-30。
4. 根据权利要求1所述的桑葚食用品,所述蜂蜜为槐花蜜。
5. 根据权利要求2所述的桑葚食用品,所述天然色素为天然石榴红、天然果红、天然果绿;所述天然水果香料为石榴香料、柠檬香料、草莓香料、苹果香料、葡萄香料、橙子香料、水蜜桃味香料;所述天然矫味剂为柠檬酸、酒石酸、苹果酸;甘露醇、蔗糖、低聚糖、甜叶菊苷;所述碳水化合物为葡萄糖;所述微量元素为钙、镁、铁、锌以及人体所需的其他矿物元素。
6. 根据权利要求2或5所述的桑葚食用品,所述食用添加剂重量份组分为:天然色素0.05-0.4、天然水果香精0.05-2.0、天然矫味剂0.01-20、 碳水化合物1-5、微量元素0.02-2。
7. 一种桑葚食用品的制备方法,包括以下步骤:选取桑葚果,低温快速榨汁、分离、过滤,制得桑葚汁;按桑葚汁40- 100、蜂蜜2-60、食用添加剂适量的比例混合,灭菌即得。
8. 根据权利要求7所述的一种桑葚食用品的制备方法,所述食用添加剂 为天然色素、天然水果香料、天然矫味剂、天然水果香料、碳水化合物或微量元素。
