Abstract
本发明属于食品、保健食品和药品生产技术领域,涉及一种天然色素桃胶微囊的制备方法,产品颗粒度小,在水中分散性好,不添加任何油相物,壁材,乳化剂全天然物质,透明度好,对色素颜色影响较低,解决了大部分植物色素对光、热、氧、微生物和金属离子及pH值变化敏感,稳定性较差,水溶性差等问题。

技术领域
本发明属于食品、保健食品和药品生产技术领域,涉及一种天然色素桃胶微囊的制备方法。
背景技术
随着人们对“回归自然”的呼声日益高涨,以及科学研究对天然食用色素生理活性的逐步发掘,天然食用色素必将愈加受到人们的关注和青睐,特别是功能性天然食用色素,因其来源天然、安全、并兼有生理功能,更成为天然食用色素的发展大趋势。 近年来,天然食用色素在国际市场上销售额的年增长率一直保持在10%以上。天然食用色素的市场巨大,需求量逐年上升,各国竞相开发生产。但目前我国天然食用色素的开发生产远不能满足现代工业发展的需要。我国应抓住机遇,立足国内市场,开拓国际市场,充分利用资源优势,高度重视科研开发功能性天然食用色素;积极引导企业采纳高新技术,不断提高装备水平,提高产品产量、生产技术与产品的竞争力,我国天然食用色素的开发必将呈现出十分广阔的发展前景景。
绝大多数植物色素无副作用,安全性高。植物色素大多为花青素类、番茄红素类胡萝卜素类、黄酮类化合物,是一类生物活性物质,是植物药和保健食品中的功能性有效成分。鉴于植物色素作为着色用添加剂而应用于食品、药品及化妆品中,用量达不到医疗及保健品的量效比例。在保健食品应用中,这一类植物色素可分别发挥增强人体免疫机能、抗氧化、降低血脂等辅助作用;在普通食品中有的可以发挥营养强化的辅助作用及抗氧化作用。
现有技术不足之处为:
大部分植物色素对光、热、氧、微生物和金属离子及pH值变化敏感,稳定性较差;水溶性差,现阶段微胶囊技术能很好地解决天然色素稳定性和水分散性的问题,但现阶段的微胶囊很多采用合成淀粉,添加各种原料,而且壁材的透明度差影响色素的颜色。
发明内容
为了解决现有技术中存在的问题,本发明采取的方法是,天然脱色桃胶粉做为壁材,海藻酸钠做稳定乳化剂,采用色素粉末直接加入壁材中高压均值机粉碎成100到300NM粒径,超细喷雾干燥的方法,产品颗粒度小,不添加任何油相物,壁材,乳化剂全天然物质,透明度好,对色素颜色影响较低。全部原料采用纯天然物质,色素微囊颗粒很小,水分散性很好,色素对光热氧气酸碱稳定。
为了实现本发明的目的,采用的技术方案简述如下:
一种天然色素桃胶微囊的制备方法,其具体为:
将桃胶热水中溶解,加入稀释剂和乳化剂,高压均值,再加入天然色素粉末, 在搅拌速度为200~400转/每分钟条件下,使溶液分散均匀,20分钟后加入至高压均值机均质2-5次,放入超细粉喷雾干燥设备喷雾干燥,得到超细色素微囊粉末,即得。
所述的一种天然色素桃胶微囊的制备方法,其特征为,所述的稀释剂包括蔗糖、淀粉等本领域常用的稀释剂中的一种或者几种混合物。
所述的一种天然色素桃胶微囊的制备方法,其特征为,所述的乳化剂包括海藻酸钠、壳聚糖等本领域常用的乳化剂中的一种或者几种。
所述的一种天然色素桃胶微囊的制备方法,其特征为,所述的桃胶和稀释剂的质量比例范围为8~10:1。
所述的一种天然色素桃胶微囊的制备方法,其特征为,所述的桃胶和乳化剂的质量比例范围为40~50:1。
与现有技术相比,本发明具有的积极效果是:
产品颗粒度小,在水中分散性好,不添加任何油相物,壁材,乳化剂全天然物质,透明度好,对色素颜色影响较低。
具体实施方式
示范例
1桃胶溶液
取桃胶90克,加水560克80℃溶解,加入蔗糖10克,海藻酸钠2克,待固体完全溶解,高压均值机低压10MPa高压20MPa均质两次,放凉40℃备用;
2制备初乳
取溶解好的桃胶溶液100克,加入40克天然色素,300转/每分钟搅拌20分钟,高压均质,低压10MPa高压20MPa,均值两次,放凉;
3乳液制备
将剩余溶液及初乳混合300转/每分钟乳化20分钟,低压10MPa高压20MPa,低压10MPa高压30MPa低压10MPa高压40MPa,一共均质3次;
4喷雾干燥
放入超细粉喷雾干燥设备喷雾干燥。进口温度160℃,出口温度90℃,雾化温度400℃,得到超细色素微囊粉末。

1.一种天然色素桃胶微囊的制备方法,其具体为:
将桃胶热水中溶解,加入稀释剂和乳化剂,高压均值,再加入天然色素粉末, 在搅拌速度为200~400转/每分钟条件下,使溶液分散均匀,20分钟后加入至高压均值机均质2-5次,放入超细粉喷雾干燥设备喷雾干燥,得到超细色素微囊粉末,即得。
2.如权利要求1所述的一种天然色素桃胶微囊的制备方法,其特征为,所述的稀释剂包括蔗糖、淀粉中的一种或者几种混合物。
3.如权利要求1所述的一种天然色素桃胶微囊的制备方法,其特征为,所述的乳化剂包括海藻酸钠、壳聚糖中的一种或者几种混合物。
4.如权利要求1所述的一种天然色素桃胶微囊的制备方法,其特征为,所述的桃胶和稀释剂的质量比例范围为8~10:1。
5.如权利要求1所述的一种天然色素桃胶微囊的制备方法,其特征为,所述的桃胶和乳化剂的质量比例范围为40~50:1。
