本发明涉及食品加工领域,更确切地说是涉及一种小扁豆莲子夏季养生米及其制备方法。
背景技术
随着人们生活水平的不断提高,人们对食品营养价值的要求也越来越高。虽然杂粮营养丰富,含有丰富的纤维素、维生素、矿物质的营养成分,但因杂粮口感较粗糙,且不易被消化,所以难以得到更广泛的应用。因此,粗粮应细作,以满足人们对丰富营养的追求。大米口感好、易消化,长久以来都是人们的主食,但大米单一的口感及营养成分已不能满足所有人对主食的需求。本发明经过长期的实践调配,研究出美味、营养的复合米,将多种粗粮、蔬菜及有益中草药成分与大米的营养相结合,提高了米制品特殊的营养价值,从而能够满足人们对于营养、美味且有养生保健功效的主食的需求,具有重要的现实意义。
发明内容
本发明的目的是在于提供一种小扁豆莲子夏季养生米及其制备方法,方便人们的生活。
为解决这一问题,本发明所采取的技术方案为:小扁豆莲子夏季养生米由以下重量份的原料组成:粳米320-330、小扁豆24-25、带芯红莲子30-32、开心果9-10、米醋5-6、红薏米15-16、甜杏仁11-12、花生芽22-23、牛蒡根27-28、鳕鱼籽7-8、青梅粉3-4、芥蓝13-14、香芹16-17、赤小豆20-21、白茄子12-13、紫苏梗3-4、牛尾菜1-2、白术1-2、保健添加剂11-12、水适量。
其中保健添加剂由以下重量份的原料组成:椰子粉54-56、南瓜籽粉10-11、荷花粉6-7、蓝莓粉21-22、乌饭叶4-5、鹿茸草1-2、板栗壳7-8、苋菜根12-13、莴笋叶5-6、当归叶2-3、麦冬1-2、水适量。
本发明的小扁豆莲子夏季养生米制备过程按以下步骤进行:
(1)紫苏梗、牛尾菜、白术加适量水煎煮2-3次,每次40-50分钟,滤去残渣合并煎煮液,继续加热20-30分钟,得到中药浓缩液;
(2)开心果去壳,与小扁豆、带芯红莲子炒熟后磨粉,加入步骤(1)中的中药浓缩液混合均匀,浸泡半小时,盛入密封容器内隔水蒸30-40分钟,得营养粉;
(3)牛蒡根去皮,香芹去根洗净,花生芽、芥蓝、白茄子洗净,与鳕鱼籽加适量水打磨成混合浆液;
