本发明公开了一种百岁菜饮料,属于一种果蔬饮品。由主料百岁菜及其他保健成分加工调制而成。其制作方法主要有选料、加工、配料、发酵、杀菌等步骤。百岁菜饮料有像香菜一样有一种独特风味,既有普通饮料的作用,还有清热解毒的保健功能,对减肥、降三高、排肠毒有明显作用。百岁菜产业的发展又促进了食品加工、人口就业和农民增收。

技术领域:本发明属于食品领域,尤其是一种饮品
背景技术:“百岁菜”是长白山的一种野生菜,学名牡蒿。它生命力极强,除含有普通蔬菜的一些成份外,还含有一般蔬菜缺少和不足的营养成份,其铁含量尤其丰富,是牛奶、对虾、西红柿的9.6倍,属高档山珍。可预防和消除口腔溃疡,可润肠通便,有降脂、减肥作用。经常食用对康复心脑血管疾病、肠胃疾病有奇效。但是它不像普通蔬菜一样可以随时在市场买到,不方便大众使用。
发明内容:本发明的目的是提供一种百岁菜饮料,使无论男女老少都可以随时方便地在品味饮料的同时补充百岁菜的营养。百岁菜饮料的制作采用了如下的工艺:百岁菜饮料,由主料百岁菜及其他保健成分加工调制而成。其制作方法主要有如下步骤
(1)选择绿色鲜嫩百岁菜,漂洗、沥干、以5倍水磨浆,180目过滤得百岁菜汁;
(2)辅料加工,①水发黑木耳,捞出黑木耳以5倍水磨浆,180目过滤得黑木耳汁;②黑芝麻炒熟,以5倍水磨浆,180目过滤得黑芝麻汁;③东北人参以5倍水煮沸20分钟,180目过滤得人参汁;
(3)配料,按重量百分比取料,百岁菜汁80-90%,黑木耳汁3-5%,黑芝麻汁5-10%,人参汁3-5%,各原料汁混合,加原料汁1倍量的冷开水混匀;
(4)原料混合汁置入发酵罐,加入原料混合汁0.1-0.3%的水果酵母混匀,密封发酵24小时;
(5)调配,参照常规加入白砂糖、柠檬酸适量,以口感清爽为宜,搅拌均匀。
(6)杀菌、装罐,用瞬间灭菌器,在高温条件下30秒杀菌,杀菌后的汁液趁热进行无菌灌装,封罐后常温储存15天得百岁菜饮料成品。

具体实施方式:下面结合实施例做进一步地说明。
取80公斤新鲜百岁菜洗净、用打浆机打浆,用水量350-400公斤,180目过滤得百岁菜汁。
取黑木耳5公斤水发后用水20公斤打浆,180目过滤得黑木耳汁;黑芝麻10公斤炒熟用水50公斤打浆,180目过滤得黑芝麻汁;东北人参10公斤,打碎后用水50公斤煮20-30分钟,180目过滤得人参汁。
将上述原料汁对在一起,倒入发酵罐,加水500公斤,加酵母粉2公斤,混合均匀。盖严后发酵一昼夜。
发酵好的原料汁加入白砂糖30公斤,柠檬酸2公斤进行调配。然后用高温瞬时杀菌,出料温度控制在95±2℃,灌装温度不低于85℃。封罐后常温储存半个月即可上市。

1.百岁菜饮料,由主料百岁菜及其它保健成分加工调制而成,其特征是:其制作方法主要有如下步骤
(1)选择绿色鲜嫩百岁菜,漂洗、沥干、以5倍水磨浆,180目过滤得百岁菜汁;
(2)辅料加工,①水发黑木耳,捞出黑木耳以5倍水磨浆,180目滤得黑木耳汁;②黑芝麻炒熟,以5倍水磨浆,180目过滤得黑芝麻汁;③东北人参以5倍水煮沸20分钟,180目过滤得人参汁;
(3)配料,按重量百分比取料,百岁菜汁80-90%,黑木耳汁3-5%,黑芝麻汁5-10%,人参汁3-5%,其中各原料的重量百分比之和为100%;各原料汁混合,再按重量比加原料汁1倍量的冷开水混匀;
(4)原料混合汁置入发酵罐,按重量比加入原料混合汁0.1-0.3%水果酵母混匀,密封发酵24小时;
(5)调配、在发酵的原料汁中参照常规加入白砂糖、柠檬酸适量,搅拌均匀,调节至口感清爽;
(6)杀菌、装罐,用瞬间灭菌器,在高温条件下30秒杀菌,杀菌后的汁液趁热进行无菌灌装,封罐后迅速冷却至室温,常温储存15天得百岁菜饮料成品。
