背景技术
胡萝卜不仅富含胡萝卜素,还富含维生素B1、维生素B2、钙、铁、磷等维生素和矿物质。由于胡萝卜中的维生素B2和叶酸有抗癌作用,经常食用可以增强人体的抗癌能力,所以被称为“预防癌症的蔬菜”。美国科学家的一项研究表明,常吃胡萝卜可以预防肺癌。
魔芋淀粉中含有果胶、生物碱、葡萄甘露糖和17种人体所需的氨基酸以及矿物质和蛋白质、纤维素、粗脂肪等,魔芋有消肿、散毒、化痰、通脉、健胃等功能,常食魔芋制品能清洁肠胃、增加血液中的胰岛素、降低胆固醇,有防止高血压、糖尿病和肥胖症等多种功效。
苦瓜果实中含有各种营养物质。每百克食用部分含有蛋白质0.9克、脂肪0.2克、糖类3.2克、纤维素1.1克、胡萝卜素0.08毫克、线生素B10.07毫克、维生素B20.04毫克、维生素C84毫克,是瓜类蔬菜中含维生索C最高的一种。
粉丝也是人们喜欢吃的一种食物,多使用红薯粉制作,粉丝红薯粉虽然营养丰富,但是对于人们食用也会有些单一,而且口味也较为单一。

为解决现有的粉丝中口味单一,营养成分单一的缺点,本发明提供一种胡萝卜苦瓜粉丝,提高了粉丝的营养价值。
一种胡萝卜苦瓜粉丝,按重量单位计,包括以下成分:胡萝卜10-15%、红薯淀粉40-65%、魔芋淀粉20-30%、苦瓜5-10%、水10-15%,将上述配比的原料按如下步骤处理:(1)、将胡萝卜和苦瓜分别粉碎,榨汁;(2)、按上述配比将红薯淀粉、魔芋淀粉混合均匀;(3)、取步骤2中红薯淀粉和魔芋淀粉总重量的1-2倍加入适量的水搅拌成糊状,在83-90℃下搅拌10-15min,制成粉芡;(4)、将胡萝卜汁、苦瓜汁和粉芡加入步骤(2)剩余的淀粉中,并将剩余的水加入淀粉中,搅拌15-25min,和成面团;(5)、将面团用下条机进行漏粉操作,将粉丝漏入开水中,煮10-15s,制成胡萝卜苦瓜粉丝。
本发明的有益效果:本发明通过在粉丝制作时加入胡萝卜、苦瓜、魔芋等成分,改善了粉丝的口感,为人们提供更有营养的粉丝,可以有效地为人体补充维生素、纤维素等成分,对人的肠道和呼吸系统进行有效地调节。

一种胡萝卜苦瓜粉丝,按重量单位计,包括以下成分:胡萝卜15%、红薯淀粉50%、魔芋淀粉20%、苦瓜5%、水10%,将上述配比的原料按如下步骤处理:(1)、将胡萝卜和苦瓜分别粉碎,榨汁;(2)、按上述配比将红薯淀粉、魔芋淀粉混合均匀;(3)、取步骤2中红薯淀粉和魔芋淀粉总重量的1.5倍加入适量的水搅拌成糊状,在85℃下搅拌10-15min,制成粉芡;(4)、将胡萝卜汁、苦瓜汁和粉芡加入步骤(2)剩余的淀粉中,并将剩余的水加入淀粉中,搅拌25min,和成面团;(5)、将面团用下条机进行漏粉操作,将粉丝漏入开水中,煮15s,制成胡萝卜苦瓜粉丝。
