本发明涉及一种大豆多肽抗疲劳食品及其制备方法,属于食品加工技术领域,其各组分的重量份为大豆多肽5~10份、蜂皇浆粉1~1.5份、三氯蔗糖2~5份、卡拉胶2~5份、魔芋精粉8~10份、抗坏血酸钠0.5~1份、柠檬酸钠0.5~1份、氯化钾0.5~1份、磷酸氢钙0.5~1份、水75~80份,其制备方法是将卡拉胶2~5份、魔芋精粉8~10份加入到75~80份水中,在80~85℃中,搅拌10~15min,在87~90℃水浴加热25~30min,将余下物质按上述比例加入胶溶液中,混合均匀,将连续流动的情况下加热至130℃~135℃,并且连续保持3~5s,无菌灌装;该抗疲劳食品对运动疲劳有缓解作用,且食用安全方便,口感爽滑,制备工艺简单,成本低廉,适于工业上的大规模生产。

本发明涉及一种抗疲劳食品,具体涉及一种大豆多肽抗疲劳食品及其制备方法,属于食品加工技术领域。
背景技术
大豆多肽是指大豆蛋白经蛋白酶降解后得到的一种混合物,主要成分为分子量不等的各级肽类,还包括少量的游离氨基酸、糖类、水分和灰分等。大豆多肽的分子量以低于1000Da的为主,其氨基酸组成与大豆蛋白质相同,必需氨基酸平衡良好, 且含量丰富。与传统大豆蛋白相比, 大豆多肽具有高浓度、 高溶解性、 低黏度、高流动性和热稳定性等优良的物理性质。 另一方面,大豆多肽具有独特的生理功能:吸收快、利用率高、能促进脂肪代谢、降血压、降血清胆固醇、增强肌肉、运动力增强免疫功能、消除氧自由基、防治糖尿病和老年性痴呆、预防骨质疏松等。
运动员在运动过程中,蛋白质的合成受到抑制,同时骨骼肌蛋白降解,氨基酸氧化和葡萄糖异生作用增加,引起体内蛋白质的利用增加,导致骨骼肌产生损伤,能量代谢物质减少,从而影响运动能力的发挥。为了维持或提高运动员的运动能力,增加肌肉含量和力量,并且快速消除疲劳,抑制或缩短体内“负氮平衡”。运动后及时、快速补充氮源,对减少肌肉蛋白质降解,弥补体内蛋白质的消耗,促进肌肉快速修复和运动疲劳的消除将产生良好作用。小分子的多肽是蛋白质的主要消化产物,因分子质量小而能以完整肽段的形式被直接吸收,因此多肽作为机体氮源的快速补充剂,与直接补充蛋白质或氨基酸相比更具优势。
蜂王浆又名蜂皇浆、蜂乳,蜂王乳,是蜜蜂巢中培育幼虫的青年工蜂咽头腺的分泌物,是供给将要变成蜂王的幼虫的食物。蜂王浆是一类组分相当复杂的蜂产品,它随着蜜蜂品种、年龄、季节、花粉植物的不同,其化学成分也有所不同。蛋白质约占蜂王浆干物质的50%,其中有2/3为清蛋白,1/3为球蛋白,蜂王浆中的蛋白质有12种以上,此外还有许多小肽类;氨基酸约占蜂王浆干重的1.8%,人体中所需要的8种必需氨基酸,在蜂王浆中都有存在,其中脯氨酸含量最高约占63%;蜂王浆还含有较多的维生素,尤其是B族维生素特别丰富。另外主要有:硫胺素(B1)、核黄素(B2)、吡哆醇(B6)、维生素B12、烟酸、泛酸、叶酸、生物素、肌醇、维生素C、维生素D等,其中泛酸含量最高。
本发明产品添加大豆多肽、蜂皇浆粉和多种微量元素以及维生素,对于达到和维持机体最佳运动机能状态非常重要。
发明内容
本发明的目的是提供一种抗疲劳食品,该食品对运动疲劳有缓解作用,且食用安全方便,口感爽滑,制备工艺简单,成本低廉,适于工业上的大规模生产。
为了解决上述问题,本发明所采用的技术方案是:

大豆多肽 5~10份、蜂皇浆粉1~1.5份、三氯蔗糖2~5份、卡拉胶2~5份、魔芋精粉8~10份、抗坏血酸钠0.5~1份、柠檬酸钠0.5~1份、氯化钾0.5~1份、磷酸氢钙0.5~1份、水75~80份;
大豆多肽 5~8份、蜂皇浆粉1~1.3份、三氯蔗糖2~3份、卡拉胶3~5份、魔芋精粉9~10份、抗坏血酸钠0.5~0.8份、柠檬酸钠0.5~0.8份、氯化钾0.5~0.8份、磷酸氢钙0.5~0.8份、水75~77份;

本发明的另一个目的是提供一种抗疲劳食品的制备方法,包括如下步骤:
将卡拉胶2~5份、魔芋精粉8~10份加入到75~80份水中,在80~85℃中,搅拌10~15min,在87~90℃水浴加热25~30min,将余下物质按上述比例加入胶溶液中,混合均匀,将连续流动的情况下加热至130 ℃~135℃,并且连续保持3~5s,无菌灌装。
本发明具有以下优点:
本发明含有大豆多肽、蜂皇浆,并复配多种微量元素和维生素,对运动疲劳有缓解作用,且食用安全方便,口感爽滑。且制备制备工艺简单,成本低廉,适于工业上的大规模生产。

实施例1
一种抗疲劳食品,各组分的重量份为:
大豆多肽10份、蜂皇浆粉1.3份、三氯蔗糖5份、卡拉胶2份、魔芋精粉9份、抗坏血酸钠1份、柠檬酸钠0.8份、氯化钾0.8份、磷酸氢钙0.5份、水75份。
本发明的另一个目的是提供一种抗疲劳食品的制备方法,包括如下步骤:
将卡拉胶2份、魔芋精粉10份加入到73份水中,在85℃中,搅拌15min,在90℃水浴加热25min,将余下物质按上述比例加入胶溶液中,混合均匀,将连续流动的情况下加热至135℃,并且连续保持3s,无菌灌装。
实施例2
一种抗疲劳食品,各组分的重量份为:
大豆多肽 5份、蜂皇浆粉1.3份、三氯蔗糖2份、卡拉胶5份、魔芋精粉10份、抗坏血酸钠0.8份、柠檬酸钠0.5份、氯化钾0.5份、磷酸氢钙0.8份、水77份。
本发明的另一个目的是提供一种抗疲劳食品的制备方法,包括如下步骤:
将卡拉胶2份、魔芋精粉10份加入到70份水中,在80℃中,搅拌10min,在90℃水浴加热25min,将余下物质按上述比例加入胶溶液中,混合均匀,将连续流动的情况下加热至135℃,并且连续保持3s,无菌灌装。
实施例3
一种抗疲劳食品,各组分的重量份为:

本发明的另一个目的是提供一种抗疲劳食品的制备方法,包括如下步骤:
将卡拉胶2份、魔芋精粉10份加入到72份水中,在80℃中,搅拌10min,在90℃水浴加热30min,将余下物质按上述比例加入胶溶液中,混合均匀,将连续流动的情况下加热至133℃,并且连续保持4s,无菌灌装。

大豆多肽10份、蜂皇浆粉1份、三氯蔗糖5份、卡拉胶2份、魔芋精粉10份、抗坏血酸钠1份、柠檬酸钠1份、氯化钾~1份、磷酸氢钙0.5份、水80份。
本发明的另一个目的是提供一种抗疲劳食品的制备方法,包括如下步骤:
将卡拉胶2份、魔芋精粉10份加入到72份水中,在80℃中,搅拌10min,在90℃水浴加热30min,将余下物质按上述比例加入胶溶液中,混合均匀,将连续流动的情况下加热至130℃,并且连续保持5s,无菌灌装。

大豆多肽 5~10份、蜂皇浆粉1~1.5份、三氯蔗糖2~5份、卡拉胶2~5份、魔芋精粉8~10份、抗坏血酸钠0.5~1份、柠檬酸钠0.5~1份、氯化钾0.5~1份、磷酸氢钙0.5~1份、水75~80份。

8.根据权利要求1~7所述的一种抗疲劳食品,其特征在于:所述的大豆多肽采用脱苦大豆多肽。
9.一种抗疲劳食品的制备方法,其特征在于:包括以下步骤:
将卡拉胶2~5份、魔芋精粉8~10份加入到75~80份水中,在80~85℃中,搅拌10~15min,在87~90℃水浴加热25~30min,将余下物质按上述比例加入胶溶液中,混合均匀,将连续流动的情况下加热至130 ℃~135℃,并且连续保持3~5s,无菌灌装。
