Abstract

高纤素——一种新型膳食纤维食品,含海洋中的动植物纤维甲壳素、海藻和陆生植物纤维。采用独特的工艺技术生产,富含低聚糖、寡糖。膳食纤维按水溶性和水不溶性科学搭配,具有显著降血脂胆固醇、稳定血糖、减肥、润肠通便和预防某些癌症(如肠癌、乳腺癌)等保健作用,可以从源头上预防“亚健康”,对于“亚健康”群体也有很好的辅助食疗效果。海洋动植物纤维活性优于陆生植物纤维,二者科学搭配,既是理想的膳食纤维补充剂,又是理想的矿物质、微量元素补充剂,而所含海藻活性营养成分和低聚糖、寡糖,可以提高人体免疫力。

背景技术:
膳食纤维数以百计,按是否溶于水,可分为水溶性和水不溶性两大类,也可分为水生陆生两大类。水生动物纤维甲壳素和植物纤维海藻,迄今在国内尚未被充分开发利用。 
海藻营养丰富,按其化学成分可分无机、有机两大类。无机部分以金属离子、非金属离子、金属氧化物及其碳酸盐、硫酸盐等形态存在;有机部分包括碳水化合物,萜类、甾醇类、含氮化合物,脂类化合物等。对于海藻的利用,长期以来,主要用酸碱法提取海藻胶,如琼脂、卡拉胶、褐藻酸钠等用作食品添加剂。在提取过程中,海藻中的活性营养物质几乎全部被破坏流失,而大量酸碱则造成环境的严重污染。 
随着科学技术的进步,海藻活性物质如岩藻多糖、海藻萜类、甾醇类的抗病毒、抗肿瘤、抗炎症等作用被陆续发现,特别是海藻低聚糖、寡糖、壳低聚糖、壳寡糖作为生命信息分子,在机体免疫调节、抗肿瘤、抗病毒、抗氧化、细胞间识别、转移等均有重要作用。 
有鉴于此,本专利技术旨在研发生产一种介于海洋食品药品的新型健康食品--高纤素,其特点在于: 
1、海洋动植物纤维的科学搭配。 
2、海洋动植物纤维与陆生植物纤维的科学搭配。 
3、最大限度保留海藻的营养成分,特别是其中的活性成分。 
4、采用物理、生物技术,降解海藻多糖、甲壳素,产品富含低聚糖、寡糖。 
因此,本品是理想的膳食纤维补充剂,具有显著的降血脂胆固醇、稳定血糖、减肥、润肠通便、预防某些癌症(如肠癌、乳腺癌)等保健作用。可以从源头上预防“亚健康”,对于“亚健康群体”,也有良好的辅助食疗作用。 
本品又是理想的矿物质、微量元素补充剂。 
而本品所含的海藻活性营养成分,如岩藻糖、海藻低聚糖、寡糖和壳低聚糖、壳寡糖、可以提高人体免疫力。 
实施: 
海藻拣除杂物,洗净泥沙,低温干燥或晒干至含水≤15%,粉碎入库备用。 
实施例:
例1:燕麦麸40%、小麦麸20%、脱脂大豆粉20%、海藻粉(麒麟菜)18%、甲壳素(壳聚糖)2%。

1、甜味:红枣、葡萄干、枸杞、木糖醇等。 
2、咸味:脱水蔬菜、葱、胡萝卜、盐等。 
膨化物料水分15-20%,温度≤150℃。 
例2:燕麦麸30%、小麦麸15%、小米麸15%、脱脂大豆粉20%、海藻粉(江蓠菜)17%、麒麟菜酶解液(折成含1%麒麟菜干粉)、壳聚糖2%。

辅料同例1 
1)麒麟菜酶解液制备:麒麟菜干粉加水(1∶10),于夹层锅文火加热、搅拌至微沸,水溶性纤维溶出,呈粘稠胶体。冷却,加酶,30-45℃保温2-5小时。

1、酶解液与上述燕麦麸等混和,造粒、干燥。 
2、酶解液过滤,滤液为含低聚糖、寡糖的水溶性纤维,生产饮料、口服液。 
滤渣加于例1膨化生产冲剂。 
不同的海藻,选用不同的酶降解,如石花菜用琼胶酶,马尾藻用褐藻胶酶等。 
2)壳聚糖制备和降解 
1、脱乙酰基 
甲壳素加4倍量50%NAOH(食品级),调成糊状。 
微波2450MHZ、3-5KW,5-30min,≤70℃。温度需小心控制,避免局部过热。反应结束,水洗至中性,得脱乙酰度75%壳聚糖。与上述燕麦麸等混和造粒。也可加于例1膨化。 
2、壳聚糖降解 
壳聚糖溶于10倍2%苹果醋(山楂醋)。 
微波降解2450MHZ,3-5KW,5-20min,≤70℃。 
将1)、2)中的滤渣加于例1膨化。 
例3生产饮料、口服液: 
1)将例2麒麟菜酶解液灭酶过滤得到的滤液,加聚葡萄糖、低聚果糖、低聚异麦芽糖等辅料,生产饮料,口服液。 
2)将例2壳聚糖降解液过滤得到的滤液,加浓缩果汁、木糖醇、低聚糖等辅料,生产饮料、口服液。 
3)将例2壳聚糖降解液过滤得到的滤液,用食用NAOH调至中性,与麒麟菜酶解滤液按一定比例调配,加聚葡萄糖、低聚果糖等辅料,生产饮料,口服液。 

Claims (7)

  1. 高纤素——一种新型膳食纤维食品,其特征在于:
    1.含海洋中的动植物纤维和陆生纤维。
  2. 2.采用独特的工艺技术生产,含低聚糖、寡糖。
  3. 3.海洋动物纤维是甲壳素。
  4. 4.海洋植物纤维是海藻。海藻产自无污染海域。海藻可以是红藻中的江蓠、石花菜、麒麟菜、紫菜等和褐藻中的马尾藻、海带、裙带菜、羊栖菜等其中的一种或多种。
  5. 5.陆生植物纤维可以是燕麦纤维、小麦纤维、小米纤维、玉米纤维、瓜尔胶、大豆纤维等其中的一种或多种。
  6. 6.将上述海陆生膳食纤维,按水溶性和水不溶性科学搭配,混和、膨化,即得一种含海藻(壳)低聚糖、寡糖的新型膳食纤维冲剂;也可生产片剂、饼干。
  7. 7.也可采用微波技术和生物酶技术,降解甲壳素、海藻多糖,生成相应的低聚糖、寡糖,与陆生植物纤维混和造粒,低温真空干燥或膨化生产膳食纤维冲剂,也可生产饮料、口服液。
