混合酶解玉米皮制作保健饮料的方法属于饮料制备技术领域,具体涉及一种混合酶解玉米皮制作保健饮料的方法。将玉米皮粉碎加水调浆,加入α-淀粉酶和食品级氯化钙在80-85℃条件下水解30-40分钟,将水解液温度降到60℃,将PH调整到4.5-5.0,加入糖化酶,在60℃条件下糖化1小时,再降温到50℃,加入酸性蛋白酶,在45-50℃条件下酶解1小时,加水将酶解液稀释1倍,加入纤维素酶和木聚糖酶,在45-50℃条件下酶解2小时,然后110℃灭酶20分钟,离心得清液,清液经调配、装瓶、灭菌即得成品。本发明的饮料具有扫除体内“垃圾”、治疗便秘、降脂、降压、预防肠胆瘤、养颜美容等作用。

技术领域
本发明属于饮料制备技术领域,具体涉及一种混合酶解玉米皮制作保健饮料的方法。
背景技术
玉米皮指的是玉米籽粒的表皮部分,也称玉米纤维或玉米渣,是玉米加工淀粉的副产物。我国玉米皮每年产生量达二千多万吨,作为一个庞大的可再生资源,长期以来由于技术和条件的限制,只能作为饲料使用,造成很大的资源浪费。玉米皮中含有淀粉、蛋白质、纤维素、半纤维素、微量元素等成分,由于含有大量膳食纤维,所以玉米皮是一种较好的膳食纤维来源。膳食纤维根据其溶解性不同分为水溶性膳食纤维和不溶性膳食纤维两大类,而水溶性膳食纤维的生理活性更高,生理功能更强,其已作为众多食品及保健品中不可缺少的成分之一,越来越受到人们的重视。
以玉米皮为原料,利用多种酶制剂,将玉米皮中的有效成分水解成水溶性膳食纤维和小分子的、易被人体吸收的淀粉和蛋白质水解产物,然后进一步制成饮料,不仅可以提高玉米皮的附加值,还可以为消费者提供高品质的保健饮料。
发明内容
本发明的目的在于提供一种以玉米皮为原料的、低成本的、高质量的保健饮料的制作方法。
本发明的目的是这样实现的:将玉米皮粉碎,过80目筛子,得玉米皮粉,称取玉米皮粉,加10倍质量的水调浆,按每克玉米皮粉4-5个单位的比例加入α-淀粉酶,再加入玉米皮粉质量0.2%的食品级氯化钙,搅拌均匀,在80-85℃条件下水解30-40分钟,将水解液温度降到60℃,加入柠檬酸将PH调整到4.5-5.0,按每克玉米皮粉60-80个单位的比例加入糖化酶,在60℃条件下糖化1小时,再降温到50℃,按每克玉米皮粉20-25个单位的比例加入酸性蛋白酶,在45-50℃条件下酶解1小时,加水将酶解液稀释1倍,按每克玉米皮粉50-60个单位的比例加入纤维素酶,再按每克玉米皮粉5-6个单位的比例加入木聚糖酶,在45-50℃条件下酶解2小时,然后110℃灭酶20分钟,离心得清液,清液经调配、装瓶、灭菌即得成品。
本发明的保健饮料是以玉米皮为原料,经5种酶水解、调配精制而成。饮料中不仅含有多肽、氨基酸、微量元素等营养成分,还含有大量的可溶性膳食纤维,经常饮用可以扫除体内“垃圾”、治疗便秘、降脂、降压、预防肠胆瘤、养颜美容。
具体实施方案
将玉米皮粉碎,过80目筛子,得玉米皮粉,称取1000g玉米皮粉,加10kg的水调浆,按每克玉米皮粉5个单位的比例加入α-淀粉酶,再加入2g食品级氯化钙,搅拌均匀,在85℃条件下水解30分钟,将水解液温度降到60℃,加入柠檬酸将PH调整到4.8,按每克玉米皮粉70个单位的比例加入糖化酶,在60℃条件下糖化1小时,再降温到50℃,按每克玉米皮粉20个单位的比例加入酸性蛋白酶,在50℃条件下酶解1小时,加水将酶解液稀释1倍,按每克玉米皮粉50个单位的比例加入纤维素酶,再按每克玉米皮粉5个单位的比例加入木聚糖酶,在50℃条件下酶解2小时,然后110℃灭酶20分钟,离心得清液,清液经调配、装瓶、灭菌即得成品。
