Abstract
界面法酒类高效老熟技术及设备为人们提供了
一种高效实用,简单易行的酒类人工老熟的方法和设
备。本发明方法所采用的设备主要由贮酒容器和界
面体所构成,其设备结构简单,经过本设备几小时~
十几天的老熟处理可相当于三~五年以上自然陈酿
效果,色、香、味、风格俱佳。白兰地等可达十年以上
的效果。
Description
本发明属于酒类人工快速老熟(亦称陈化、陈酿)技术。
众所周知,各种新酿制出的酒很不好喝,历来要经过数年以上的自然贮存之后才有满意的感官指标。例如:西凤酒要自然贮存三年,茅台酒要3~5年,白兰地则有百年陈酿之说。近年来,国内外已有多种酒类人工老熟方法。如激光、微波、幅照、红外、紫外、冷冻、加热、超声、吸附、添加剂、磁化等。所报导的白酒老熟效果有二个月至一年不等。以典型销售使用的微波机而言。该机对于低档白酒处理之后可相当于2~3个月自然贮存,但当放置几天后又会悄悄“返生”、逆转、“座位”,而且对优质酒处理基本无效。此外,其零件易损,技术复杂,不易被酒厂所接受。还有,目前正在深入研究的“生化法”,据报导,要求新酒必须拌随半年的自然老熟过程,然后再经勾兑出成品。但一个很大的困难则是高于16°的酒液一向具有灭菌性质,所以若要在蒸馏的白酒中寻找能够生存发酵的微生物则是十分困难的。正如报导所述,当前的酒类老熟技术一直是酿酒界长期要解决,而至今未能很好解决的难题,更重要的是至今缺乏一种能真正有效取代酒类自然老熟过程的机器或设备。
本发明的目的,正是要提供一种高效实用的酒类人工老熟的方法及实现本方法的设备。
本发明的构思是从表面物理的原理出发,根据容器物质微观表面层原子的排列有一半空间开放自由的特殊情况,也就是物质表层原子的活动性和活泼性,利用容器表层分子、原子、电子因直接参与和促进酒液当中氧化、还原、脂化活动及分子的聚合、缩合、缔合过程,从而使得界面层所发生的老熟陈化活动远比液体深部迅速的特点,人为地造成一个加大表面活性的体系,有意地增加器壁表面参与促进酒液老熟陈化活动的分子、原子和电子的数量,放大原有的老熟活动区域和加强原有老熟活动的积分效应,以求在较短的时间内取得尽可能多的老熟效益,从而将自然老熟过程的时间座标尽量地压缩在一个较短的区间内,最终达到高效老熟的目的。
为了实现本发明的方法,设计了一种处理酒类老熟的设备。该设备主要由贮酒容器和增大固液接触的界面体所构成。贮酒容器可以是一任意形状的容器,其中做成圆筒形为最简便。容器的外型尺寸根据所需老熟处理的酒量作具体设计。容器可以用玻璃、石头、陶瓷、搪瓷、水泥、金属及各种可以做食品容器的无机材料来制成。为了增大酒液与固体物质的接触面积,增强老熟效益,在容器内以任意方式堆积、排布一定数量量的界面体;也可免去容器,直接使用界面体独立作老熟处理的装置。如将界面体做成蛇形管或暖气片状,也能达到老熟效果。这些界面体可以是板状、块状、条状、线状、网状、卅状、管状、环状、球形及颗粒状、置于容器中时往往是这些形状的组合体。其制作材料可以采用上述制造贮酒容器相类似的各种材料。采用这种设备的目的是尽量扩大容器固体物质界面与酒液的接触面,以加快老熟速度。实验证明,界面体的比表面积越大,老熟效果就越好。该种设备虽然结构简单,但是将这种设备用于酒类老熟技术中却是前所未有的。老熟处理工序很简单,只要将新酒注入该种设备中,对不同酒令、不同品质、不同品种的酒、少则几秒,多则十几天,即完成老熟处理。还有,在使用内部连通的界面体时,也可直接向界面体内部注酒使用,而将外部贮酒容器免去。
为了更有效地进行老熟处理,还可采取一些辅助措施,即增加一些附加装置。其中可以附加能使酒液相对于界面体产生运动或振动的附加装置,例如增加一台泵或搅拌器,使酒液进行循环或搅动,以加速老熟。还可以附加能够增加酒液与界面体之间分子、原子、电子接触和碰撞的附加装置,利用声、光、电、磁场的微观动能去进一步促进酒液内部分子间的碰撞、缔合及其它过程来加速老熟。例如在贮酒容器中置入导电用的电极,或是将设备中的金属部分直接作为电极,如金属制的容器外壳本身或金属制的界面体。所施加的电位可以在零到10万伏之间。实验证明,在2万伏或180伏或2伏或几十毫伏左右都将出现优化的效果。所通过的电流最好在0.1微安~1安培之间。
本发明的方法及设备,为酒类人工老熟开辟了新的途径,大大缩短了酿酒周期,节省了大量的用于自然陈酿老熟的酒库、容器及它们的占地面积。各种新酒经过本设备几小时~十几天老熟处理可相当于三~五年以上自然陈酿效果,色、香、味、风格俱佳,对优质酒效果更好。采用本处理方法及设备,不须添加任何物质,除陈酿酒容器外,不接触任何外来物质及放射性物质,不需消耗很多能源,也无任何环境污染。老熟处理后的感官指标及理化指标(酸、脂、酿、醛、Pp、Fe、Cu Mn、Zn及PH值等)与自然老熟变化趋势一致。而且老熟效果稳定可靠,对老熟酒连续跟踪五年,从不“返生”。在处理过程中,酒损耗量不到自然老熟损耗的1/10~1/1000。本发明的方法及设备不仅对于各种酒类可以老熟处理,而且对于酱油、醋等也能获得如同自然老熟一样的效果。
下面是几例对不同酒采用本法最基本的设备进行老熟处理2~10天的实施例。
实施例1
是合肥酒厂(省级评酒委员参加)所作的中试品评报告(处理量比小试处理量扩大100倍)。

注意事项:1.评酒时不得互相交换意见;2.评酒时不得吸烟;3.尝评记分完毕,可进行讨论;4.最后公布样品名称,再复评议论。
从表中看出经过本法老熟处理过的最佳得分为91分,而原酒仪得84分,说明老熟处理获得了显著的效果。
实施例2
是委托合肥酒厂(省级评酒委员参加)对太白大曲、泾川大曲用本方法老熟后贮存一年的品评报告和化验报告,表明老熟贮存之后没有“返生”、“座位”,结果稳定,且总脂有上升的趋势。
实施例3
是宝鸡市科委、市食品协会等9个单位对陇县红葡萄酒作老熟处理的品评报告。

是合肥酒厂高档出厂商品酒经本发明处理后的品评报告,可以看出仍比原来有大幅度的提高和改善。

将上述样品作了气相色谱分析,表明本发明处理过的白酒不仅感官上起变化,而且其内在的理化指标微量成份同样发生了显著的变化。
另外一些实施例,对法国白兰地(“喜利”、好运来”、金蒲堂”“人头马”等)市售商品处理后均获显著改善。

Claims (7)
1、一种酒类高效老熟方法,其特征在于采用增大酒液与贮酒容器表面的接触面积,加强老熟活动的积分效益。
2、一种实现酒类老熟的设备,其特征在于设备由任意形状的容器及增大固液接触的界面体所构成。
3、按权利要求1或2所述的容器和界面体,其特征在于由可做食品容器的无机材料所制成。
4、按权利要求2所述的界面体,其特征在于放置在容器内或直接作为容器独立使用。
5、按权利要求1或2所述的设备,其特征在于能够增加辅助装置。
6、按权利要求5所述的辅助装置,其特征在于最简单的是泵或搅拌器。
7、按权利要求5所述的辅助装置,其特征在于在贮酒容器中能够置入导电用的电极,或将设备中的金属部分直接作为电极接线使用。
