Abstract

本发明涉及一种新的植物饮料生产方法。本发明需要克服的技术问题是,摸索一种以大叶枸为原料的新饮料及其生产方法。本发明生产方法,按如下步骤:1)大叶枸长到六、七十厘米开始收割新鲜茎干和叶片,清洗,蒸汽杀青,榨汁,沉淀,过滤,滤液100-120℃消毒,冷却至室温得大叶枸原汁;2)自来水烧开,冷却到30-35℃倒入反应罐,加四种配料之一,加大叶枸原汁2%-3%,再加双歧干菌使达到80000-100000cfu/ml,拌匀即停,室温下5-8天后再加入乳酸菌使达到80000-100000cfu/ml,拌匀即停,第15天后逐日测量,当双歧杆菌菌落数大于1000000cfu/ml时发酵结束,得植物饮料。

一种植物饮料生产方法
技术领域
本发明涉及一种饮料,具体是一种新的植物饮料生产方法。
背景技术
大叶枸系申请人五、六年前自主研发培育而成的桑科杂交新植物,它是强阳性植物,生长迅速,耐受性强,管理容易,兼具改善生态环境、保持水土的重要作用,适合人工大面积种植。大叶枸种植项目为绿色环保项目,种植过程中不涉及有毒有害物质,不需要大量的水资源,并可消纳大量过剩沼液和养殖排泄物。一次种植,收获20年,每年可收割大叶枸5-6次,一个100亩的大叶枸基地年产出新鲜茎干和叶片1000吨。鉴于它粗蛋白含量高达20 %-30%,富含氨基酸、维生素、碳水化合物、微量元素,这些新鲜茎干和叶片可加工成植物蛋白饲料原料200吨,可配合成全价饲料667吨,养殖生猪2000头,且节约粮食100吨。新植物大叶枸面世不久,有待于更广泛、更深入的开发。目前,申请人已建成大叶枸示范基地3000亩,新鲜茎干和叶片已公开销售,大叶枸植物广告欢迎引种。
发明内容
本发明需要克服的技术问题是,摸索一种以大叶枸为原料的新饮料及其生产方法。
本发明的植物饮料生产方法,按如下步骤:
1)大叶枸长到六、七十厘米开始收割新鲜茎干和叶片,清洗,蒸汽杀青(致植物软倒即可,以便后步榨汁),榨汁,沉淀,过滤,滤液100-120℃消毒,冷却至室温得大叶枸原汁;
2)自来水烧开,冷却到30-35℃倒入反应罐(有带搅拌器的盖,不密封),加配料,加大叶枸原汁2%-3%,再加双歧干菌(购自北京)使达到80000-100000cfu/ml,拌匀即停,室温下5-8天后再加入乳酸菌使达到80000-100000cfu/ml,拌匀即停,第15天后逐日测量,当双歧杆菌菌落数均大于1000000cfu/ml时发酵结束(乳酸菌菌落数多少点对产品影响不大,可不测),得植物饮料;所述的配料选自以下四种之一, 
a)蜂蜜0.5%-0.8%,白糖0.5%-1.5%,柠檬汁0.2%-0.5%,食盐0.03%-0.13%;
b)蜂蜜0.5%-0.8%,白糖0.5%-1.5%,柠檬汁0.2%-0.5%, 0.1%-0.3%的甘草加水预先煮成的汤汁;本配料加甘草是为了增加保健功能。
c) 蜂蜜0.5%-0.8%,白糖0.5%-1.5%,柠檬汁0.2%-0.5%, 0.03%-0.12%的茴香加水煮成的汤汁,0.04%-0.12%的桂皮加水预先煮成的汤汁;本配料加茴香、桂皮是为了调口味。
d)蜂蜜0.5%-0.8%,白糖0.5%-1.5%,柠檬汁0.2%-0.5%,枸杞子粉0.4%-0.1%,0.005%-0.15%的干姜加水预先煮成的汤汁(也可以采用有效成分等量的鲜姜榨汁)。本配料加枸杞子粉、姜汁水是为了调口味。
本发明原料易得,设备工艺简单。制得的新型植物饮料呈草绿色,pH值=6.5-7.0,口味甜略酸。本发明饮料经过100多人饮用后发现,(申请人公司所有成员也都饮用)有利于调节肠胃(60例,其中中老年人居多)、中老年人促进睡眠(30例),和一定解酒的作用(28例),儿童饮用能促进食欲(10例)。
具体实施方式
下述实施例中%均按占植物饮料总重量的百分比计。
实施例1。
1)大叶枸长到六、七十厘米开始收割新鲜茎干和叶片——清洗——蒸汽杀青,锅炉蒸汽压力到130℃、10-15分钟,致鲜物软倒——榨汁——沉淀、120目滤布过滤——滤液105℃消毒——冷却到室温得大叶枸原汁。
2)自来水烧开,冷却到35℃倒入反应罐(有带搅拌器的盖,不密封),加配料a):蜂蜜0.8%,白糖1.5%,柠檬汁0.5%,食盐0.13%;加大叶枸原汁3%,再加双歧干菌使达到100000cfu/ml ,缓慢拌匀即停,室温下7天后再加入乳酸菌使达到100000cfu/ml,缓慢拌匀即停,第15天测得罐中双歧干菌菌落数大于100000cfu/ml,结束发酵,罐装。制得的植物饮料呈草绿色,pH值=6.5,口味甜略酸。
实施例2。
1)同实施例1。
2)自来水烧开,冷却到34℃倒入反应罐加配料b),蜂蜜0.6%,白糖1.2%,柠檬汁0.4%, 加入0.3%的甘草加水预先煮成的汤汁;加大叶枸原汁2.5%,再加双歧干菌使达到100000cfu/ml,缓慢拌匀,室温下6天后再加入乳酸菌90000cfu/ml ,缓慢拌匀即停,第16天测得罐中双歧干菌菌落数大于1000000cfu/ml,结束发酵,罐装。
制得的植物饮料呈草绿色,pH值=6.7,口味甜略酸
实施例3。
1)同实施例1。
2)自来水烧开,冷却到33℃倒入反应罐加配料c) :蜂蜜0.6%,白糖1.0%,柠檬汁0.3%, 加入0.10%的茴香加水预先煮成的汤汁,加入0.06%的桂皮加水预先煮成的汤汁;加大叶枸原汁2%,再加双歧干菌使达到100000cfu/ml ,缓慢拌匀即停,室温下8天后再加入乳酸菌使达到 100000cfu/ml ,缓慢拌匀即停,第17天测得罐中双歧干菌菌落数大于1000000cfu/ml,结束发酵,罐装。
制得的植物饮料呈草绿色,pH值=6.8,口味甜略酸
实施例4。
1)同实施例1。
2)自来水烧开,冷却到32℃倒入反应罐加配料d):蜂蜜0.5%,白糖0.5%,枸杞子粉0.3%,加入0.10%干姜加水预先煮成的汤汁;加大叶枸原汁2%,再加双歧干菌使达到100000cfu/ml ,缓慢拌匀即停, 8天后再加入乳酸菌使达到100000cfu/ml,缓慢拌匀即停,第18天测得罐中双歧干菌菌落数大于1000000cfu/ml,结束发酵,罐装。
制得的植物饮料呈草绿色,pH值=6.9,口味甜微酸。

Claims (1)

1. 一种植物饮料生产方法,其特征在于按如下步骤:
1)大叶枸长到六、七十厘米开始收割新鲜茎干和叶片,清洗,蒸汽杀青,榨汁,沉淀,过滤,滤液100-120℃消毒,冷却至室温得大叶枸原汁;
2)自来水烧开,冷却到30-35℃倒入反应罐,加配料,加大叶枸原汁2%-3%,再加双歧干菌使达到80000-100000cfu/ml,拌匀即停,室温下5-8天后再加入乳酸菌使达到80000-100000cfu/ml,拌匀即停,第15天后逐日测量,当双歧杆菌菌落数大于1000000cfu/ml时发酵结束,得植物饮料;所述的配料选自以下四种之一, 
a)蜂蜜0.5%-0.8%,白糖0.5%-1.5%,柠檬汁0.2%-0.5%,食盐0.03%-0.13%;
