Abstract

一种十二烯基琥珀酸淀粉酯的挤压制备方法,属于食品配料开发技术领域。本发明以玉米淀粉为原料,加入玉米淀粉质量3%~6%的酯化剂十二烯基琥珀酸酐,玉米淀粉质量0.5%~1.5%的催化剂氢氧化钠,经过双螺杆挤压机挤压,螺杆转速70~150r/min,挤压机四段温度分别设定为50~80、70~100、90~120、100~130℃,冷却,粉碎而制备得到十二烯基琥珀酸淀粉酯。本发明方法生产的十二烯基琥珀酸淀粉酯具有高效、无“三废”、成本低等优势。此外,所制备的十二烯基琥珀酸淀粉酯取代度范围达到0.10~0.14,可以作为乳化剂,提高香精香料体系的均匀、稳定性。

技术领域
一种十二烯基琥珀酸淀粉酯的挤压制备方法,属于食品配料开发技术领域。
背景技术
酯化淀粉是一种重要的变性淀粉,是淀粉的醇羟基与催化剂作用后,解离成阴离子,然后进攻带有部分正电荷的相应酯化剂的羰基碳,发生亲核取代反应形成酯键。酯化淀粉的许多性能优于原淀粉,因此,应用范围较广泛,在食品工业中,酯化淀粉可用作乳化剂、增稠剂,应用于诸如低脂冰淇淋、焙烤食品、奶制品中。长链脂肪酸淀粉酯具有特殊的热塑性、疏水性和乳化性,在化学工业中可以用作乳化剂,可以将其应用于香精香料中,使得形成的混合体系更加均匀稳定。
采用双螺杆挤压技术生产长链脂肪酸淀粉酯,其工艺简单,无“三废”产生,使生产成本降低。挤压法生产长链脂肪酸淀粉酯,在反应体系中反应物质的浓度相对较高,因此能达到较高的反应效率。同时,挤压机螺杆的高剪切力作用使得反应物质更加充分的反应,挤压腔内的高温环境促进淀粉酯化变性的同时,可以实现淀粉糊化,从而提高反应效率。
本发明为实现采用双螺杆挤压技术大规模生产长链脂肪酸淀粉酯奠定了很好的基础。
发明内容
本发明的目的是提供一种十二烯基琥珀酸淀粉酯的挤压制备方法。
本发明的技术方案:一种十二烯基琥珀酸淀粉酯的挤压制备方法,以玉米淀粉作为原料,以十二烯基琥珀酸酐为酯化剂,以氢氧化钠为催化剂,经过双螺杆挤压机挤压后,再经干燥、冷却、粉碎而制得;
(1)物料配比:
物料质量配比:以玉米淀粉100%计,十二烯基琥珀酸酐3%~6%,氢氧化钠0.5%~1.5%;
(2)加水制备混合料:
按配比称取玉米淀粉,加入酯化剂十二烯基琥珀酸酐,氢氧化钠,加蒸馏水调节体系水分含量至25%,混合均匀;
(3)挤压设备调试:
喂料器的喂料速度在挤压开始前调节为60r/min,在挤压开始后调节为与挤压机的螺杆转速同步,达到100~120r/min;在挤压过程中扭距过大,达到30N·m时则降低喂料速度为60~80r/min;挤压机出料口的模头孔径为4~8mm;
(4)挤压条件的控制:
挤压条件:螺杆转速70~150r/min,挤压机四段温度分别设定为50~80,70~100,90~120,100~130℃;将样品放入喂料器,经由喂料器进入挤压机内挤压,完成酯化反应;
(5)干燥:
挤压反应后把所得产物放进烘箱,把烘箱温度调至30~40℃,对挤出物进行烘干,在室温下冷却,用粉碎机粉碎,将所得粉碎后产品置于密封样品袋包装。
取代度的测定:
称取样品1.5g于80mL烧杯中,用1.5mL乙醇润湿后,加入20mL 2.5mol/L盐酸的乙醇溶液酸化样品,搅拌30min后,加入40mL 90%的乙醇,继续搅拌10min,移入布氏漏斗中,用90%的乙醇淋洗至洗出液中无氯离子为止,然后将漏斗中样品移入250mL的烧杯中,加入7.5mL 0.25mol/L的标准氢氧化钠溶液,加蒸馏水至150mL,沸水浴20min后,加入1% 酚酞指示剂20滴,搅拌,趁热用0.05mol/L的硫酸溶液滴定至酚酞终点,记录消耗硫酸的体积,同时要用不加酸酐制备的样品作空白。
本发明的有益效果:采用双螺杆挤压技术生产十二烯基琥珀酸淀粉酯,其工艺简单,无“三废”产生,使生产成本降低。挤压法生产十二烯基琥珀酸淀粉酯,在反应体系中反应物质的浓度相对较高,因此能达到较高的反应效率。同时,挤压机螺杆的高剪切力作用使得反应物质更加充分的反应,挤压腔内的高温环境促进淀粉酯化变性的同时,可以实现淀粉糊化,从而提高反应效率。本法用挤压法制得了产品十二烯基琥珀酸淀粉酯,其取代度范围达到0.10~0.14。
具体实施方式
实施例1
称取1500克玉米淀粉,加入70克十二烯基琥珀酸酐,15克氢氧化钠,调水分至25%,混合均匀。调节挤压条件,螺杆转速120r/min,挤压出料温度110℃,放入挤压机内,挤压机四段温度分别设定为60,80,100,110℃进行酯化反应。反应后把所得产物放进烘箱后,把烘箱温度调至30~40℃,对挤出物进行烘干,在室温下冷却,用粉碎机粉碎完样品后,将所得样品置于密封样品袋包装。
实施例2
称取1500克玉米淀粉,加入45克十二烯基琥珀酸酐,20克氢氧化钠,调水分至25%,混合均匀。调节挤压条件,螺杆转速100r/min,挤压出料温度130℃,放入挤压机内,挤压机四段温度分别设定为80,100,120,130℃进行酯化反应。反应后把所得产物放进烘箱后,把烘箱温度调至30~40℃,对挤出物进行烘干,在室温下冷却,用粉碎机粉碎完样品后,将所得样品置于密封样品袋包装。

Claims (1)

1.一种十二烯基琥珀酸淀粉酯的挤压制备方法,其特征在于以玉米淀粉作为原料,以十二烯基琥珀酸酐为酯化剂,以氢氧化钠为催化剂,经过双螺杆挤压机挤压后,再经干燥、冷却、粉碎而制得;
(1)物料配比:
物料质量配比:以玉米淀粉100%计,十二烯基琥珀酸酐3%~6%,氢氧化钠0.5%~1.5%;
(2)加水制备混合料:
按配比称取玉米淀粉,加入酯化剂十二烯基琥珀酸酐,氢氧化钠,加蒸馏水调节体系水分含量至25%,混合均匀;
(3)挤压设备调试:
