Abstract
本发明属于一种干法生产脱腥豆粉的工艺。
原料大豆经清杂后,在隧道式微波炉中快速热处理,之后冷却至常温脱皮,粉碎到300-400目即得脱腥豆粉。该法由于对大豆加热时间短,温度低,保留了大豆中的赖氨酸和蛋白质的溶解性,还除去了腥味。产品可直接调制豆浆、加工成豆腐脑、还可做高蛋白方便面、糕点糖果、香肠等添加剂。
Description
本发明属于一种干法生产脱腥豆粉的工艺。
已见中国专利CN86105612脱腥大豆粉的生产采用高温瞬间电加热或用喷水高压蒸汽短时间热处理工艺。由于高温瞬间加热,大豆中的脂酶失活,但过一段时间脂酶易复活,脱腥效果不理想。而用喷水高压蒸汽加热的工艺,不但脱腥效果不理想,又使大豆蛋白溶解度降低。同时在脱皮前,脱腥中及脱腥后三次加热烘干,能源浪费大。
本发明的目的在于提供一种利用微波热处理原料大豆的干法生产脱腥豆粉的工艺。既能脱除腥味,又能保存大豆中的赖氨酸和蛋白质的溶解度、颜色、口味不发生变化,而且节省能源。
结合附图1,本发明创造是这样实现的。原料大豆经清杂,除去砂石、泥土等杂物后,入隧道式微波炉,在80-100℃温度,进行2-4分钟热处理,脱除腥味和部分水份,冷却至常温,经脱皮机脱去豆皮,子叶送微粉碎机粉碎至300-400目即得脱腥豆粉。
该法可用于生产全脂、低脂或脱脂豆粉。
从脱皮机中分离出来的豆皮,经粉碎可作含铁食品添加剂。
按上述工艺生产的脱腥豆粉,没有腥味,经测试大豆可溶性氮指数达65%以上,赖氨酸损失较少,比一般工艺节省能源30%以上。
用该法生产的脱腥豆粉可直接冲调豆浆、加工成豆腐脑,以及作高蛋白方便面、糕点、糖果、香肠等的添加剂。

1、一种干法生产脱腥豆粉的工艺,其特征是原料大豆经清杂后,在隧道式微波炉内,80-100℃温度下热处理2-4分钟,冷却至常温脱皮,子叶再经微粉碎机粉碎到300~400目。
