Abstract

本发明涉及了一种乳化稳定剂及其制备方法。乳化稳定剂含有20~30%的单苷酯、20~30%的蔗糖酯、30~40%的瓜胶和15~25%的黄原胶。其制备方法是将这些组份按比例通过配料、乳化、均质和喷雾干燥等步骤后制得乳化稳定剂。本发明所制得的乳化稳定剂具有理想的产品状态流散性,能最大发挥其功效,可显著改善冰淇淋组织结构,使冰淇淋口感细腻、香甜。

技术领域
本发明涉及了一种乳化稳定剂。
本发明还涉及了一种乳化稳定剂的制备方法。
背景技术
乳化稳定剂是冰淇淋生产中的关键组成,其功能是改善冰淇淋的口感和浆料稳定性,提高膨化率、降低融化率,提高抗融性,减少冰晶产生。但还少有科技工作者会关注乳化稳定剂对口感细腻度的改善,一般几种乳化剂、稳定剂复配使用,可以达到每个单体所不具备的功能,起协同作用。不仅可降低各单体的用量,而且可收到协同效果。
另外,现在市场上大多数复合食品添加剂都是用简单物理搅拌混合,进行生产,这种方法不仅不能使各组分混合均匀,影响产品质量稳定性,而且乳化稳定剂没有经过乳化均质处理,其功效不能最大发挥,产品状态流散性也不理想,影响生产使用。
发明内容
本发明要解决的技术问题是为了解决上面所述的技术缺陷,提供一种乳化稳定剂,使其能显著改善冰淇淋组织结构,除具备一般稳定剂的功效外,还可使冰淇淋口感细腻、香甜,并提供该乳化稳定剂的制备方法。
为了解决上面所述的技术问题,本发明采取以下技术方案:
本发明提供一种乳化稳定剂,含有单苷酯、蔗糖酯、瓜胶、黄原胶,
其重量配比分别为:
单苷酯20~30%;
蔗糖酯20~30%;
瓜尔豆胶30~40%;
黄原胶15~25%;
各组份之和为100%。
本发明还提供一种如上所述乳化稳定剂的制备方法,包括以下步骤:
a、配料:将重量配比分别为20~30%的单苷酯、20~30%的蔗糖酯、30~40%的瓜尔豆胶、15~25%的黄原胶配制成浓度为2~5%的料液,料液的余量为水;
b、乳化:将上述配制成的料液在转速为3000~5000rpm的乳化机中进行剪切乳化;
c、均质:将乳化好的料液进行均质,均质压力为20~60Mpa;
d、喷雾干燥:将均质料液放入喷雾塔进行喷雾干燥,进风温度为180~200℃,出料温度100~110℃,制得乳化稳定剂。
作为一种优选方案,均质压力为35~50Mpa;进风温度控制在185-190℃;该出料温度控制在100-105℃。
本发明提供的乳化稳定剂及其制备方法,由两种乳化剂(分子蒸馏单苷酯和蔗糖酯)和两种稳定剂(瓜尔豆胶和黄原胶),通过乳化、均匀、喷雾干燥制得乳化稳定剂,具有理想的产品状态流散性,能最大发挥其功效,可显著改善冰淇淋组织结构,使冰淇淋口感细腻、香甜。
具体实施方式
下面结合实施例对本发明作详细说明:
实施例1
称取重量配比分别为25%的单苷酯、25%的蔗糖酯、30%的瓜尔豆胶和20%的黄原胶,配制成浓度为3%的料液,在调配罐中进行高速剪切乳化,然后以35Mpa的压力进行均质,离心喷雾,进风温度190℃,出料温度100℃,得干燥流散性很好的细粉末状产品。
实施例2
称取重量配比分别为24%的单苷酯、24%的蔗糖酯、31%的瓜尔豆胶和21%的黄原胶,配制成浓度为4%的料液,在调配罐中进行高速剪切乳化,然后以50Mpa的压力进行均质,离心喷雾,进风温度185℃,出料温度105℃,得干燥流散性很好的细粉末状产品。
尽管本发明已作了详细说明并引证了实施例,但对于本领域的普通技术人员,显然可以按照上述说明而做出的各种方案、修改和改动,都应该包括在权利要求的范围之内。

Claims (5)

1.一种乳化稳定剂,含有单甘酯、蔗糖酯、瓜尔豆胶和黄原胶,
其重量配比分别为:
单甘酯20~30%;
蔗糖酯20~30%;
瓜尔豆胶30~40%;
黄原胶15~25%;
各组分之和为100%;
所述乳化稳定剂的制备包括以下步骤:
a、配料:将重量配比分别为20~30%的单甘酯、20~30%的蔗糖酯、30~40%的瓜尔豆胶、15~25%的黄原胶配制成浓度为2~5%的料液,料液的余量为水;
b、乳化:将上述配制成的料液在转速为3000~5000rpm的乳化机中进行剪切乳化;
c、均质:将乳化好的料液进行均质,均质压力为20~60Mpa;
d、喷雾干燥:将均质料液放入喷雾塔进行喷雾干燥,进风温度为180~200℃,出料温度为100~110℃,制得乳化稳定剂。
2.一种如权利要求1所述的乳化稳定剂的制备方法,包括以下步骤:
a、配料:将重量配比分别为20~30%的单甘酯、20~30%的蔗糖酯、30~40%的瓜尔豆胶、15~25%的黄原胶配制成浓度为2~5%的料液,料液的余量为水;
b、乳化:将上述配制成的料液在转速为3000~5000rpm的乳化机中进行剪切乳化;
c、均质:将乳化好的料液进行均质,均质压力为20~60Mpa;
d、喷雾干燥:将均质料液放入喷雾塔进行喷雾干燥,进风温度为180~200℃,出料温度为100~110℃,制得乳化稳定剂。
3.如权利要求2所述的制备方法,其特征在于:所述的均质压力为35~50Mpa。
4.如权利要求2所述的制备方法,其特征在于:所述的进风温度为185~190℃。
5.如权利要求2所述的制备方法,其特征在于:所述的出料温度为100~105℃。
