本发明公开一种制备白酒勾兑用水,含Ca、Mg、K、Na、Fe、Cu、Zn、V、Co、F、Se、Si微量元素,特征是每升水所含各微量金属元素重量为:Ca 27.1~47.7mg/L,Mg 3.81~6.05mg/L,K 1.40~2.98mg/L,Na 1.53~3.46mg/L,Fe 0.025~0.051mg/L,Cu 0.002~0.04mg/L,Zn 0.03~0.11mg/L,V 0.002~0.006mg/L,Co 0.001~0.004mg/L,F 0.012~0.037mg/L,Se 0.002~0.011mg/L,Si 0.02~0.04mg/L;优点是:较好地抑制丁酸乙酯的挥发损失,显著提高白酒的稳定性,延长了货架期;减轻对肝脏、大脑的刺激,使酒后不易上头醉酒;易使酒中醛类氧化,使酒体更醇和、绵甜,显著提高了白酒的口味质量;生产工艺简单,操作容易。

一种白酒勾兑用水
技术领域
本发明属于白酒制造领域,涉及白酒勾兑用水,特别是涉及一种含有多种微量金属元素的勾兑用水。
背景技术
在中国白酒组成中,水是重要组成成份之一,占酒体积的30~60%。白酒中水来源于两个不同的生产环节,一部分是通过蒸馏工艺过程进入酒体中的蒸馏水,另一部分是通过白酒在勾兑过程中直接加入的勾兑用水。因此,勾兑用水的质量好坏,对白酒的质量有着重要的影响。
传统的勾兑用水,一般都采用纯净水。其缺点是这种水在处理过程中,不但除掉了有害物质,也去除了水中所含矿物质和微量金属元素。水中所含这些矿物质和微量元素,不但是人体所必需的,而且通过研究发现,它们对饮酒者的机体有着直接或间接的保护作用。具体表现在能迅速进入人体器官,并与体内多种酶结合而形成多种酶的催化激活中心,起到激活酶的重要作用。例如:微量元素Fe、Mg、Zn与人体内的醇脱氢酶、醛脱氢酶结合,能激活和保护醇脱氢酶、醛脱氢酶的活力,从而加速体内醇、醛的分解,减少醇、醛在体内的滞留时间,减轻对人的机体组织尤其是对肝脏、大脑的刺激,从而使饮酒者饮酒后不易上头不易醉。
进一步研究还证明:勾兑用水中的微量金属元素,有利于抑制白酒在贮存过程中酯的水解和酸的挥发损失,可以有效地延长白酒的货架期,有利于酒体老熟,对提高酒体口味质量有着显著作用。针对此情况,一些白酒生产企业,开始选用含有丰富矿物质和微量金属元素的优质自然水,特别是矿泉水作为勾兑用水。但是,並非勾兑用水中所含矿物质和微量元素愈多,勾兑出的白酒酒质就愈好,实验表明勾兑用水中矿物质和微量金属元素含量过多或过少都会直接导致酒体pH值的不稳定,使酒体极易出现沉淀及悬浮物而严重影响酒质。直到本发明申请提出以前,在白酒行业都未能解决勾兑用水所含矿物质和微量元素与酒体间究竞有怎样的协调平衡量比关系,才能勾兑出好酒。因此,为了稳妥起见,目前大多数酒厂仍然采用纯净水作为白酒勾兑用水。
发明内容
本发明的目的在于:为制酒企业提供一种所含矿物质和微量金属元素与酒体间具有协调平衡量比关系、能保障酒质稳定、提高酒体口味质量、有利于饮酒者身体健康的白酒勾兑用水。
本发明所述的一种白酒勾兑用水,含有Ca、Mg、K、Na、Fe、Cu、Zn、V、Co、F、Se、Si诸微量金属元素,其特征在于每升水所含各微量金属元素重量如下:

制备本发明白酒勾兑用水的方法如下:
1、分别选取采集某地区的优质天然矿泉水,例如四川省射洪县柳树镇地方的优质天然矿泉水。
①采集柳树镇四川沱牌集团公司所在地沱泉1号优质天然矿泉水,检测其所含微量金属元素,获取每升水所含微量金属元素数据如下:

2、对采集的三种矿泉水进行过滤处理,除去有害成分,保留对人体有益的微量元素和矿物质。
3、将采集的各矿泉水所含微量金属元素的检测数据,输入模糊勾兑计算机系统进行优化组合,得出最佳配比。
4、然后按照最佳配比,将三种天然优质矿泉水进行混合,最后制得本发明。
本发明所用的模糊勾兑技术,是将模糊数学理论、计算机技术与数学规划方法相结合而构建的一种计算机数学规划方法。它是一种配方设计的优化方法,可以根据设计目标(如成本、质量、理化指标等)的要求,对配方原料进行自动优选,确定符合目标要求的最佳配方比例的方法。该方法具体内容已在申请号为00109736.9、名称为“一种白酒的勾调方法”的专利申请文件中向社会公开了。除四川沱牌集团曲酒厂外,该模糊勾兑技术已在国内其它酿酒企业得到应用,例如五粮液集团酒厂也是其中之一。
本发明的优点是:
1、本发明的白酒勾兑用水可保持酒体pH值稳定,使酒体不会出现沉淀及悬浮物而影响酒质。
2、本发明的白酒勾兑用水,含有对人体有益的微量金属元素,不但有效地抑制了己酸对丁酸乙酯的催化水解作用,也较好地抑制了丁酸乙酯的挥发损失,显著提高了白酒的稳定性,延长了货架期。
3、本发明的白酒勾兑用水所含微量金属元素,对人体生长、发育具有积极作用,可减轻对机体组织尤其是对肝脏、大脑的刺激,使白酒饮后不易上头不易醉。
4、本发明的白酒勾兑用水,所含微量金属元素可激活羟基自由基和氧自由基的生成,生成的氧原子具有较强的氧化能力,能使酒中醛类物质氧化,使得酒体更醇和、绵甜,显著提高白酒的口味质量。
5、本发明的白酒勾兑用水,其生产工艺简单,操作容易。

本发明提供的制备白酒勾兑用水的方法是相同,都是先选取优质天然矿泉水源,测试它们所含微量金属元素的数据,然后对采集的水进行预处理,除去有害成分,保留对人体有益的微量元素和矿物质,再将几种水源的微量成分检测数据,输入模糊勾兑计算机系统进行优化组合,得出最佳配比,再依据最佳配比将不同的天然矿泉水进行混合,最后制备出本发明的白酒勾兑用水。本案实施例1、2、3的白酒勾兑用水就是用此法制备的。

Cu    0.002~0.04mg/L

2、按照权利要求1所述的白酒勾兑用水,其特征在于:制备酒精度为50V/V%以上成品白酒的勾兑用水,其每升水所含各微量金属元素的重量为:
