技术领域
本发明涉及一种用猕猴桃果粒和果汁为原料加工猕猴桃果粒果汁饮料的工艺方法。
技术背景
现有猕猴桃饮料生产技术中,通常以猕猴桃果汁为原料,其营养成分和风味单一。若以猕猴桃果粒和果汁作为原料加工成猕猴桃果粒果汁饮料,则可更好地保持猕猴桃的营养成分和鲜猕猴桃的风味。
发明内容
本发明旨在公开一种用猕猴桃果粒果汁为原料加工猕猴桃果粒果汁饮料的工艺方法。
本发明的工艺方法包括猕猴桃果粒制备、猕猴桃果汁制备、果粒果汁混合、灌装、喷淋灭菌(巴氏灭菌)主要工序。其中:1、猕猴桃果粒制备工序包括:先将猕猴桃鲜果进行去皮、去芯、清洗的预处理,再切粒,然后冻贮藏,再将果粒解冻,最后进行果粒上色。冷冻贮藏时其温度为-18℃。果粒解冻时温度不超过80℃,解冻用水与果粒比为1∶1.5。2、猕猴桃果汁制备工序包括:先将猕猴桃鲜果进行去皮、清洗的预处理,再制浆,然后离心过滤、胶磨均质、配料,最后进行超高温瞬时灭菌。离心过滤时其滤布目数不小于40目。胶磨均质时其均质压力为16-22Mpa。配料时加入食品复配胶和糖,所用的食品复配胶为结冷胶0.08%、卡拉胶0.10%、羧甲基纤维素纳0.06%;所用的糖为果葡糖浆8%,AK糖0.2‰。所述百分比为各成分与整个饮料的质量百分比。3、果粒果汁混合时,果粒和果汁的配比量为2∶3。
在本发明的工艺方法中,由于采用了猕猴桃果粒和果汁作为原料,同时采用了超高温瞬时灭菌与喷淋灭菌(巴氏灭菌)方法,较好地保留了猕猴桃果的营养成分和风味;通过加入食品复配胶有效地解决了在酸性条件下猕猴桃果粒悬浮不均的问题。用果葡糖浆替代白糖,有效降低了成品糖度;将猕猴桃果粒置于-18℃贮藏,可防止果粒褐变和营养成分损失。用本发明工艺方法生产的猕猴桃饮料,酸甜适口,外观独特。

Claims (1)

1、一种猕猴桃果粒果汁饮料的加工工艺方法,包括果粒制备、果汁制备、果粒果汁混合、灌装、巴氏灭菌工序,其特征在于:
1.1果粒制备工序包括:先将猕猴桃鲜果进行去皮、去芯、冲洗的预处理,再切粒,然后冷冻贮藏、再将果粒解冻,最后进行果粒上色;
1.1.1冷冻贮藏温度为-18℃;
1.1.2果粒解冻时温度不超过80℃,解冻用水与果粒比为1∶1.5;
1.2果汁制备工序包括:先将猕猴桃鲜果进行去皮、冲洗的预处理,再制浆,然后离心过滤、胶磨均质、配料,最后进行超高温瞬时灭菌;
1.2.1离心过滤时,滤布数目不小于40目;
1.2.2胶磨均质时,均质压力为16-22Mpa;
1.2.3配料时加入食品复配胶、糖;
1.2.3.1所用的食品复配胶为结冷胶0.08%、卡拉胶0.10%、羧甲基纤维素纳0.06%;
1.2.3.2所用的糖为果葡糖浆8%,AK糖0.2‰;
1.3果粒果汁混合时,其果粒和果汁的配比量为2∶3。
