La presente invenzione si riferisce ai prodotti alimentari e riguarda in modo specifico un prodotto alimentare avente le caratteristiche richiamate nel preambolo della rivendicazione 1.
Prodotti alimentari del tipo sopra specificato, in particolare sotto forma di prodotti dolciari, sono ampiamente noti nella tecnica, così come attestato, fra l'altro, dai seguenti documenti brevettuali: DE-U- 8 033 885.8, US-A-4 430 351, EP-A-0 086 319, GB-A-2 159 688, US-A-4 963 379.
In termini generali, tali prodotti comprendono un guscio di contenimento, di solito costituito da cialda di wafer e formato da due o più parti complementari, all'interno del quale si trova una massa di farcitura cremosa o pastosa. Quest'ultima può sia essere omogenea, sia contenere al suo interno elementi vari quali frutti secchi, praline di gusto diverso rispetto alla massa di farcitura; elementi, questi ultimi, destinati a costituire ciascuno un cosiddetto "contenitore di gusto".
Le soluzioni precedentemente note, pur soddisfacendo pienamente le esigenze che hanno portato alla loro creazione, lasciano ancora aperti diversi problemi, soprattutto per quanto riguarda la produzione su scala industriale.
Ciò vale in particolare per quanto riguarda la realizzazione dei cosiddetti contenitori di gusto. Il fatto di realizzare un tale contenitore, ad esempio, con una pralina inserita nella massa di farcitura comporta l'attuazione di fasi produttive addizionali, anche piuttosto complesse. Il ricorrere, come contenitore di gusto, ad un frutto secco, se da un lato può semplificare il ciclo produttivo, presenta per altri versi l'inconveniente dato dal fatto che il frutto secco è un contenitore di gusto dal valore calorico predeterminato, sostanzialmente non modificabile; questa soluzione non è quindi utilizzabile per prodotti di cui si voglia controllare con precisione il contenuto calorico.
Ancora, risulta in molti casi imperativo fare in modo che l'ingrediente o gli ingredienti che si trovano nel contenitore di gusto non entrino in contatto con la rimanente parte della massa di farcitura, se non al momento del consumo, ossia quando il consumatore frange l'involucro del contenitore di gusto. Talvolta risulta poi desiderabile poter realizzare prodotti comprendenti più contenitori di gusto, senza che questo si traduca in una struttura di prodotto particolarmente complessa.
La presente invenzione si prefigge quindi lo scopo di fornire una soluzione ai problemi ed alle esigenze sopra evidenziati.
Secondo la presente invenzione, tale scopo viene raggiunto grazie ad un prodotti alimentare avente le caratteristiche richiamate in modo specifico nella rivendicazione 1. Vantaggiosi sviluppi dell'invenzione formano oggetto delle sottorivendicazioni 2 a 10.
L'invenzione verrà ora descritta, a puro titolo di esempio non limitativo, con riferimento ai disegni annessi, in cui:
- la fig. 1 è una vista generale in prospettiva esplosa che illustra la struttura di un prodotto secondo l'invenzione, e
- la fig. 2 è una vista in sezione sostanzialmente corrispondente alla linea indicata con II-II nella fig. 1 ma riferita al prodotto secondo l'invenzione nella sua condizione chiusa.
Nei disegni è indicato nel complesso con 1 un prodotto alimentare quale, ad esempio, un prodotto dolciario.
Secondo una soluzione di per sé ampiamente nota (si vedano al riguardo i documenti citati nella parte introduttiva della presente descrizione), il prodotto 1 comprende un guscio di contenimento 2 all'interno del quale si trova una massa di riempimento o farci tura 3 (illustrata solo in piccola parte nella vista della fig. 1 per chiarezza di illustrazione).
L'involucro di contenimento 2 è costituito da una pluralità di parti, nel caso specifico illustrato da due semigusci 2a, 2b, aventi una generale conformazione a tazza ed andamenti complementari così da consentirne l'accoppiamento in posizione abboccamento frontale così come illustrato nella fig. 2. Di solito, ma non necessariamente, i semigusci 2a, 2b sono costituiti da cialda di wafer, se del caso ricoperta esternamente con un cosiddetto strato di enrobatura di crema di cioccolato e/o granella di nocciole, rapé di cocco, ecc. Il collegamento frontale dei due semigusci 2a, 2b si può realizzare per effetto dell'adesione fra le rispettive masse di farcitura 3 ovvero essere ottenuto in via primaria, o quantomeno consolidato, per effetto della disposizione di punti o linee di saldatura (ad esempio di cioccolato) formate in corrispondenza dei bordi liberi dei due semigusci 2a e 2b.
Tutto ciò si realizza secondo criteri ampiamente noti nella tecnica, che non richiedono di essere richiamati in modo specifico in questa sede, anche perché di per sé non rilevanti ai fini della compren sione dell'invenzione.
Quanto detto sopra vale in buona sostanza anche per quanto riguarda la scelta della massa di farcitura 3 e delle sue caratteristiche organolettiche e/o reologiche. Si può trattare, in generale, tanto di un ripieno cremoso, quanto di un ripieno pastoso, di una massa omogenea, ovvero di una massa disomogenea. La massa di farcitura 3 viene introdotta nei semigusci 2a, 2b con tecniche note, ad esempio utilizzando una macchina (una tale macchina colatrice, particolarmente adatta all'impiego quale colatrice di cioccolato è descritta nell'US-A- 4 787 534). L'accoppiamento in condizione di preciso allineamento frontale dei due semigusci 2a, 2b precedentemente farciti può essere attuata con la tecnica e le attrezzature descritte in EP-A 0 083 324.
La presente invenzione riguarda in modo specifico la possibilità di realizzare, nell'ambito del prodotto 1, uno o più "contenitori di gusto" 4, costituiti in pratica da celle ricavate all'interno del corpo del prodotto 1 e suscettibili di ricevere al loro interno uno o più ingredienti con caratteristiche genericamente diverse rispetto a quelle della massa di farcitura 3.
Ad esempio (si sottolinea che le indicazioni che seguono hanno carattere puramente esemplificativo) la massa di farcitura 3 può essere costituita da una crema a base di latte e yogurt ed i contenitori di gusto 4 essere, ad esempio, a base di cioccolato o di un qualsiasi altro prodotto aromatico.
Ciascun contenitore di gusto è definito da una parete periferica 5, che, nell'esempio di attuazione illustrato, ha struttura complessivamente tubolare, con sezione circolare, e si estende a partire dalla regione di fondo o polare del rispettivo semiguscio 2a, 2b sino in corrispondenza del piano di bocca del semiguscio stesso ossia del piano in corrispondenza del quale i due semigusci 2a, 2b risultano accoppiati nel prodotto 1 finito (si osservi in particolare la vista in sezione della fig. 2).
In questo modo, e disponendo le pareti periferiche 5 in posizioni omologhe sui due semigusci 2a, 2b, è possibile far sì che, quando i due semigusci 2a, 2b stessi vengono portati in posizione di accoppiamento frontale, anche i bordi liberi delle pareti periferiche 5 dei rispettivi contenitori di gusto si portino in posizione di accoppiamento frontale. Le pareti 5 definiscono così, nell'ambito del prodotto 1, uno o più involucri di contenimento situati all'interno del prodotto 1 stesso ed isolati dalla massa di farcitura 3.
Nell'esempio di attuazione illustrato, le pareti periferiche 5 sono parti integrali dei semigusci 2a, 2b, formate ad esempio per stampaggio, all'atto stesso della produzione dei semigusci 2a, 2b (produzione che ha luogo secondo criteri ampiamente noti nell'industria dolciaria, che non richiedono quindi di essere descritti in questa sede).
La soluzione adottata per il collegamento frontale dei bordi liberi dei semigusci 2a, 2b (ad esempio l'applicazione di punti o linee di materiale adesivo cioccolato) può essere ripetuta per i bordi liberi delle pareti periferiche 5. Ricorrendo a linee di saldatura continue, che si estendono su tutto lo sviluppo dei bordi liberi delle pareti 5, si ha la possibilità di isolare in maniera molto marcata l'involucro formato dalle pareti periferiche 5 rispetto alla massa di farcitura 3. Questa soluzione può essere vantaggiosa qualora per uno o più dei contenitori di gusto si voglia ricorrere ad un riempimento con un prodotto liquido o semiliquido.
Ancora, quando - come nel caso in cui la parete periferica 5 sia costituita da cialda di wafer - si ritenga che la parete 5 stessa possa essere intaccata o quantomeno rammollita dalla sostanza che si trova nel contenitore di gusto, è possibile proteggere la superficie interna delle celle formate dalle pareti 5 con uno strato di materiale di isolamento, quale crema di cioccolato, zucchero cristallino, ecc.
Di conseguenza, le possibilità di scelta della sostanza aromatica costituente il riempimento 6 del o dei vari contenitori di gusto è quantomai ampia.
Il riempimento dei vari contenitori di gusto può essere vantaggiosamente realizzato per colata, secondo modalità sostanzialmente affini a quelle adottate per la massa di farcitura 3.
Come già si è accennato, tale sostanza può essere costituita da cioccolato o da un qualsiasi altro agente aromatico, ad esempio una crema alimentare aromatizzata al gusto di frutto secco. In quest'ultimo caso sussiste dunque la possibilità, ad esempio, di conseguire un effetto organolettica in tutto e per tutto comparabile a quello ottenibile inserendo nella massa di farcitura 3 un frutto secco con in più la possibilità di regolare esattamente l'apporto calorico della rispettiva massa alimentare.
Naturalmente, l'invenzione è suscettibile di essere attuata secondo numerose varianti rispetto alla forma di attuazione qui illustrata a titolo di esempio non limitativo.
In particolare, l'esempio qui presentato illustra un prodotto 1 di forma allungata all'interno del quale si trovano, per ciascuna semiguscio 2a, 2b, tre pareti tubolari 5 suscettibili di formare, insieme alle pareti complementari situate sull'altro semiguscio, tre contenitori di gusto. Questi possono essere riempiti con un agente aromatico uguale oppure diverso da contenitore a contenitore.
In una forma di attuazione più semplice (non specificatamente illustrata) il prodotto 1 può assumere la forma di una pralina sferica all'interno della quale viene formato, secondo criteri analoghi a quelli fin qui descritti (si veda soprattutto 1a vista in sezione della fig. 2) un contenitore di gusto che collega le due parti polari dei due semigusci 2a, 2b (che assumono in questo caso forma emisferisca) estendendosi in direzione assiale rispetto al prodotto stesso.
Ancora, l'esempio di attuazione precedentemente illustrato fa vedere pareti tubolari 5 collocate in posizioni complementari sui due semigusci 2a, 2b così da dare origine, quando i semigusci stessi vengono portati in condizione di abboccamento frontale, contenitori di gusto la cui parete periferica è costituita da due pareti 5, appartenenti l'una al semiguscio 2a, l'altra al semiguscio 2b, accoppiate fra loro.
Naturalmente è anche possibile pensare di utilizzare ciascuna porzione di parete periferica 5 su ciascun semiguscio 2a, 2b per costituire un rispettiva contenitore di gusto. In questo caso, dopo avere disposto il riempimento 6 all'interno della parete periferica 5, quest'ultima può essere chiusa, in corrispondenza del piano di accoppiamento frontale dei due semigusci 2a, con uno strato di opercolatura suscettibile di essere costituita sia dall'agente aromatico, quando questo abbia sufficiente consistenza, ovvero da un altro prodotto adatto (ad es. uno strato di cioccolato).
Si noterà ancora che, nella forma di attuazione illustrata, in cui le pareti periferiche 5 sono parti integrali dei semigusci 2a, 2b, le suddette pareti periferiche - viste in sezione, così come risulta dalla fig. 2 - presentano un generale andamento rastremato andando dalla loro parte di radice verso il bordo libero. Questa particolare conformazione è destinata a facilitare la sformatura dei semigusci 2a, 2b con le rispettive pareti periferiche 5 come loro parti integrali durante il processo di produzione dei semigusci stessi.
Anche se la collocazione delle pareti periferiche 5 in posizione circa polare rispetto al rispettivo semiguscio 2!a, 2b può apparire preferenziale, soprattutto per quanto riguarda le esigenze produttive, tale scelta non è in alcun modo vincolante, in quanto i contenitori di gusto descritti in precedenza possono essere utilmente collocati in qualunque posizione nell'ambito del prodotto 1.
Naturalmente, fermo restando il principio dell'invenzione, i particolari di realizzazione e le forme di attuazione potranno essere ampiamente variati rispetto a quanto descritto ed illustrato, senza per questo uscire dall'ambito della presente invenzione.
The present invention relates to food products and specifically concerns a food product having the characteristics referred to in the preamble of claim 1.
Food products of the type specified above, in particular in the form of confectionery products, are widely known in the art, as attested, among other things, by the following patent documents: DE-U- 8 033 885.8, US-A-4 430 351 , EP-A-0 086 319, GB-A-2 159 688, US-A-4 963 379.
In general terms, these products comprise a containment shell, usually consisting of a wafer wafer and formed by two or more complementary parts, inside which there is a creamy or pasty filling mass. The latter can be both homogeneous and contain various elements such as dried fruits, pralines of different taste with respect to the filling mass; elements, the latter, each intended to constitute a so-called "taste container".
The previously known solutions, while fully satisfying the needs that led to their creation, still leave several problems open, especially as regards production on an industrial scale.
This is particularly true with regard to the creation of so-called taste containers. The fact of making such a container, for example, with a praline inserted in the filling mass entails the implementation of additional, even rather complex, production steps. The use, as a taste container, of a dried fruit, if on the one hand it can simplify the production cycle, presents in other ways the drawback given by the fact that the dried fruit is a taste container with a predetermined caloric value, substantially not modifiable ; therefore, this solution cannot be used for products whose caloric content is to be precisely controlled.
Furthermore, in many cases it is imperative to make sure that the ingredient or ingredients that are in the flavor container do not come into contact with the remaining part of the filling mass, if not at the moment of consumption, i.e. when the consumer fringes the the container of the taste container. Sometimes it is then desirable to be able to make products comprising several taste containers, without this resulting in a particularly complex product structure.
The present invention therefore has the purpose of providing a solution to the problems and needs highlighted above.
According to the present invention, this object is achieved thanks to a food product having the characteristics specifically referred to in claim 1. Advantageous developments of the invention form the subject of the claims 2 to 10.
The invention will now be described, purely by way of non-limiting example, with reference to the attached drawings, in which:
- fig. 1 is an exploded perspective general view illustrating the structure of a product according to the invention, and
- fig. 2 is a sectional view substantially corresponding to the line indicated with II-II in fig. 1 but referring to the product according to the invention in its closed condition.
In the drawings, 1 generally indicates a food product such as, for example, a confectionery product.
According to a solution per se widely known (see in this regard the documents mentioned in the introductory part of the present description), the product 1 comprises a containment shell 2 inside which there is a filling mass or filling 3 (illustrated only a small part in the view of fig. 1 for clarity of illustration).
The containment casing 2 is made up of a plurality of parts, in the specific case illustrated by two half-shells 2a, 2b, having a general cup shape and complementary trends so as to allow their coupling in the front-facing position as illustrated in fig. 2. Usually, but not necessarily, the half-shells 2a, 2b are made of wafer wafer, if necessary covered externally with a so-called enrobing layer of chocolate cream and / or chopped hazelnuts, coconut rapé, etc. The frontal connection of the two half-shells 2a, 2b can be achieved as a result of the adhesion between the respective filling masses 3 or can be obtained primarily, or at least consolidated, due to the arrangement of points or welding lines (for example chocolate ) formed at the free edges of the two half-shells 2a and 2b.
All this is accomplished according to criteria widely known in the art, which do not require to be specifically referred to here, also because they are not per se relevant to the understanding of the invention.
The foregoing also applies in substance to the choice of filling mass 3 and its organoleptic and / or rheological characteristics. In general, it can be a creamy filling, as well as a pasty filling, a homogeneous mass, or an inhomogeneous mass. The filling mass 3 is introduced into the half-shells 2a, 2b with known techniques, for example using a machine (such a casting machine, particularly suitable for use as a chocolate casting machine, is described in US-A-4 787 534). The coupling in condition of precise frontal alignment of the two previously filled half-shells 2a, 2b can be carried out with the technique and equipment described in EP-A 0 083 324.
The present invention specifically relates to the possibility of realizing, within the scope of the product 1, one or more "taste containers" 4, consisting in practice of cells obtained inside the body of the product 1 and capable of receiving inside them one or more ingredients with generally different characteristics to those of the filling 3.
For example (it is emphasized that the following indications are purely by way of example) the filling mass 3 can consist of a cream based on milk and yogurt and the taste containers 4 can be, for example, based on chocolate or any other aromatic product.
Each taste container is defined by a peripheral wall 5, which, in the illustrated embodiment example, has an overall tubular structure, with a circular section, and extends starting from the bottom or polar region of the respective half-shell 2a, 2b up to of the mouth plane of the half-shell itself or of the plane in which the two half-shells 2a, 2b are coupled in the finished product 1 (see in particular the sectional view of fig. 2).
In this way, and by placing the peripheral walls 5 in homologous positions on the two half-shells 2a, 2b, it is possible to ensure that, when the two half-shells 2a, 2b themselves are brought into the front coupling position, also the free edges of the peripheral walls 5 of the respective taste containers move to the front coupling position. The walls 5 thus define, within the product 1, one or more containment housings located inside the product 1 itself and isolated from the filling mass 3.
In the illustrated embodiment example, the peripheral walls 5 are integral parts of the half-shells 2a, 2b, formed for example by molding, at the same time as the production of the half-shells 2a, 2b (production that takes place according to criteria widely known in the confectionery industry , which therefore do not require to be described here).
The solution adopted for the frontal connection of the free edges of the half-shells 2a, 2b (for example the application of dots or lines of chocolate adhesive material) can be repeated for the free edges of the peripheral walls 5. By resorting to continuous welding lines, which they extend over the whole development of the free edges of the walls 5, it is possible to insulate in a very marked way the wrapper formed by the peripheral walls 5 with respect to the filling mass 3. This solution can be advantageous if for one or more of the containers you want to use a filling with a liquid or semi-liquid product.
Furthermore, when - as in the case in which the peripheral wall 5 is made of wafer wafer - it is believed that the wall 5 itself can be affected or at least softened by the substance found in the taste container, it is possible to protect the internal surface of the cells formed by the walls 5 with a layer of insulation material, such as chocolate cream, crystalline sugar, etc.
Consequently, the possibilities of choosing the aromatic substance constituting the filling 6 of the various taste containers or containers is very wide.
The filling of the various flavor containers can advantageously be carried out by pouring, according to methods substantially similar to those adopted for the filling mass 3.
As already mentioned, this substance can consist of chocolate or any other aromatic agent, for example a food cream flavored with the taste of dried fruit. In the latter case, therefore, there is the possibility, for example, of achieving an organoleptic effect in all respects comparable to that obtainable by inserting a dried fruit in the filling mass 3 with the additional possibility of precisely regulating the calorie intake of the respective food mass.
Of course, the invention is capable of being implemented according to numerous variations with respect to the embodiment illustrated herein by way of non-limiting example.
In particular, the example presented here illustrates an elongated product 1 inside which, for each half-shell 2a, 2b, there are three tubular walls 5 capable of forming, together with the complementary walls located on the other half-shell, three containers of taste. These can be filled with an equal or different aromatic agent from container to container.
In a simpler embodiment (not specifically illustrated) the product 1 can take the form of a spherical praline inside which it is formed, according to criteria similar to those described so far (see above all the sectional view of fig. 2) a taste container that connects the two polar parts of the two half-shells 2a, 2b (which in this case take on a hemispherical shape) extending in an axial direction with respect to the product itself.
Furthermore, the example of embodiment previously illustrated shows tubular walls 5 placed in complementary positions on the two half-shells 2a, 2b so as to give rise, when the half-shells themselves are brought into the condition of frontal bite, tasteful containers whose peripheral wall is constituted by two walls 5, one belonging to the half-shell 2a, the other to the half-shell 2b, coupled together.
Of course, it is also possible to consider using each peripheral wall portion 5 on each half-shell 2a, 2b to constitute a respective taste container. In this case, after arranging the filling 6 inside the peripheral wall 5, the latter can be closed, in correspondence with the front coupling plane of the two half-shells 2a, with a capsule layer which can be constituted both by the agent aromatic, when this has sufficient consistency, or from another suitable product (e.g. a layer of chocolate).
It will be further noted that, in the illustrated embodiment, wherein the peripheral walls 5 are integral parts of the half-shells 2a, 2b, the aforesaid peripheral walls - seen in section, as shown in fig. 2 - have a general tapered trend going from their root part towards the free edge. This particular configuration is intended to facilitate the demoulding of the half-shells 2a, 2b with the respective peripheral walls 5 as their integral parts during the production process of the half-shells themselves.
Even if the location of the peripheral walls 5 in an approximately polar position with respect to the respective half-shell 2! A, 2b may appear preferential, especially as regards production requirements, this choice is in no way binding, since the taste containers described in previously they can be usefully placed in any position within the product 1.
Of course, without prejudice to the principle of the invention, the details of construction and the embodiments may be widely varied with respect to what has been described and illustrated, without thereby departing from the scope of the present invention.
