La machine comprend une boîte. 1 dont la partie supérieure, formant tablette, est pro longée par une plaque 2 ayant une extrémité recourbée qui sert d'appui, cette plaque for mant un banc de glissement pour le comesti ble à couper. Guidé par cette plaque 2, un organe, composé d'une plaque 3 comportant une ouverture dans laquelle passe la plaque 2, se déplace dans un mouvement horizontal de translation et a pour but de pousser le comes- tible à couper sous un couteau.
Le comestible à couper est maintenu par un éperon 4 qui pénètre dans le comestible, cet éperon étant fixé sur la plaque 3 dont la partie inférieure est. solidaire de, deux tubes 5 susceptibles de glis ser dans deux cylindres fixes 6 montés dans la boîte 1, les ,extrémités de ces cylindres dé passant légèrement celle-ci pour former des butées. Des ressorts à boudin 7, enfermés dans les tubes et fixés, d'une part, à l'extrémité du cylindre fixe, d'autre part, à la plaque 3, ten dent constamment à ramener l'organe 3 contre le couteau, ce, dispositif pouvant être tiré en arrière au moyen d'une tirette 8 solidaire de la plaque 3.
Le comestible à ,couper, constamment poussé vers le couteau, est arrêté par une butée 10, comprenant. une partie de fixation susceptible d'être engagée dans une ouverture pratiquée clans la tablette, cette partie de fixation, for mant une languette, n'étant pas symétrique par rapport au milieu de la. largeur de la bu tée, afin d'obtenir par retournement deux po sitions différentes de cette batée suivant que l'on désire telle ou telle épaisseur des tran- ehes coupées.
Perpendiculairement à la tablette, deux montants cylindriques fixes 9 guident les mouvements d'un porte-couteau constitué par an tube 11 recourbé en [J dont le diamètre intérieur correspond à celui des montants 9 sur lesquels il est. susceptible de glisser. Dans la partie inférieure de ce porte-couteau sont fixés deux goujons 12, la distance entre eux étant égale à l'écartement de deux trous pra tiqués dans un couteau monté sur le porte couteau.
Des cales interchangeables 13 de dif- férentes épaisseurs, percées d'un trou, peu vent être introduites entre le tube et le cou teau pour modifier la distance entre la butée <B>1.0</B> et ledit couteau, cehii-ci étant serré contre les cales au moyen d'écrous à ailettes 14.
Un mouvement vertical est imprimé au porte-couteau et c'est lors de la descente que le couteau coupera.; des entailles sont ména gées dans la tablette polir le passage du cou teau dans la boîte, afin de couper les tranches complètement. Pour obtenir les différentes sortes de pommes de terre frites indiquées plus haut, trois couteaux différents sont pré- v-tLs.

Celui- ci est semblable au couteau A, sauf qu'au lieu de comporter sept dents, il en comptera par exemple vingt-cinq, réparties sur la même longueur. Il faudra modifier également. la po sition de la butée 10 pour avoir un espace correspondant à la grandeur désirée des tranches.
Le couteau C est employé pour la prépa ration des pommes Chips et possède comme accessoire une butée 15. Celle-ci est en forme de [J, sa partie inférieure constituant une lan guette de fixation destinée à pénétrer dans l'ouverture pratiquée dans la tablette. La dis- tance entre les deux branches de la butée est légèrement supérieure à la distance extérieure de deux dents que comporte le couteau qui est affûté à son bord inférieur compris entre les deux dents, et à la base de celles-ci.
La butée 15, de forme particulière, a l'avantage de retenir la pomme de terre, tout en laissant passer à l'intérieur de ses deux branches les parties coupées qui sont écartées de la lame au moyen d'une plaque triangu laire 16 fixée entre les deux dents du couteau, la pomme de terre devant être légèrement plus large que la butée 15.
