Description

  

  Verfahren zur Erhaltung des Aromas von geröstetem Kaffee.    Es     ist    bekannt, dass Röstkaffee bei jeder  Art der Aufbewahrung, die ihn mit der     Luft     in Berührung bringt - sei es     in    verschlos  senen Gefässen oder offen - schnell     sein     Aroma     verliert.    Das hat seine Ursache darin,  dass     gerösteter    Kaffee zufolge des ausser  ordentlichen     Wasserverlustes    durch den       Röstprozess    - bis     20%    je nach Sorte   stark     hydrophil    ist.

   Er zieht Wasser und  Sporen aus der Luft an, ein     F'ermentierungs-          prozess,        der,die    Ursache der scharfen, unange  nehmen Säure im     Kaffeeaufguss        ist,    wird  eingeleitet, der Sauerstoff der Luft     dringt    in  die Bohnen und oxydiert die     empfindlichen     Fette, die leichtflüchtigen     Aromastoffe    und  ätherischen Öle verflüchtigen     eich    dabei in  offenen Gefässen in kurzer Zeit.  



  Weniger bekannt ist es, dass durch den       Rö-stp.rozess        Kohlendioxyd   <B>(CO,)</B> entsteht und  von dem frisch gerösteten Kaffee abgegeben  wird.  



  Es hat sich     gezeigt,    dass der Verlust an       Genusswert,    welchen der an freier Luft auf  bewahrte Kaffee erleidet,     vermieden    werden         kann,    wenn man :dafür sorgt, dass das     beim          frisch        gerösteten    Kaffee auftretende     Kohlen-          dioxyd    tunlichst lange bei dem Röstkaffee  verbleibt.  



  Die vorliegende Erfindung betrifft ein  Verfahren zur Erhaltung des     Aromas    von  geröstetem     Kaffee,    welches dadurch .gekenn  zeichnet     ist,    dass man den Kaffee sofort nach       erfolgter        Röstung    noch in warmem     Zustande     in einen     Vorratsbehälter    einbringt,     ,der    mit       Kohlendioxyd    erfüllt ist, welches mit destil  liertem     Wasser        angefeuchtet    ist,

   nach dem  Einfüllen des Kaffees den     Vorratsbehälter     dicht verschliesst und in ihm     einen        CO"Über-          .druck    erzeugt, und dass man den Kaffee bei  ,der Entnahme aus .dem     Vorratsbehälter    in  Gefässe abfüllt, in welchen ebenfalls ein     CO,-          Überdruck        erzeugt    wird.  



  Das     Verfahren        wird    mit     Vorteil    wie     folgt     ausgeführt:  Rohe Kaffeebohnen werden     in    einer ,gut  verschliessbaren Trommel     geröstet.    Die     Rö-          stung    wird nicht zu weit     .getrieben,

      da zu  dunkel     gerösteter    Kaffee     leicht        schwitzt.    In      noch warmem Zustand wird der     Kaffee     darauf in einen zuvor mit in     destilliertem          Wasser        befeuchtetem    Kohlendioxyd gefüllten       Vorratsbehälter    verbracht,     dieser    abgeschlos  sen und dann sofort ein leichter     CO"-Über-          druck    erzeugt.

   Der Kaffee wird in dieser  Atmosphäre gemahlen und dann in zuvor  ebenfalls mit<B>CO,</B>     gefüllte,        luftdichte    Behäl  ter verbracht und     dann        bis    zur Erreichung  seines vollen     Aromas    unter     C02-Überdruck     gelagert und     schliesslich    verpackt. Auch die  Lager- oder Verkaufspackungen     sollen    einen  leichten     CO,-Überdruck        enthalten.     



  Es können dabei dem zur Befeuchtung  des Kohlendioxyds dienenden     destillierten          Wamer    oder     aber    direkt dem Kaffee     Aroma-          stoffe    beigemengt werden.  



  Es ist wichtig, dass der Kaffee in noch  warmem Zustand in die     CO,-Atmosphäre     verbracht wird, damit der bei Ende der     Rö-          stun.g    erhaltene     Zustand    erhalten bleibt, das  heisst damit irgendwelche Oxydationserschei  nungen nicht beginnen können.  



  Die     erzielte        Verbesserung    äussert sich in  einem feinen Aroma, angenehmem, säuer  lichem Geschmack und     erhöhter    Löslichkeit  von Kaffeestoffen.
