Andererseits weist dunkel gerösteter Kaffee den Nachteil auf, daß er besonders leicht schwitzt und sich allmählich auf der Oberfläche mit öligen Fiekken überzieht, die ihn unansehnlich machen und auch geschmacklich insofern nachteilig beeinflussen, als sich das ausgeschwitzte Z51 in dünner Schicht bei Gegenwart von Luft und Feuchtigkeit leicht oxydiert und ranzig wird. Versuche ergaben, daß beispielsweise ein normal voll abgerösteter Kenyakaffee einen Extraktgehalt von 29,4°/0- zeigte. Ein solcher Kaffee neigte- zum Schwitzen und war nuek# in der Vakuumpackung nicht genügend he bar, während derselbe Kaffee bei- eiri`ii;r Extraktgehalt von 28,g°% genügende I-Ialtbt? keit aufwies. Wurde indessen der Röstpro@zeß nur wenige Minuten länger durchgeführt, so sank der Extraktgehalt auf 27,3 0/0 bzw. auf 27,2 %, aber auch diese, Muster zeigten in der Vakuumpackung keine genügende Haltbarkeit.
