Abstract
Compositions d'enzymes immobilisées pour la préparation d'une hexose. Les hexoses comprennent, par exemple, le tagatose, le psicose, le fructose, l'allose, le mannose, le galactose, l'altrose, le talose, le sorbose, le gulose, l'idose et l'inositol. L'invention concerne également un procédé enzymatique de préparation d'un hexose à partir d'un saccharide par mise en contact d'un dérivé d'amidon avec une composition d'enzyme immobilisée selon l'invention.
