Abstract

La présente invention concerne un procédé de préparation de fractions de céréales. Des grains d'avoine ou des grains d'orge sont soumis à un procédé à sec suivi d'un procédé par voie humide. Le procédé à sec comprend les étapes suivantes : a) soumettre les grains à un traitement thermique à sec réduisant l'activité de la lipase ; et b) soumettre les grains traités thermiquement à un broyage qui sépare sensiblement l'endosperme du son, et isolant une fraction enrichie en endosperme à partir d'une fraction enrichie en son. Le procédé par voie humide comprend les étapes suivantes : c) soumettre la fraction enrichie en endosperme à un fractionnement par voie humide qui sépare sensiblement l'amidon des protéines, suivi éventuellement par l'isolement d'une fraction enrichie en amidon à partir d'une fraction enrichie en protéines ; et/ou d) soumettre la fraction enrichie en son, la fraction enrichie en endosperme obtenue à l'étape b) ou, lorsqu'elle est isolée, la fraction enrichie en amidon à un broyage par voie humide en présence d'une composition enzymatique dérivée du malt. L'invention concerne également un produit alimentaire liquide comprenant une fraction d'avoine enrichie en bêta-glucane.
