Abstract

L'invention concerne un sachet-portion contenant une portion de frites préfrites qui donnent, après une cuisson ultérieure et sans nouvelle friture, des frites prêtes à consommer. Pour obtenir une meilleure rentabilité et un temps de préparation plus rapide, les frites ont une teneur en graisse de 5 à 18 % en poids et une teneur en eau de 30 à 50 % en poids. Le sachet-portion présente, de préférence après sa production, une durabilité qui permet de le stocker pendant une période d'au moins 40 à 60 jours à une température ambiante de réfrigérateur typique comprise entre 2 et 7 ·C, de préférence, à une température de 4 ·C ou pendant une période d'au moins 15 à 20 jours à température ambiante, de préférence, à une température de 15 à 25 ·C, sans pour autant devoir faire avec une baisse notable de la qualité des frites obtenues après cuisson.
