Abstract

PROCESSO PARA A PRODUçãO DE MASSAS ALIMENTìCIAS, INSTALAçãO PARA REALIZAçãO DO MESMO, E, PRODUTO DE MASSAS ALIMENTìCIAS ISENTAS DE GLúTEN A invenção refere-se à produção de massas alimentícias, em particular feitas de matéria-prima isenta de glúten, tais como, por exemplo, farinha e/ou semolina a base de milho, arroz, painço ou cevada ou feitas de amido, em que o processo compreende as seguintes etapas: a) preparação de uma mistura seca de matéria-prima; b) dosagem de água na mistura seca de matéria-prima enquanto a matéria-prima é movimentada para obter uma massa ou uma mistura umedecida de matéria-prima; c) dosagem de vapor na massa, enquanto a massa ou mistura umedecida de matéria-prima é movimentada; d) conformação da massa assim obtida para formar definidas estruturas de massa; e e) secagem das estruturas de massa conformadas para formar massa alimentícias.
