Abstract

Rice grains are dry-milled to form rice flour, water is added to form a dough which is passed into a premixer where it is formed into granules which are then steamed, extruded and cut into the required strand form, and the thus-formed strands are then again steamed to cook them and thereafter dried. The extrusion may be effected in two stages. Preferably the granules are cooled prior to extrusion.
