A presente invenção relaciona-se com métodos de aumento da produção de um composto produzido por um organismo. Mais particularmente, a presente invenção relaciona-se com métodos de aumento do teor de carboidrato total ou solúvel ou doçura ou aumento do teor de um carboidrato endógeno de um tecido vegetal por produção de uma enzima de metabolização de açúcares que catalisa a conversão de um açúcar endógeno (que é normalmente produzido na planta) em açúcar estranho (que não é normalmente produzido na planta no mesmo estágio de desenvolvimento). A invenção também se relaciona com plantas e partes de planta que produzem uma enzima de metabolização de açúcar para produzir um açúcar estranho, com a conseqüência de um teor mais alto de carboidrato total fermentável, e carboidratos fermentáveis e outros produtos deles derivados.
