Abstract
"EMULSãO SECA, PROCESSO DE PREPARAçãO, EM DUAS ETAPAS, DE EMULSõES SECAS, UTILIZAçãO DAS EMULSõES, E, COMPOSIçãO PARA USO ALIMENTìCIO DO TIPO MOLHO EMULSIFICADO OU FASE GRAXA". A presente invenção tem por objeto uma emulsão seca caracterizada por ser obtida por meio de secagem de uma dispersão de pelo menos uma matéria comestível pouco hidrossolúvel também denominado matéria ativa (MA), em uma fase contínua comportando: pelo menos um emulsificante (E) contendo pelo menos uma proteína vegetal parcialmente hidrolisada (lisado de proteína) cujo grau de hidrólise está compreendido entre 0, excluído, e inferior a 5%, e pelo menos um agente de preenchimento intersticial (ARI) hidrossolúvel ou hidrodispersável contendo pelo menos uma proteína vegetal parcialmente hidrolisada (lisado de proteína) cujo grau de hidrólise está compreendido entre 5 e 40 %. A invenção também tem por objeto um processo de preparação dessas emulsões, compreendendo as seguintes etapas: i) a primeira etapa consiste em preparar uma dispersão em água ou em uma fase aquosa compreendendo pelo menos uma matéria ativa hidrófoba (MA), pelo menos um emulsificante (E), e pelo menos um agente de preenchimento (ARI); ii) a segunda etapa consiste em secar a referida dispersão até à formação de uma emulsão seca. Ela também se refere à utilização das emulsões secas indicadas acima, para a fabricação das composições para uso alimentício.
