Abstract
extrato de cereal com redução de açúcar. a presente invenção refere-se a um método para produzir uma bebida de cacau e/ou malte que compreende: a) suspender o cereal em um líquido aquoso para produzir um mosto; b) suspender o adjunto em um líquido aquoso para produzir uma pasta fluida; c) hidrolisar as pastas fluidas das etapas a) com enzimas hidrolíticas e b) com alfa-amilase; d) adicionar opcionalmente transglucosidase ao mosto e permitir que a transglucosidase reaja; e) inativar as enzimas hidrolíticas, por exemplo, alfa amilase e a transglucosidase opcional, aumentando a temperatura do mosto para uma temperatura acima de 90°c e abaixo de 98°c, de preferência acima de 92°c e abaixo de 97°c, mais preferencialmente para 95°c; f) passar o mosto da etapa e) através de um filtro-prensa para separar os grãos de cereal gastos e obter um mosto; g) combinar o mosto da etapa f) com a pasta adjunta hidrolisada da etapa b); h) evaporar o mosto misturado até obter sólidos totais elevados para produzir um xarope líquido; i) combinar o xarope com alto teor de sólidos totais obtido na etapa h) com sólidos não gordurosos de leite, sólidos de cacau, sacarose, óleo vegetal e/ou gordura de leite para obter uma bebida de cacau e/ou malte em pó.
