Abstract
hidrolisados de proteína com rendimento aumentado de aminoácido n-terminal. a presente invenção refere-se a um método de preparação de um hidrolisado de proteína a partir de um material proteináceo colocando-se o material em contato com uma mistura de enzima proteolítica que tem uma exopeptidase específica para prolina. em particular, a exopeptidase específica para prolina é uma aminopeptidase específica na sequência n-terminal de cinco aminoácidos x-pro-gln-glv-pro-, em particular x é qualquer aminoácido. a presente invenção também se refere ao uso da aminopeptidase com uma segunda exopeptidase e uma endopeptidase.
