Abstract

a presente invenção se refere a um método para preparar rebaudiosídeo n com o uso de um método enzimático que compreende o uso de rebaudiosídeo a ou rebaudiosídeo j como um substrato e fazer com que o substrato, na presença de um doador de glicosil, reaja sob a catálise de uma célula recombinante contendo udp-glicosiltransferase e/ou udp-glicosiltransferase para gerar rebaudiosídeo n.
