Abstract
método para produzir uma partícula extrudada que compreende: a. misturar um amido modificado e < 20% de água em que o teor de água é de tal modo que a dita mistura tem uma temperatura de transição vítrea tg acima da temperatura ambiente; b. aquecer a mistura a uma temperatura suficiente para formar uma massa fundida; c. adicionar > 12% de sabor à mistura ou à massa fundida ou ambas para formar uma massa fundida saborizada; d. extrudar a fusão através de um molde para formar um extrudado; e e. cortar ou triturar o extrudado para formar uma partícula extrudada que tem um sabor retido de cerca de >12% por peso com base no peso total da partícula em que a temperatura de transição vítrea da partícula é substancialmente a mesma que a da mistura. também é fornecido no presente documento uma partícula que compreende: a) um carreador em que o carreador compreende: i) um amido modificado; e ii) uma maltodextrina ou mistura de maltodextrinas com diferentes valores de; b) < 20% por peso de água do peso total da partícula; e c) > 12% de sabor; em que a partícula tem um tamanho a partir de cerca de 0,5 até cerca de 5 mm.
