Abstract
a presente invenção é dirigida a produtos de proteína de soja, é muito reduzido em, ou livres de, notas de sabor beany e úteis para a fortificação de produtos alimentares e bebidas e preparados sem a utilização de sal no processo. os produtos de proteína de soja da presente invenção são obtidos através da extração de fonte de proteína de soja com água para formar uma solução aquosa de proteína de soja, pelo menos separa parcialmente a solução de proteína de soja aquosa a partir da fonte de proteína de soja residual, ajustando o ph da solução aquosa de proteína de soja para um ph de cerca de 1,5 a cerca de 3,6 para solubilizar, pelo menos, uma porção da proteína e formar uma solução de proteína de soja, em seguida, acidificou-se a separação da solução de proteína de soja acidificado a partir do material sólido insolúvel em ácido. a solução de proteína de soja acidificados podem ser secos após a sua concentração e diafiltração opcional para formar um produto de proteína de soja, que pode ser um isolado. o material sólido insolúvel em ácido pode ser lavado com água acidificada e depois secou-se para formar um outro produto de proteína de soja. estes produtos podem ser secas com o ph ácido em que foram preparados ou podem ser ajustados de ph antes da secagem.
