Abstract

processo de fermentação em pressão reduzida. a presente invenção refere-se a um processo de fermentação onde uma fonte de carboidrato é contatada sob condições de fermentação com um micro-organismo em um caldo de fermentação aquoso para formar um produto de fermentação que é um sal ou um produto com um ponto de ebulição acima do ponto de ebulição de água, onde o processo de fermentação é realizado em uma pressão que está abaixo de pressão atmosférica e pelo menos no valor onde o meio de reação está em seu ponto de ebulição na temperatura de fermentação, com água sendo evaporada e removida do reator durante a fermentação em uma quantidade que é pelo menos 20% do volume de líquido presente no reator no início da fermentação. foi verificado que a modalidade de um processo de fermentação em pressão reduzida, enquanto removendo uma quantidade substancial de água tem um número de vantagens. a invenção resolve o problema de se ter um excedente de água no sistema, assegura remoção de calor de reação, e pode conduzir a aperfeiçoada qualidade de fermentação.
